ABOUT THIS WEEKS MENU

 

We went to the local fish market this afternoon to buy some fish for dinner. A man close to our age, probably a few years younger, was working. He was heavy set, graying, balding, had dark circles under his eyes, and smelled strongly of alcohol. He was an adept salesman, and tried to sell us just about everything in the shop: mustard sauce, lobster salad, macaroni and cheese with shrimp, etc. We patiently explained that we didn't eat dairy (among other things), and were not interested in anything but the fresh fish, but he wasn't going to back down so easily and began confronting us with questions / challenges. We were on a peaceful Saturday outing and not really in "work mode", but never the less got sucked in. The conversation went something like this:

Him: What's wrong with the mustard sauce?
Me: I'm not sure what is in it, but I'm sure it has dairy.
Him: Nope, no dairy, just mustard and mayonnaise.
Me: Well, we don't eat mayonnaise, so no thank-you.
Him: What about the macaroni and cheese with shrimp? What's wrong with that?
Me: We don't eat cheese.
Him: It's powdered cheese, it's not even real. Does that count?
Me: That is even worse!
Him: What are you trying to do, torture yourself in order to add one or two days to your lifespan?
Me: I am a cancer survivor, and actually, by changing my diet in this way I have added 16 years to my lifespan, and there is no torture involved!
Him: Stunned silence while he thought about that!
Him again: Come on. Do you really think that your diet made a difference?
Me: Medically I was given six months to one year to live sixteen years ago, and since it is now sixteen years later, yes, I do think that my diet and lifestyle have made a difference, have made THE difference in fact.
Him: So what do you eat?
Me: Whole grains, beans, vegetables, sea vegetables,
Him: Oh, like third world food, poor people food?
Me: Um, yes, well, I suppose you could call it food from our origins, food from the source, and third world countries may still eat more closely to the original source than modern countries do, and also enjoy better health and longer life spans, and if poor people eat this way, then they are far more wealthy than the rich.
Him: So, dried stuff. I get it. I know what you're talking about. I'll take my steak and beer any day!
Me: Let's check back in with each other in about five or so years and see what you say then!

Anyway, we bought a beautiful piece of fish, and prepared a delicious dinner of "dried stuff". Our plate of food was so gorgeous that we just had to take a photo for all of you: Please Behold.



One of our favorite dishes on this week's menu is the Sheppard's Pie. Traditionally Sheppard's Pie was peasant food, "poor people's food", made from leftover meat and vegetables, but mostly with inexpensive mashed potato as the filler. We thought: why not make a filling for this "pie" with protein and mineral rich, good for the kidneys, meaty and chewy kidney beans, laced throughout with all sorts of delectable and nutrient rich vegetables, and topped with our delicious millet mashed potatoes, which are infinitely richer, more flavorful, and far healthier than traditional mashed potatoes. Our millet mashed potatoes are a creamy blend of excellent for the stomach and pancreas whole grain millet and naturally sweet caramelized onions, and potassium rich cauliflower. They gracefully engulf the pies delicious filling and make this an excellent meal in one dish, containing complex carbohydrates, protein, and vegetables all in one!

We also have a wonderful, and often misinterpreted dessert on the menu this week: Couscous Cake. Incidentally, it is made from "dried stuff" as well!The entire point of couscous cake is to make a cake that is light, fluffy, and delicious, without using any flour! What is wrong with flour you may ask? Well, flour is not our lung and large intestines best friend if over used. You must pick and choose your use of flour wisely, being careful not to abuse it, being careful not to confuse it with whole grains, because flours nature is to adhere, and to become thick and sticky. A little can be a good thing, especially when it comes to whole grain breads and desserts, but too much can cause all sorts of respiratory and digestive problems. So it is both fun, fascinating, and healthy to prepare couscous cake now and then in place of a flour based cake, and we just love our various versions of couscous cake. If you try it we think you will enjoy its unique quality as well.

 SPLIT PEA MISO SOUP WITH TOFU SOUR CR�ME AND CHIVES        SMALL___ LARGE___
A thick, creamy, and nourishing puree of liver healthy and protein rich green split peas cooked with mineral rich kombu sea vegetable, speckled with dices of carrots, parsnips, and yellow onions, powerfully cleansing and immune system boosting shiitake mushrooms, gentle and relaxing mineral rich wakame sea vegetable, enzyme rich sweet yellow miso, fresh dill, and a garnish of tofu sour cr�me sprinkled with fresh green chives.

VEGETABLE LACED POLENTA AND BROWN RICE TERRINE                 SMALL__ LARGE ___
This dish makes such a beautiful presentation, and it is so healthy too! Ground dried corn is cooked into a creamy polenta, laced with fresh corn, and yellow onion, then layered with energy balancing and sustaining medium grain brown rice cooked with mineral rich kombu sea vegetable, and garnished with blood building fresh green parsley.

SCRAMBLED TOFU                                                                               SMALL ___ LARGE___
Given a choice, I can't see why anyone would choose high cholesterol eggs over this healthy version of the classic "scrambled eggs", unless they just simply don't know any better, which is a big part of why we do what we do here at Wholly Macro, educate people in healthier lifestyle and diet choices. This dish uses low cholesterol, low fat, high protein tofu, cooked in a scrambled egg texture, with fresh green peas, yellow onion, fresh yellow corn kernels, immune system boosting shiitake mushrooms, cremini mushrooms, yellow miso, and high in calcium sesame tahini. Garnished with a smattering of fresh green scallions.

SHEPARD'S PIE                                                                                    SMALL___  LARGE___
A super healthy twist on this classic dish, gorgeous mineral and protein rich red kidney beans are layered with a healthy mixture of vegetables such as high energy, good for the heart, liver, and kidneys fresh yellow corn kernels, high in calcium and potassium fresh green peas, beta carotene rich good for the pancreas carrots, and zinc rich - toxin eliminating cremini mushrooms. This delectable mixture is then topped with good for the gastro-intestinal system whole grain millet, brain healthy phyto-nutrient rich cauliflower, and stomach healing sweet yellow onion "millet mashed potatoes".

SICILIAN ROOT VEGETABLE SALAD                                                    SMALL___ LARGE___
Naturally sweet, beta carotene rich brilliant orange sweet potatoes, are combined with super healthy, full of minerals turnips and rutabaga, bright green french cut green beans, umeboshi plum marinated red onions and red radish, intestinal flora friendly pickled cucumbers, and a splash of olive oil, balsamic vinegar, and liver freshening lemon zest, held together with digestive strengthening kuzu root, to create this exciting and healthful "root vegetable salad".


MOCHA ORANGE COUSCOUS CAKE                                                     SMALL___ LARGE___
Healthy and surprisingly cake like in texture, but flourless, non-baked, and grain based french yellow couscous is mixed with nuances of mocha (grain coffee: roasted barley, chicory, and rye) and carob powder, orange zest, coconut and almonds, topped with a thick and rich mocha orange icing, all sweetened with brown rice syrup and a touch of vanilla, to form this delicious and healthy "cake" like dessert to satisfy any sweet tooth.

Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat!
