ABOUT THIS WEEKS MENU
This week's menu has some classic Fall dishes on it.
The Carrot Bisque is a delicious pureed Fall soup. The organs related to the Fall season are the lungs and large intestine, and among their many other important functions and duties, they govern the skin. If we have skin problems, we always look to the health of the lungs and large intestine, and support them. Carrots are full of naturally occurring vitamin A in the form of Beta Carotene. Beta Carotene is one of the best and most essential nutrients for healthy skin, and its glorious deep orange color perfectly reflects the color of Fall. Healthy skin is a main line of defense for our body, and greatly assists the lungs and large intestine in functioning with better ease. If our skin is healthy it takes a great deal of burden off of the lungs and large intestine. This soup infuses the body with Vitamin A!
Root Vegetable Nishime is another really great dish. Not only does it taste great, but it is extremely healthy and of vital importance to a healthy digestive system. The root vegetables really come into their own this time of year, and while it is important to use them throughout the year, we need to rely on them even more during the Fall and Winter months. Root vegetables are naturally sweet in taste. If you are used to eating a lot of sugar, be it organic cane sugar, honey, agave, maple syrup, etc., you may not be able to appreciate the sweetness of the root vegetables. But as you break free of the vicious sugar addiction cycle, your palette will be able to appreciate the natural sweetness of the root vegetables more and more. We had plain saut�ed burdock root for dinner tonight, and it tasted as if we had glazed it with rice syrup it was so sweet and delicious. This natural sweetness relaxes the middle organs of the body: the stomach, spleen, and pancreas. When they are relaxed they can function better. Sugar does the opposite; it tightens and hardens these same organs. Every one of us needs nishime in order to give these hard working digestive organs a much-needed break!
And the Blueberry Cornbread. Blue and gold. Sounds like Fall to us!! This is a delicious cake like cornbread, and makes for a perfectly healthy all natural dessert. We love the way it retains some of the qualities of summer (think corn and blueberries), but also speaks perfectly to the Fall season at the same time. The American Indians used corn bread a lot. Especially during Indian Summer. They were so in tune with the seasonal cycles, and intuitively knew to use up the last of the summer corn and berries this time of year. We like their taste, and are only too happy to follow their lead any season of the year!
Burgers Busted is the topic of our Weekly Article this week, in honor of a long time favorite from the Wholly Macro Menu archives, the Falafel Burger. This is just one version of the many Veggie Burgers that appear on the Wholly Macro menus, and just so happens to be appearing on this week's menu.

Burgers Busted
We found some very interesting "numbers" in relation to "burgers" this past week, and thought you would enjoy reading about them as much as we did.
There is an organization called The Cancer Project, (www.cancerproject.org), and one of their goals is to prevent cancer and other obesity related diseases by establishing healthy eating habits early in life. They feel that this is one of our best lines of defense, and of course we here at Wholly Macro agree with them "wholly"!
The Cancer Project does a lot of work with the school system to bring awareness of nutrition, cooking skills, and healthier food into the educational system, and in doing so, has done quite a bit of research on burgers, probably one of the most abused, and abusive foods in the standard american diet. Here is what they have to say about the most popular burgers available today: "Fast food chains (and restaurants and schools), lure customers in with "gourmet" burgers. With a staggering 1,140 calories and more saturated fat, cholesterol, and sodium than anyone should eat in an entire day, Wendy's Bacon Deluxe Triple Burger topped The Cancer Projects list of the five most unhealthful burgers". The Cancer Projects nutrition experts analyzed burgers from an array of common restaurants, and found that they are all high in calories and fat, and that many of them also contain other ingredients that are associated with cancer risk.
We know (because many of you have told us) that many of you, our readers, do quite a bit of PR work for the Healthy Food / Healthy Body / Healthy Planet movement. Sometimes to resistant family and friends. And some of you have only recently given up meat yourselves, so this speaks to you as well. So that you can be an educated and well versed spokesperson for this very important cause that we all hold so near and dear to our hearts, here are a few figures for you to throw around to the skeptics among us!
The five most unhealthy burgers (per The Cancer Projects researchers) are: Wendy's Bacon Deluxe Triple, Carl's Jr. Guacamole Bacon Six Dollar Burger, Burger Kings Steakhouse XT Burger, Jack In The Box Sirloin Cheeseburger, and last but not least, McDonald's Angus Bacon And Cheese.
And in general, here are some comparisons of a regular hamburger versus a typical "garden variety" veggie burger: WHOLLY MACRO BURGER COMPARISON CHART

THE CHOICE IS YOURS!
Isn't it most interesting that a regular hamburger and a veggie burger have roughly the same amount of protein in them?? We know that our veggie burgers do this week, because we are using chickpeas, and would venture to say that there are more chickpeas per vegetable in our Falafel Burgers, than there is meat to filler in a regular hamburger. But the really impressive comparisons come into play in the fiber, fat, and cholesterol categories. Don't you just love those numbers?? We do. How you feel about the food you eat is almost as important as how the food you eat makes you feel. Within reason of course. When you know, clearly, as illustrated above, how unhealthy the food you are eating (or feeding your loved ones) is, can you possibly continue to feel good about it? Even if you love your unhealthy food, and insist on feeling good about eating it, research has repeatedly shown that it is harming you never the less. We like to serve feel good food here at Wholly Macro. We know how healthy the food we prepare is for you / us. We feel so good about preparing it, serving it, and eating it, that it becomes three fold as good for us in this way. It is the Wholly Macro version of the Bacon Deluxe Triple!! And we do hope that you find these facts and figures as interesting and useful as we do, and that they give you years of mileage on all of your healthy pursuits and travels!

CARROT BISQUE WITH TOFU SOUR CR�ME AND CHIVES | SMALL___LARGE___ | A sweet , creamy, beta carotene rich, highly enzymatic
yellow miso based soup, made primarily with pureed carrots, but tastefully
highlighted with butternut squash and red onion, richly blended together with
relaxing and cleansing shiitake mushrooms, mineral rich wakame sea vegetable,
and circulation promoting fresh ginger root. Topped with a dollop of tofu,
lemon, and acid/alkaline balancing umeboshi plum tofu sour cr�me, and a garnish
of fresh green chives.
VEGETABLE LACED POLENTA AND BROWN RICE
TERRINE | SMALL___LARGE___ | This dish makes such a beautiful presentation, and it is
healthy too! Ground dried corn is cooked into a creamy polenta, laced with
fresh corn, yellow onion, and green peas, then layered with energy balancing
and sustaining medium grain brown rice cooked with mineral rich kombu sea
vegetable, and garnished with blood building fresh green parsley.
FALAFEL BURGERS | SMALL___LARGE___ | Plump, juicy, and HEALTHY vegetarian burgers with just a hint of the Mid-East, whole grain millet is pureed with heart healthy chick peas cooked with kombu sea vegetable, some chick pea flour, finely grated beta carotene rich carrots, diced scallions, yellow onions, fresh yellow corn, and a nice crispy coating of trace mineral rich brown sesame seeds and arrowroot.
MACARONI AND "CHEESE" | SMALL___LARGE___ | A nice comforting dish, not usually thought of as healthy, but this version of it is!! Brown rice penne noodles are cooked al dente, then smothered in a chunky and "cheesy" tofu and tahini, umeboshi plum, yellow miso, and totally vegan rice "cheese" sauce, laced throughout with chlorophyll rich fresh parsley, and energy packed lightly roasted pine nuts.
ROOT VEGETABLE "NISHIME" | SMALL___LARGE___ | Nishime is a Japanese word for delicately cooked vegetable "stew". The stewing brings out the natural sweetness of these vegetables, and that sweetness nurtures and relaxes the stomach and pancreas. Nishime style beta carotene rich carrot flowers, green and fresh good for the liver brussel sprouts, sweetly stewed yellow onions, blood cleansing burdock root, and strengthening rutabaga and turnips, are glazed with intestinal strengthening kuzu root, circulation promoting ginger, and immune system strengthening shiitake mushrooms.
BLUEBERRY CORN BREAD WITH TOFU WHIP CREME | SMALL___LARGE___ | This is my macrobiotic adaptation of one of my favorite corn bread recipes from a well known "vegetarian" bread book. The original recipe used eggs and milk, to create the most delicious creamy, pudding like center layer to the corn bread. I have replaced the eggs and milk, of course, using protein and calcium rich tofu and almonds, sweet and naturally fermented brown rice milk "amasake", and a splash of natural vanilla essence, layered between a light as a feather whole wheat pastry flour and corn meal corn bread, all gently sweetened with complex carbohydrate, slow burning and pancreas supportive brown rice syrup, and accentuated with purple-blue, phyto nutrient rich, fresh blueberries.
