Yours truly, your Wholly Macro hosts, are featured in the October 2 event, along with many other amazing and courageous breast cancer survivors. We will be there part of the afternoon enjoying it and would love to see you there. While we are not in the October 9 showing, it promises to be a worthwhile event as well. Green Exercise

I was at dinner last night with family, and we were talking about Fall as if it were a distant future event, when someone reminded all of us that the Fall Equinox actually occurred last week. October 23 to be exact. The same day as the Harvest Moon. And the harvest full moon really was a beauty, wasn't it?? It is a little hard to connect the dots though: Harvest Moon - Fall - heat - humidity - etc. Yet, if you get outside, and with a vivid imagination, you can almost feel a change in the air. But how many of us spend any amount of time outside?? How do we fit that into our already over taxed schedules??

Well, we have two words for you: Green Exercise. Okay, maybe it is not such a new concept, but it is a brilliant way to multi-task in a positive way. Combine outdoor time with exercise. Research shows a definitive link between mood and outdoor exercise. The University of Essex in England has found that just five minutes of Green Exercise (bicycling, swimming, walking, gardening, etc.) can boost your mood and self-esteem. The research shows that outdoor walks battle depression better than treadmill or Mall walks do. (Shopaholics among us may debate that though)!!

Other benefits of outdoor activities / exercise include greater exposure to health promoting vitamin D from the sun (although sun bathing in Florida is not included nor advised), enhanced cognitive function, and increased compassion (the research showed that test subjects were more considerate of the planet and others, and we would like to take the liberty of adding, themselves, after viewing images of nature).

There are also natural brain hormones that are released via all exercise, but increased with natural outdoor exercise. Endorphins, natural morphine like pain killing - feel good substances being one of them. Of course, you won't feel and appreciate the endorphins until you make exercise a positive and rewarding part of your daily life, instead of a back burner activity. Natural endorphin release is not as prolific when exercising indoors in artificial air and light.

Outdoor exercise does not require climate controlled indoor exercise spaces, nor electrical powered exercise equipment or lighting either, so it is green environmentally, and green in color. Think oceans, forests, mountains, etc.  

Does the whole idea of exercising leave you feeling less than enthused? Start slowly and simply. Look at activities of daily living as exercise. We do. Every time we climb the stairs in our home, for the millionth time that day, we recite to ourselves, "it is good exercise", and it is. Incorporate exercise into an enjoyable outdoor activity. Just start. And don't overdo it. You can build from there.

Martin Luther King said (he was not actually referring to exercise, but we like the double meaning), "You don't have to see the whole staircase, just the first step".

 Make exercise so much a part of your daily life that your day is not complete without it. When we went on our mini - break last week, we weren't used to being an elevator ride up in a hotel room. After dinner it felt easy enough to be couch potatoes, but we made a specific point to go downstairs and exercise. We just did not feel good or right, we missed that natural endorphin "high" without our daily exercise. Fortunately, we were staying right on the beach, so we indulged in nightly beach walks, and shared the beach with the turtle nest guardians, a group of dedicated environmentalists here in Florida who monitor (all night long), turtle nests that are ready to hatch, and assist the hatchlings towards the ocean and away from the danger of the bright and disorienting city lights. It was so beautiful. We bonded with several of the turtle guardians and shared heartfelt hugs with them upon our departure. We left our hearts on that beach among the turtle nests and their guardians. And by the way, hugging stimulates your body to release oxytocin, "the love hormone". Oxytocin reduces stress, eases depression, AND improves immune function.

If you are not going to exercise, at least hug. Maybe if you hug often enough, you can turn it into exercise, and give yourself (and someone else) a generous dose of both endorphins and oxytocin! Sounds good to us!!

ABOUT THIS WEEKS MENU

What is cooking in the Wholly Macro kitchen this week?

Speaking of immune function, we have Shiitake Mushroom Barley Miso Soup on this menu. We could  just use regular mushrooms in this soup, but shiitake mushrooms have such a distinctive and delicious flavor, that they add immense depth to this soup. Shiitake mushrooms are no ordinary mushroom. They are a natural source of interferon, a protein that induces an immune response against cancer and viruses. Shiitake mushrooms decrease fat and cholesterol in the blood, and help discharge the excess residues of accumulated animal protein. They are also a good source of germanium, an element that improves cellular oxygenation and enhances immunity.


We also have Brown Rice And Hato Mugi Risotto as our whole grain dish this week. We are wondering if you know what Hato Mugi is?? It is a type of plant that produces a seed / grain that is similar in appearance and flavor to pearled barley. But unlike pearled barley, Hato Mugi is the whole grain whereas pearled barley has been refined. In Oriental Medicine barley is used to reduce tumors, and Hato Mugi is said to be a more effective medicinal plant than whole barley is. It is also said to beautify the skin and heal skin disorders. We love the way in which it cooks into a nice creamy consistency similar to pearled barley and makes a delicious Risotto.

And do we even need to say anything about our Tofu Kale Lasagna?? Who doesn't LOVE Lasagna?? Ours will release plenty of feel good hormones, especially since it isn't loaded up with mucus forming - artery and brain clogging fat and dairy. Instead, it contains a delicious and healthy blend of what Wholly Macro likes to call, our "cheesy tofu", where we combine high protein, low fat and zero cholesterol tofu, with calcium rich sesame tahini, and healthy digestive system bacteria rich in live enzymes sweet white miso, to create a super healthy version of classic ricotta cheese. And instead of using a bone weakening and arthritis promoting concentrated tomato based marinara sauce, we use a pancreas healthy naturally sweet vegetable blend of carrots, yellow onions, and kabocha squash. If you like, and do not suffer from bone or joint problems or an overly acidic condition in general, you can add a few fresh pieces of tomato on your own.

SHIITAKE MUSHROOM BARLEY MISO SOUPSMALL___LARGE___
A rich and creamy blend of high fiber whole grain barley and pearled barley cooked with mineral rich and digestive kombu sea vegetable, the unique and interesting in flavor, medicinal shiitake mushroom, along with the more traditional cremini mushroom, some high protein-low fat "meaty" seitan, and sweetly blanched carrot, celery, yellow onion, and parsnip dices, in an enzyme rich, strengthening dark barley miso, ginger, and wakame sea vegetable base, garnished with a sprinkle of fresh green chives.


BROWN RICE AND HATO MUGI  RISOTTOSMALL___LARGE___
Ah, the calming and balancing whole grain dish! Strengthening medium grain brown rice is slowly cooked with light, cleansing, skin beautifying and blood cleansing hato mugi wild barley, and pearled barley, which lends itself perfectly to the formation of a sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich yellow miso, mirin, a naturally fermented brown rice cooking "sherry", pungent and flavorful organic capers, slices of cremini mushrooms to add richness and flavor, slices of shiitake mushroom to impart their unique flavor and immune strengthening health giving properties, and a sliced green scallion garnish.

TOFU KALE LASAGNESMALL___LARGE___
Whole grain brown rice lasagne noodles are layered with an aromatic blend of tofu, yellow miso, oregano, rosemary, basil, garlic and olive oil, and a fresh green calcium and mineral rich blend of kale, green cabbage, red cabbage, andarugula, smothered in a beta carotene rich orange marinara sauce of yellow onion, carrot, and kabocha squash, topped with rice milk totally vegan "mozzerella cheese" and melted brown rice mochi. Garnished with chlorophyll rich bright green parsley.

POLENTA MARINARASMALL___LARGE___
Freshly ground dried organic corn creates this firm yet creamy polenta, that is spiked with fresh kernels of corn, and green peas, then topped with a lovely orange pancreas nourishing, naturally sweet marinara sauce of carrots, butternut squash, and yellow onions, garnished with chlorophyll rich fresh green parsley.

MEDITERRANEAN THREE BEAN SALADSMALL___LARGE___
Heart healthy chick peas, deeply rich red kidney beans, and French cut fresh green beans, are cooked with kombu sea vegetable to aid in their digestion and enhance their mineral quality, then combined with enzyme rich pickled cucumber, red onions, and radish, to create a fresh and flavorful crunch. Finished with a burst of liver cleansing tangy lemon zest, alkalizing umeboshi plum, and chlorophyll rich fresh green parsley.

LEMONGRASS MOUSSE CAKESMALL___LARGE___
Refreshing, creamy rich, and good for the liver generous dollops of lemongrass scented tofu and amasake mousse, are layered between a whole wheat pastry flour, brown rice syrup, and coconut cake, topped with caramelized slivers of toasted almonds.
