Healthy Living Secrets, aka Self Reflection
We had a productive week off. We had a few things to catch up on, making it necessary to take the week off, but also made sure to enjoy a few days of down time. I think it is safe to say that we all would like to live a life of perfect leisure. Ah, to have all the time in the world for all things healthy each and every day, forever!
Here are just a few of Wholly Macro's Healthy Living Secrets for the rare but essential down time that we all need:
We cook! Yes, when we are not cooking for others, we actually make cooking for ourselves a priority. Okay, we keep it fairly simple, because after all, we have already cooked an entire feast for the weekly delivery service menu, but we just love to buy all sorts of gorgeous organic produce, and actually have the time to prepare it. And even more importantly: the time to sit down to a calm and relaxing meal, and eat and chew to our hearts content. You can't make up for a poor diet. No amount of vitamins, supplements, or medication, can ever take the place of healthy food. And nothing is fun if your body is not healthy and properly nourished.
We exercise. Another surprise. Our idea of perfection is having time to exercise. And we don't mean multi-tasking, like walking on a treadmill while watching the news (which we have been known to do). We mean getting outdoors and doing a pleasant physical activity, whether it is gardening, bike riding, walking, flying a kite, swimming (in natural, live, oxygenated water, not a pool), or climbing a tree!
We avoid electronics! We take computer breaks. And yes, that includes the cell phone too! Put the cell phone and computer down, and walk away from the table. Keep your hands where we can see them! In a world that is already pulling us in 100 different directions at once, it is a real healthy relief to spend even one day electronic free. More than one day is even more ideal. Allow yourself quiet time to actually daydream, (remember that?), disconnected from the constant chatter and distraction of the World Wide Web. A recent article in Psychology Today reports that daydreaming is an essential human activity (albeit a lost one in many cases). Daydreams help us generate our sense of self, hone social skills, and serve as a font of creativity for those who pay attention to them, all of which makes us feel vibrant, aware, and engaged with life.
We make mental health a priority. Pay close attention to your mental health / state of mind. Give yourself / allow yourself reward time. Make reward time for yourself each day. Really. It sounds trite, but if you set your day up so that you can keep your eye on the prize, that time you have scheduled into your day that is just for you, you would be surprised at how much better you will be able to handle the stress the day may bring. For us, by keeping our eye on the prize, we actually avoid getting into that stressed out mode. Why bother. It will all pass and then we will be in our reward time, relaxing and enjoying the moment.
We seek and share our joy. We focus on, with utmost importance, good friends and relationships, our own version of personal fulfillment, optimism, and fun! There is no shortage of mind expanding and enlightening FUN things to do here in South Florida and pretty much everywhere we have ever been. We really don't have time for most of it currently. Our lives, both personal and occupational (thanks to all of you), are quite full, but some things we would love to do with leisure time would be to take dance classes (ball room, salsa, tango, belly dancing (Gayle only on the belly dancing!), attend the Books and Books lectures, TRAVEL, take computer classes, give public group cooking classes, host healthy potluck parties, visit the many people who invite us to come to their homes and cities and teach and lecture in their community, and just spend way more time in general with our friends.
Here are some additional and really beautiful Self Reflection Ideas (you could also call them Healthy Living Secrets) that we learn about when we study at the Kushi Institute. Michio Kushi wrote these.
He categorizes them as Active: ~Do not complain about others. Consider your own ability to improve the situation. ~Do not accuse others. Consider your own errors. ~Do not criticize others. Consider your own inadequacy. ~Do not depend upon others. Consider your own independence. ~Do not ignore others. Consider your own ignorance. (LOVE this one!!).
And Passive: ~Biological self-reflection: Did I eat properly? ~Spiritual self-reflection: Do I have gratitude for my ancestors / elders? ~Social self-reflection: Do I extend greetings happily to any person I encounter? ~Natural self-reflection: Do I marvel at the beauty, grace, and magnificence of nature and the universe? ~Comprehensive self-reflection: Can I say that this life is wonderful, extending unlimited thankfulness to all beings and to the infinite universe?
We keep a copy of these on our refrigerator so that we read them repeatedly, day in and day out, for we can never be humbly reminded of them enough.

ABOUT THIS WEEKS MENU
This week's menu has one of our most popular dishes on it: Wholly Macro's Famous Homemade Barbequed Seitan. Some of you may be familiar with it (ha ha, we know you are). But some of you may not be, and in fact, some of you may not even know what seitan is. Seitan, pronounced say - tan, is pure whole grain protein. You can purchase it at the health food store already made, and ready to be used in your favorite dish in place of meat (it has a chewy meat like texture), or you can start with the whole grain and make it from scratch. In this weeks BBQ Seitan dish we start with the organic whole grain and make it from scratch. It is laborious to make, but well worth the final product. The benefit of eating seitan is that it has a high protein and mineral content, but has no fat and no cholesterol. All animal sources of protein contain both fat and cholesterol. And not the good kind! Beans, another great source of protein, are cholesterol free, contain a healthy amount of natural vegetable oil (the good kind), and are always an essential part of a balanced diet, but for variety, seitan lends itself extremely well to many dishes, and is protein from a grain rather than from a bean. A nice change for our body and our palette. For this dish, the homemade seitan is so special, that all we do, (besides making it from scratch), is cook it with a light brushing of our homemade BBQ sauce, and add some pieces of roasted and braised rutabaga to it to lighten it up and impart its naturally sweet flavor to it. We just don't feel we need to do much more. And besides, you will find plenty of other dishes to choose from and combine the seitan with on the rest of this week's menu selection.
Protein is essential to our good health. Animal based cholesterol and saturated fat are not.
Strawberry shortcake is another favorite on this week's menu. Who doesn't like strawberry shortcake?? Especially if it is actually good for you! So many people are in a thought pattern that automatically says, "All desserts are bad". But the fact is that we need natural sweets in our diet in order to create balance. This cake is so pure and simple, that you can count the ingredients on two hands, and that includes the strawberries and the tofu whip cr�me. For us here at Wholly Macro, and this comes from years of experience at being former sugar addicts, being able to have a few bites of a healthy and satisfying dessert does so much for our bodies, both emotionally and physically. The only sweetener in this dish is brown rice syrup, a complex carbohydrate, not a simple sugar. Brown rice syrup does not impact the pancreas or blood sugar the way that simple sugar does. It is the preferred and smart way to sweeten any dish.

WHITE BEAN AND ARUGULA MISO SOUP
| SMALL___LARGE___ | White beans are cooked with kombu sea vegetable, sweet yellow onions, crisp green celery, gentle yet mineral rich wakame sea vegetable, powerfully healthy shiitake mushrooms, live enzyme rich yellow miso, and beautiful carrot flowers, then garnished with bitter green good for the heart and liver fresh arugula, to create a perfect blend of vital abundance in an healthy miso soup.
BROWN RICE AND WHOLE RYE PILAF | SMALL___LARGE___ | The all important brown rice, medium grain used here to promote strength and vitality without creating too much body heat, cooked with kombu sea vegetables to further enhance the minerals within, then combined with whole grain rye, vitamin E and mineral rich toasty and flavorful sunflower seeds, and an abundance of red blood cell building fresh green parsley, to form a simple and healthy whole grain pilaf.
WHOLLY MACRO'S FAMOUS BARBECUED "HOME MADE" SEITAN | SMALL___LARGE___ | Anyone who has ever made or tasted seitan made from scratch will appreciate how special this dish is. Seitan is basically pure protein, with lots of naturally occurring minerals, and virtually no fat. It has a wonderful chewy texture to it, and is very versatile. In this dish it is braised in a yellow onion, almond butter, mustard, brown rice syrup, shoyu, and barley malt "barbecue" sauce, interspersed with lighter and naturally sweet dices of roasted and braised rutabaga, then garnished with fresh chives. Very unique and delicious.
COUSCOUS TABOULI | SMALL___LARGE___ | Whole wheat couscous makes a perfect grain base for this salad like grain dish that is accompanied by finely diced enzyme rich and digestion supportive pickled cucumbers, red radish, iron rich parsley, strengthening and vitalizing roasted pine nuts, a splash of omega three fatty acid rich extra virgin olive oil, alkalizing umeboshi plum, lots of liver cleansing fresh lemon, and a final garnish of fresh mint.
SESAME SNAP PEA KINPIRA | SMALL___LARGE___ | A spin on the classic kinpira, light and fresh brilliant green snap pea pods, are ever so slightly blanched, then tossed with blood cleansing and strengthening fresh burdock root, and beta carotene rich carrot juliennes and rutabaga, flavored with toasted sesame oil and morsels of fresh ginger, creating a feast of visual and healing energy.
STRAWBERRY SHORTCAKE | SMALL___LARGE___ | The most delicious and understated dessert, a delicate and light cake made of whole wheat pastry flour, brown rice syrup whole grain sweetener, and natural vitamin E rich sunflower oil, is filled with fresh, juicy, and succulently sweet strawberries layered between rich dollops of healthy, low fat, tofu "whip cr�me", topped with another layer of cake, and garnished with rice syrup glazed crunchy and calcium rich sliced almonds.
