Hi Everyone.

 

It is us, Wholly Macro. We are finally back!! We had a great time, learned a lot, and hope to be able to share our knowledge with you over the next several months / years, as we move through this lifetime together. And how grateful we are to be back with you all. We missed you, and always had you in mind as we studied hard and expanded our knowledge base this past few weeks!

One very obvious thing about returning to Florida after being high up in the mountains of the northeast, is the presence of the extreme heat and humidity that we experience here in Florida over the summer. Therefore, our summer menus will be designed to provide nourishing strength without overheating the body.

 

In terms of macrobiotics / oriental medicine, we cannot simply eat salad and watermelon all summer in an effort to stay cool. We must still continue to use whole grains, cracked grains, beans, plenty of varied fresh vegetables, and some natural sweets made with seasonal fruit. Our health depends on it. These standard foods are power houses of energy, and in light of the stress that we all encounter these days, we don't believe that there is one person alive on this planet, who can forge all of the difficult and challenging terrain, without a strong, focused, well balanced body and mind to rely on to see them through. Not that things are all bad, because they aren't, there is so much to enjoy and be grateful for, but why go through life handicapped by poor food choices when you can nourish your body, mind, and soul to the utmost via proper food choices so that you can enjoy life to the fullest, unencumbered by preventable health problems??

 

This week's delivery menu is full of perfect summer food. Let's start with the soup: red is the color of summer. Red foods nourish the heart and small intestine, the organs related to summer energy. What could be more perfect than a summery and protein rich Spaghetti Squash and Red Lentil Miso Soup. And the rice dish: basmati is a long grain variety of rice, native to India, and perfect for hot climates. Long grain rice contains the same nutrients as short grain rice, but the shorter the grain, the more warming the rice is. Basmati Rice is the longest variety of brown rice, and therefore the most cooling. It requires less energy to digest too. And Spelt, good for the liver whole grain spelt, helps the body retain light upward energy throughout the summer months, rather than weighing it down with stronger, more fall / winter type energy. Baked Ziti: tofu is the perfect summer food. So are whole grain pasta's.  Tofu is naturally cooling to the body, yet full of good quality protein and minerals inherent in the soybean itself. And Polenta: corn is one of the main grains associated with summer energy. It is lively and full of energy, yet light, and very good for the heart. It is a perfect food to calm and cool overheated, dare I say short tempered, summertime bodies / minds. It is easy to become hot tempered as the heat of summer fans us. Fresh corn, and its light cracked grain relative polenta, make the perfect companions for our summertime bodies. The Field Of Greens: this dish is like a salad, except that it incorporates the famed leafy greens. Anytime you have a choice of lettuce or leafy greens and cabbage, please choose the leafy greens and cabbage, as they are ultimately more nutrient dense foods, and an essential part of any seasonal menu / diet. You can serve them on a salad, with a salad, in a salad, etc. Just be sure to eat them year round! And the dessert: Strawberry Chiffon Pie: a cooling, mildly sweet dessert treat that relaxes and nourishes the pancreas. The pancreas is related to late summer. It kicks in around August / September, to sort of attempt to clean up the havoc that a summer full of ice cream, soda, fruit juice, etc. wreaks on our body. For most of us, the pancreas is over worked, over taxed, seriously weakened, and unable to do it's job well. This can result in hypoglycemia, or worse, diabetes or pre-diabetes, and / or kidney and adrenal weakness. The pancreas needs the sweet flavor, it just needs it in mild and natural sweet form, not simple sugar.

 

Anyway, as you can see, Wholly Macro is still very much on track. We had such a healthy and knowledge filled break / study session. We feel more committed than ever to never stray from our healthy path in life, and welcome you all to join us once again in pursuit of the ultimate in fun filled and fulfilling, happy and healthy diet and lifestyle pursuits!

SPAGHETTI SQUASH AND RED LENTIL MISO VEGETABLE SOUP

Crystal clear noodle like strands of spaghetti squash gently grace this unique and flavorful sweet yellow miso, mineral rich wakame sea vegetable, immune system boosting flavorful shiitake mushroom, naturally sweet pancreas healthy yellow onion, naturally diuretic crisp green celery, strengthening green leek, sweet orange kabocha squash, fresh green pea, fresh sunshine yellow corn, and stimulating ginger root soup. Garnished with fresh green chives.

 

BROWN BASMATI RICE AND SPELT  PILAF                    SMALL___ LARGE___

Delicious grains of medium brown rice, and longer grained-lighter energy brown basmati rice, are cooked with mineral rich kombu sea vegetable, and good for the liver plump and juicy grains of whole spelt, then tossed with gorgeous deep red, good for the kidneys dried cranberries, trace mineral and vitamin E rich lightly roasted sunflower seeds, lightly blanched fresh green scallions, circulation promoting fresh pungent ginger, and brilliantly rich green blood building parsley.

 

BAKED ZITI                                                                          SMALL___ LARGE___

Healthy whole grain tubular spelt penne are infused with a beta carotene rich marinara sauce of yellow onions, carrots, and kabocha squash, and a rich, high calcium and high protein tofu and tahini "cheesey" sauce that is gently seasoned with enzyme rich delicately sweet yellow miso, and delectable pieces of cleansing and medicinal cremini and shiitake mushrooms, and dark green high fiber, calcium and iron rich broccoli, garnished with fresh basil and oregano, and topped with a crust of baked soy cheese.

 

TORTA DI POLENTA                                                         SMALL___ LARGE___

Thick layers of sweetly saut�ed yellow onion and fresh and dried corn polenta, are filled with diced zucchini and grilled portabello and cremini mushrooms, then topped with a chunky sauce of beta carotene rich carrots and kabocha squash, to create this light yet hearty grain and vegetable dish.

 

FIELD OF GREENS                                          SMALL______LARGE______

Healthy beyond your wildest dreams, a dark green leafy blend of green cabbage, kale, collard greens and leek, highlighted with vibrantly purple iron rich red cabbage, and gentle slivers of beta carotene rich orange carrots, flavored with alkalizing and digestion promoting umeboshi plum, and the powerfully deep cleansing action of shiitake mushrooms.

 

STRAWBERRY CHIFFON PIE                                              SMALL___ LARGE___

A delicious and creamy phyto-nutrient rich strawberry custard layered dessert, the pie crust is a mineral rich rolled oat and almond, and omega fatty acid rich sunflower oil base, filled with an  "amasake" brown rice milk, fiber and mineral rich agar agar, digestion promoting kuzu, and fresh strawberry center, that is topped with a rich and creamy high calcium, low fat tofu, almond, and tahini whip cr�me with subtle hints of vanilla, all sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup.
