Hi Everybody!

 

Please find the April 29, 2010 Wholly Macro Delivery Menu in the Weekly Menu Section below. It has some all time favorites on it, like the falafel burger, a wholesome combination of freshly cooked (by Wholly Macro) whole grains and beans, (nothing canned in our kitchen), and several freshly minced veggies packed in. Our burgers don't contain any flour, and no fillers of any type. Just fresh, pure, real foods. The foods that we use in our burgers don't need to be made into burgers. When we prepare these burgers, the kitchen counter is filled with bowls of chickpeas cooked with kombu sea vegetable, bowls of millet, bowls of carrots, onions, parley, and corn, and a pan full of roasted sesame seeds. All of that food can be eaten as is. But we like to "kick it up a notch", by combining the ingredients, forming them into thick patties, and pan browning them to create the purest and tastiest vegetable burgers ever!

 

In the ever evolving realm of possibilities related to the creativity that food avails itself to, you can then take these burgers and morph them into endless other creations. You can use them as traditional burgers with all of the accompanying accoutrements. You can stuff them into a whole grain pita with some tahini sauce and make falafels. You can wrap them in your favorite healthy wrap and fillings to create a fun wrap. You can break them up in a sauce over pasta to make a healthy version of spaghetti and meatballs. And on and on. Or, you can just eat them as is. Sometimes simpler is better. Or as we always say here at Wholly Macro, "more is not better". Meaning, that if a little of something is good for you, eating more of it does not mean it is "better" for you. It is best to eat healthy food in the proper quantities, consistently, then to try to pack it all in at once, to make-up for the unhealthy food choices you made the rest of the week.

 

And speaking of the concept of more is not better, I just have to share the TV commercial I saw this week. It gave me a good laugh. I hope it does the same for you! It was for Kentucky Fried Chickens latest offering: the "Double Down". Which is, bacon and cheese between two fried chicken fillets. It is enormous, and just oozing with fat and cholesterol. It is a triple whammy. Three sources of saturated fat, protein, and cholesterol, all rolled into one gigantic sandwich. And yes, the fried chicken fillets actually serve as the bread part of this "sandwich" in this insult to food, to health, and to our intellects. And to add insult to injury, they actually say that they offer the chicken fillets grilled if you are at all concerned about your health!!

 

We have nothing against KFC, just the general "more IS better" concept that they (and many), seem to promote, with no concern at all for the health repercussions their new creation will cause. Seriously, in this day, and age of rampant obesity and heart disease??? We just expect a little more consciousness, awareness, and responsibility. From Everyone. Is that so much to ask??

SHIITAKE NOODLE SOUP                                         SMALL___ LARGE___

Our comforting version of chicken noodle soup, minus the chicken of course: energetically relaxing cubes of tofu are floating in a richly flavored barley miso, wakame sea vegetable, and shiitake mushroom broth, along with beta carotene rich carrots, cooling and naturally diuretic celery, so sweet parsnips, pancreas healthy yellow onions, brown rice noodles, a few sprigs of fresh dill, and a garnish of chlorophyll rich fresh green parsley.

 

BROWN RICE AND MIXED CRACKED GRAINS           SMALLĀ­___ LARGE___

The strengthening and grounding energy of whole grain medium brown rice is mixed with the lighter energy of the following cracked grains: corn, bulghar, and couscous, then cooked with mineral rich kombu sea vegetable, energy packed flavorfully toasted sunflower seeds, chlorophyll rich fresh green parsley, and a touch of alkalizing and digestive umeboshi plum to finish off this balanced and stabilizing dish.

 

FALAFEL BURGERS                                                      SMALL___ LARGE___

These thick and juicy whole grain burgers are made from spleen and pancreas healthy millet, protein rich good for the heart and pancreas chick peas, tiny dices of yellow onion, juicy corn kernels, fresh carrots and parsley, and a glaze of brown rice syrup and calcium rich brown and black sesame seeds.

 

SPELT PENNE WITH SEITAN AND  BLACK OLIVE TAPENADE

Spelt, an ancient heirloom Roman grain that promotes liver health, is the base of these penne noodles, that are delicately draped in a flavorful Mediterranean tapenade made from a coarse puree of naturally fermented and live enzyme rich black olives, pungent and flavorful capers, lightly roasted walnuts, protein rich seitan, and lots of flavorful and chlorophyll rich fresh basil and parsley.

 

MEDITERRANEAN CHICK PEA SALAD                        SMALL ____   LARGE____

Heart healthy chick peas, cooked with kombu sea vegetable, to aid in their digestion and enhance their mineral quality, are combined with live enzyme rich pickled cucumber, naturally sweet and good for the pancreas red onions, cleansing and naturally diuretic red radish, and stabilizing and mineral rich cauliflower, to create a fresh, healthy, and flavorful crunch. Finished with a dressing of tangy and liver cleansing fresh lemon zest, fresh dill, and calcium rich tahini.

 

TOFU CHEESECAKE WITH CAROB GANACHE             SMALL___ LARGE___

Well, since I would never eat "real" cheesecake, I find this to be a fantastic substitute. It is rich, creamy, smooth, and healthy, with none of the saturated fat or cholesterol of the "real" thing! The crust is a crunchy and satisfying blend of rolled oats, sunflower seeds, and almonds, gently sweetened with complex carbohydrate filled brown rice syrup, and the "cheese" is a blend of protein rich tofu, calcium rich sesame tahini, amasake brown rice milk, intestine strengthening kuzu, fiber and mineral rich agar agar, and vanilla, all topped with the richest tasting naturally caffeine free pure carob ganache.
