Hi Everyone!

There are so many healthy ingredients to hi-light this week. I could write pages and pages about seitan, or ojiya, or kale, or hijiki. But I think I am going to skip doing that this week, and suffice it to say, that each dish on this week's menu (and all of our menu's for that matter), contain numerous super star worthy healthy foods. I will add, that this menu is designed for spring, so has several foods / dishes that focus on nourishing, supporting, and cleansing the liver and gallbladder, the two organs of our body that are primarily associated with spring. As you read through the descriptions of each dish, I think you will see what I mean!

 

You really can't go wrong on this menu, no matter what you choose to order. And hey, if you can't decide which dishes to order, just order them all!!

 

This past week I read a few interesting articles about the new / changing paradigm of  "a business". Okay, the articles were about huge, and hugely successful businesses, mostly related to computers and the internet, like Google and Apple. But the truths the articles spoke, could be applied right down the line to our small (but successful thanks to all of you) business, Wholly Macro.

 

We are so hands on, and are fortunate that we get to speak directly to so many of our clients by phone or email due to the small nature of our business. And we are always so happy to share the principles we believe in, the principles we created and built this business on via the way that we do business. There is very little red tape here at Wholly Macro. If there is a problem, we fix it right away. And while we may not always answer the phone because we spend so much of our time in the kitchen, and for those of you who work with food, you might know how demanding food is, it requires full attention, we do pride ourselves in always getting back to each and everyone one of you in a timely manner.

 

Often we sit back and exude gratitude that we are able to make decisions, correct and problem solve issues, create a service to fill any and all of your individual needs, say yes, and do it all our way, in a pleasant and efficient manner. When we call a business or company and get what we refer to as the "NO" attitude, the "we can't do it, we can't accommodate your needs, we just don't care, the answer is NO" attitude, often accompanied by an unpleasant person putting us on endless hold, do you know what we do? We just hang up. And find a "YES" company. A happy company. And again, feel so grateful that we can conduct our business any way we want to, and for each and every time we are met with unpleasantness in the world, we turn it around and focus on putting forth, and receiving in return, only happiness, only pleasantness, only positive ness.

 

When we started Wholly Macro, way back in 1996, our business mantra was, "If we cook, people will come". Meaning, that if we stood in the kitchen cooking, and created beautiful, healthy, energizing food, people would show up to eat it. We may not be a Google or Apple, but we were and are pretty cutting edge. We built this company on the same un-conventional principles those companies and many more very successful companies follow today, way before those companies even existed!

 

A few hi-lights of the articles that we especially liked are below. And please, everywhere that these principles refer to work, try substituting such words as life, happiness, satisfaction, peace of mind, health, etc. It is all the same! We have taken the liberty of embellishing for further clarity:

 

Happy companies, at peace with their values, are more likely to be successful.

 

Pursuing happiness achieves financial success.

 

Champion principle over profit.

 

Don't be a workaholic. Make better use of less time. Quality over quantity.

 

(We love this one) Hire the better writer. Clear writing is a sign of clear thinking.

 

Formal education is not everything. There is much to be said about life experience.

 

Make your "product" well. Do your best, to keep 'em returning.

 

(Love this one too) Emulate chefs. The great ones share everything they know.

 

(Love these two, this is how we started!) Anyone can start a business. Anyone can be an entrepreneur. You need less than you think. Do you need to rent an office, or will the garage do for now?

 

We can think of so many more principles such as these. Perhaps you can too.

 

A quote from one of the articles: "Business (remember, interject other key words such as life, etc.) originated to produce happiness." Written by Charles Forbes of Forbes magazine. We don't think he meant that you have to work to be happy. The way we interpret it is that what you do in life should make you happy, work or otherwise. Pursue your happiness. Peace of mind and physical health will follow.

April 22:

On April 22 I will be doing a free lecture at a wonderfully enterprising client of ours beautiful acupuncture clinic in Pompano Beach at 7:30 PM. The lecture is entitled Macrobiotics: The Food Component Of Oriental Medicine. It will be a show and tell type format, highlighting the many healthy foods that we borrow from macrobiotics to create the utmost in healthy cuisine, and how these foods compliment and round out healing body therapies such as acupuncture. Refreshments will be served, I'll be speaking, and you can check out this lovely acupuncturist and her clinic for future use.

April 29:

The Macrobiotic Dinner and Lecture Group will be meeting on April 25 at 7 PM at Wild East Asian Bistro on Las Olas Boulevard in Fort Lauderdale. The topic of this lecture will be: The Fine Art Of Body Scrubbing, and will be presenting my user - friendly version of this ancient oriental health and beauty technique.

SPLIT PEA MISO SOUP WITH TOFU SOUR CR�ME    SMALL___ LARGE___

A thick, creamy, and nourishing puree of liver healthy and protein rich green split peas cooked with mineral rich kombu sea vegetable, speckled with dices of carrots, parsnips, and yellow onions, powerfully cleansing and immune system boosting shiitake mushrooms, gentle and relaxing mineral rich wakame sea vegetable, enzyme rich sweet yellow miso, fresh dill, and a garnish of tofu sour cr�me sprinkled with fresh green chives.

 

BROWN RICE AND MILLET OJIYA                   SMALL___ LARGE___

Medium grain brown rice and millet, are cooked to a soft consistency with mineral rich kombu sea vegetable and finely chopped pieces of yellow onion, kabocha squash, and green cabbage, then seasoned with hardy barley miso and fresh green parsley garnish, to create this traditional Japanese soft grain porridge, that provides substantial nourishment, while energizing the mind and body. A great way to start the day!

 

SEITAN AND ROOT VEGETABLE STROGANOFF         SMALL___ LARGE___

Juicy and flavorful morsels of protein rich seitan, are grilled to perfection, along with sweet and succulent rutabaga, turnip, parsnip, and carrot good for the pancreas root vegetables, then smothered in a thick, rich, and creamy shiitake, cremini, and portabello mushroom gravy, flavored with shoyu, mirin, brown rice syrup, and  ginger, then thickened with intestine strengthening kuzu root and sweet, good for the pancreas yellow onions. Garnished with scallions for some fresh liver energizing green-ness! Great with the udon dish or on it's own.

 

UDON FETTUCCINE WITH WILD GREENS             SMALL____LARGE_____

Calcium and mineral rich authentic black sesame seeds are dusted with arrow root and browned, then tossed with bitter green good for the liver wild green rappini, arugula, broccoli, and dandelion greens, slices of fresh scallion, and circulation promoting fresh ginger, and served over a bed of toasted sesame oil flavored spelt udon fettuccine noodles.

 

BRAISED RED CABBAGE WITH KALE AND HIJIKI         SMALL___ LARGE___

This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in calcium, iron, and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and shoyu sauce, then highlighted with lightly steamed chlorophyll rich dark green kale, and iron and mineral rich delicate black strands of hijiki sea vegetable, along with some sweetly sauteed yellow onions, and a sprinkling of fresh green chives.

 

COCONUT CR�ME CAKE                                           SMALL___ LARGE___

A delicious and creamy coconut custard layered dessert, the cake is a whole wheat pastry flour, sunflower oil, and "amasake" brown rice milk light as a feather batter, layered with rich and creamy high calcium, low fat tofu, almond, and coconut whip cr�me with subtle hints of vanilla, sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup, and garnished with toasted coconut flakes.
