Recipe of the Month: Spicy Broccoli and Garlic Sauce 

Ingredients (use vegan versions):
   
1 cup vegetable broth
2 cloves garlic, minced
1 tablespoon soy sauce
1 1/2 teaspoons red chili flakes
1 teaspoon sesame oil
1-2 scallions, diced
1 tablespoon canola oil
1 head broccoli, chopped
1/4 cup water
 
Directions:
1. For sauce, combine veggie broth, garlic, soy sauce, sesame oil, red pepper flakes and scallions in medium bowl.

2. In a medium frying pan, add the canola oil and put on high heat.

3. Add the broccoli, and stir occasionally for about 3-5 minutes, until most of the broccoli brightens and browns a little. Next, add 1/4 cup water and lower the temperature to medium.

4. Cover and let the broccoli steam for about 2-4 minutes. Once the broccoli is cooked, add the sauce.

5. Place the cover back on and turn the heat up a little. Wait for 2-3 minutes or until the sauce thickens. When it is thick enough, it's ready to serve!

Serve with basmati or jasmine rice. Add a few other veggies if you like, such as carrots, water chestnuts, bamboo shoots and snow peas. Toss them in with the broccoli during the browning process. Enjoy!

 

Makes: 2 servings, Preparation time: 5-6 mins, Cooking time: 10-15 mins.

Some like it hot . . .  

 

  . . . but not as hot as most of the country had to endure last week!  Even in New England we had several days of Hades-like temperatures.  However, eating a whole foods plant-based diet may help keep you cooler.  Meat, dairy and processed foods force your body to work harder to digest food, and 'no body' likes to work hard in the heat!

Dairy Being Heavily Promoted Despite the Known Health Risks    

Dairy Management is a farmer's consortium set up to aggressively advertise, promote, and support the selling of dairy products to Americans.  Supposedly independent, it seems to be a marketing creation of the U.S. Department of Agriculture.  According to the New York Times, Dairy Management came to the rescue of Domino's Pizza, encouraging them to use more cheese on their pizzas.  It worked - people gobbled up pizzas which now contain the daily saturated fat allowance several times over.  Highly motivated in their promotion efforts, Dairy Management attempted to show how dairy products could be used for weight loss.  The campaign ended when studies failed to show any correlation between weight loss and the consumption of dairy products.

Since Americans already consume 33 lbs. of cheese per person per year, and cheese is the biggest source of saturated fat in the American diet, it hardly makes sense for any consortium to tell people to eat more of what they already eat too much of.

Spotlight on . . . .

Dr. John McDougall    Dr. John McDougall

 

John McDougall, M.D., hopes his patients won't return to see him.  While that sounds quite radical, it isn't so strange when you think about it.  Dr. McDougall has developed, through his books, website, private practice and 10-day retreats, a program that has helped many people reverse chronic illnesses and regain their health through a low-fat vegetarian diet. 

 

John McDougall suffered a stroke while still in his teens, due, he now believes, from a diet high in meat and fat.  Medical school did little to help him see the connection between diet and heart disease; it was not until he moved to Hawaii and observed the mostly plant-based, low fat diets of the natives that the idea for the McDougall Program began to take form.
