Healthy Nutrition

Our second newsletter this month is all about healthy eating and plant-based nutrition. We feature Dr Mehmet Oz's movement, HealthCorps, whose goal is to end childhood obesity.  The spotlight is on Kathy Freston's new book, Veganist, whose message is that by moving gradually toward a whole foods, plant-based diet, we will lose weight, heal our bodies from disease, and start making the world a more peaceful and livable place

Memorial Weekend Food Fun
Whether celebrating with a sun-soaked picnic on the beach or hosting an afternoon backyard cookout, Memorial Day is the perfect time to show off the variety, color, and flavor of veggie food with friends and family. Replacing holiday barbecue standards with veggie burgers and brats is a snap, and classic sides are easily veganized. Whatever your plans, make sure to enjoy the day away from work and stress with tons of fun and vegan food.  Nothing says summer like a well-planned vegan picnic. Planning a plant-based, warm-weather menu is a breeze-just remember to keep it simple and fresh. Emphasize what's in season. Fire up the grill and throw on everything from veggie shish kabobs, corn on the cob, and Portobello Burgers - like the ones in our recipe below!

Recipe of the Month: Grilled Portobello Mushrooms with Basil Mustard Sauce   

 

Perfect for the barbeque - try these yummy Portobello Burgers!

Grilled Portobello with Mustard and BasilIngredients:

6-8 cloves garlic, minced   

1 cup olive oil   

1 cup vegan mayonnaise

1/2 cup fresh basil, chopped

1 lemon, juiced

1 tablespoon Dijon mustard

Salt and pepper, to taste

Dash cayenne

4 portobello mushroom caps     

4 whole wheat vegan buns

Fresh basil, to garnish, optional


Directions:
1. Steep minced garlic in oil for at least 1 hour and up to 6 hours or so. Meanwhile, mix the mayonnaise, basil, lemon, mustard, and salt and cayenne pepper in a small bowl. Cover and chill.
2. Fire up the grill. Brush portobello caps and whole wheat buns with garlic oil. Grill portobello caps, about 4 minutes on each side.
3. Grill buns until toasted. Serve mushrooms on buns with the basil mustard sauce; put fresh basil leaves on the sandwich, if desired.

Kathy Freston (author of the Quantum Wellness books) has just recently published this excellent work explaining how adopting a plant-based diet will help you to not only lose weight, but reduce your risk of cancer and be good for the planet as well.  It's more of a "cheery manifesto" rather than a lecture, a guide to making the transition to a vegan lifestyle.  It's filled with facts, personal stories and interviews with nutrition experts such as Dean Ornish and Neal Barnard.  Available on Amazon and good bookstores.
Tackling Childhood Obesity, One Student at a Time:  HealthCorps
Dr. Mehmet Oz and his wife Lisa have developed a program to help schoolchildren take a proactive role in tackling child obesity.  Called HealthCorps, it is a community-based initiative, involving specially-trained coordinators and college graduates to go into schools and help young people develop a healthy lifestyle.  It's not just about food, though: the program's "Mental Resilience" section shows students how to manage stress and improve self-esteem.
