THE  COUNSELING AND COACHING CONNECTION:  Vegan Lifestyle
 
I offer macrobiotic and vegan individual consultations and coaching sessions. I also do group seminars, workshops and cooking demonstrations. I can do the coaching and consultation over the phone or in person. My technical support team is working on setting up Skype and webcams to help with our long distance cooking classes and our consultations.

READING CONNECTION: The Kind Diet
The Kind Diet
by Alicia Silverstone
(Rodale Books, hardcover)

The actress Alicia Silverstone ("Clueless", "Batman & Robin") is vegan.  She avoids processed foods and "white stuff", she incorporates raw foods, and she eats in alignment with macrobiotics.  She describes the entire journey in her book, The Kind Diet and it is fascinating.
 
Silverstone classifies the book's readers as falling into three categories.  Those who are ready to make small changes are called "flirts".  Those who are a bit more adventurous are "going vegan".  And those who are ready to make the full-time commitment to being vegan and being more sensitive to how all their choices affect the environment are called "superheroes". 
 
Her recipies are similarly divided, and although I did find that some of the veggies that were used in them were unfamiliar to me, I accepted Alicia's challenge to try something that I had never eaten before.  Her education on spices and herbs is beneficial, and it takes a little of the mystery out of cooking.
 
I loved this book, and I know that you will too.  Oh, and if you haven't already, try the kabocha squash.  Good stuff!

HEALTHY  EATING CONNECTION:  Tofu Scrambled  "Eggs"
A DELICIOUS RECIPE FROM ALICIA SILVERSTONE

Tofu Scrambed "Eggs"
INGREDIENTS:
3-4 mushrooms
1-2 stalks of scallions
Half a package of tofu
Salt and pepper to taste
1 tablespoon of olive oil
A little ume vinegar
 
STEPS:
Heat the oil in a pan.
Toss in the mushrooms and scallions and lightly sauté.
Add the tofu to the pan (squeeze it into the pan, crumble style.  This will make it turn out like eggs).
Add a pinch of salt to the tofu, and let it cook.
Then add a pinch of pepper and the ume vinegar.
Sauté for 5-10 minutes on medium heat.
Basically just cook it like you used to cook eggs.

A  PERSONAL HEALING  CONNECTION: 
 Lupus and a Vegan Diet

"It all started a little over two months ago... I had a gift card for Barnes and Noble that I decided to spend by purchasing The Kind Diet. I had seen it before but didn't believe I could ever change my lifestyle to this. I had come to a point though where I no longer had any other option but to make a change. When I was 16 years old I started having joint pain along with swelling and a list of other things. After months of blood tests, different scans and a number of doctors I still didn't have an answer. The doctors continually tried to put me on different medications and some even said it was probably because I was a bit overweight. In the fall of 2007 I left home for college even though I was still dealing with the pain and was no where near a diagnosis. After one year away I realized that I needed to be close to home where I could find a doctor who would help find the cause of my mysterious symptoms. I finally received my diagnosis just a little over a year ago... Lupus. I had no idea what this was or how it would affect my body. So for the past year I have been placed on a number of medications.
 
My story gets better though, I had my usual appointment with my specialist yesterday, who was elated at how well I am doing. Just after being vegan for two months I almost feel like I did before my diagnosis. I have lost 11 pounds and no longer suffer from the excess joint pain I did for a number of years. My doctor also felt that with all of the progress I have made my lupus is not as active as it was and I get to cut my medication dosage in half! My body will never be normal and I have accepted this, but becoming vegan has made me feel so much better. I still have weight to lose and of course would love to transition to becoming a Superhero. Buying this book was the best decision I have made for myself. Thank you doesn't even come close to the gratitude I have for Alicia and this amazing book!"
