Breaking News!!!
Soy Intake Decreases Risk of Hip Fractures
In a new study published in the American Journal of
Epidemiology, intake of soy products reduced the risk of hip factures as much
as 36 percent among women who consumed more than the least amount of soy. All
intakes above the least amount consumed, for example any amount greater than
one-fourth cup to fur cups per day, averaged a 30 percent protective effect. The study
was part of the Singapore Chinese Health Study and looked at more than 63,000
male and female adults.

PERSONAL CONNECTION:
Recovery From Uterine Cancer by Lili B. Link, MD
"Two years, 10 months, and 18 days ago, I was diagnosed
with cancer...a grapefruit sized tumor growing out of my uterus that was
touching my ovary, bladder, colon, and abdominal wall. My surgeons removed my
uterus and one ovary and told me that they did their best to scrape any
remaining cells from the surrounding organs. The diagnosis was a pelvic sarcoma
with an aggressive cell type. My oncologist, with whom I have a great
relationship, gave me six cycles of intensive chemotherapy over the next four
months.
Four weeks after completing conventional
therapy, I went to the Hippocrates Institutute. I was bald, skinny, weak, menopausal, anemic,
and I had a low white blood cell count. I spent three weeks at Hippocrates....had
a wonderful experience there and took the program home with me...I have been
juicing 5 times a day (2 wheatgrass, 1 cucumber, and 2 green drinks) since then
and eat the raw, vegan, organic diet I learned about at Hippocrates.
As best as modern medicine can tell, there is no evidence of
cancer in my body...The best news of all is that over the past few weeks my
remaining ovary has started functioning again! With the support of this
lifestyle, I am now looking forward to a long life full of good times and
health".

FOOD CONNECTION:
Aduki Bean-Chestnut Soup (for those chilly Fall days.)
I was introduced to this soup by Rachel Zierzow of the Natural Epicurean Culinary School, Austin, TX, who
discovered this recipe in Sublime Soup by Lenore Baum.
1 cup dried peeled chestnuts
5 cups water
2 cups dried azuki beans
6" piece kombu
1 large onion, diced
2 large carrots, diced
1/4 tsp ground cardamom
2 tsp sea salt
sprinkle of grated nutmeg
Add chestnuts and water to pressure cooker. Soak 6 hours.
Wash azuki beans, place in a large bowl, cover with water and soak 6 hours.
Cover kombu with water and soak 5 minutes. Cut into
1/2" squares and set aside. Remove chestnuts, cut in half, discarding
skins. Return to pressure cooker with soaking water and bring to a boil. Add
soaked azukis, kombu, onion, carrots and cardamom to pressure cooker.Lock lid
and bring to full pressure over high heat.Place flame tamer underneath. reduce heat just enough to keep high pressure. Cook 20 minutes.
For
quick release pressure, if the beans aren't tender, simmer til they are
and then add the salt. Close lid and let stand 5 minutes off the heat.
Transfer 5 cups soup to bender and process til smooth. Return puree to
pressure cooker and serve garnished with a little sprinkle of nutmeg.
