Kick Up the Flavor with Herbs and Carter & Cavero!
This month, Carter & Cavero is looking to combine your favorite herbs with their olive oils and balsamic vinegars, bringing out the best in your spring dishes!
We encourage you to use your herbs chopped as a garnish with a drizzle of Meyer Lemon Olive Oil, ground into pesto with our robust Hojiblanca EVOO, or whipped into butter with a splash of Garlic Olive Oil.
You can't go wrong when the ingredients are fresh and flavorful!

Potato Salad with Fresh Herbs
Ingredients:
3 lbs. potatoes, scrubbed
1/4 c. C&C White Balsamic Vinegar
4 Tbs. C&C Garlic Olive Oil
8 anchovy fillets, drained and minced
1/2 c. C&C Nocellara del Belice EVOO
2 Jalape�o pepper, seeded and finely chopped
8 scallions, trimmed, washed and finely sliced
1 c. chopped mint
1 c. chopped cilantro
Salt (C&C Bali Lime & Coconut Sea Salt) and pepper
Preparation:
Boil potatoes with 1 tablespoon of salt until cooked. About 20 minutes. Allow to cool. Peel and cut into bite size pieces. In a bowl whisk together vinegar, garlic oil and extra-virgin olive oil. On a plate, mash the anchovy fillet with one tablespoon of the oil and vinegar mixture. Combine anchovy paste with oil and vinegar mixture and whisk thoroughly. Stir in peppers and scallions. Add the potatoes and toss gently. Add mint and parsley and toss again. Add salt and pepper to taste and serve.

Baked Salmon with Spring Herbs
Ingredients:
1 wild salmon, about 3 lbs., (with skin on)
3 Tbs. C&C Nocellara del Belice EVOO
Sea salt (C&C Bali Lime Coconut) and fresh ground pepper, to taste
1 Tbs. snipped fresh chives
1 1/2 Tbs. finely chopped parsley
1/4 c. C&C Tangerine Balsamic Vinegar
6 lemon wedges
Preparation:
Preheat oven to 250�F. Line a rimmed baking sheet with aluminum foil. Place the salmon on the baking sheet and rub the fish all over with the olive oil. Season well with salt and pepper. Place the fish skin side down and let it come to room temperature. Bake the salmon until it is opaque on the outside and there is no resistance when you pierce it with a skewer, 20 to 25 minutes. Let stand for 5 minutes before serving. While fish is baking prepare a balsamic reduction. Pour the Tangerine balsamic vinegar in a small sauce pan. Simmer on low heat about 10 minutes until reduced to about 3/4 of its original amount. Let cool for 15 minutes. To serve fish, use a fork to flake the warm salmon into chunks. Sprinkle with the chives, parsley, a drizzle of balsamic reduction and garnish with the lemon wedges.

Ingredients:
1/2 lb. dried Umbricelli pasta
1/2 c. roughly chopped mixed herbs, such as parsley, chervil, tarragon, dill, and basil
2 Tbs. of C&C Tuscan Herb Olive Oil
2 tsp. finely grated lemon zest
1 Tbs. C&C White Balsamic Vinegar
Coarse Sea Salt (C&C Bali Lime & Coconut)
1/4 c. Parmesan cheese
Preparation:
Cook pasta in a large pot according to package with one tablespoon of salt. Drain pasta. In a large serving bowl toss pasta with mixed herbs, oil, balsamic vinegar, lemon zest, 1/4 teaspoon of salt, and the Parmesan cheese. Serve as a side dish with baked salmon.
