5 Steps to a perfect pot of tea
|

 Step 1: Boil filtered water |
|
Step 2: Warm the pot with a splash of hot water; discard water

 Step 3: Measure the tea carefully.
|
|
Step 4: Pour on the boiling water. Time your tea for 4-5 minutes.

Chatsford Teapots

Greetings!
One of the first things I picked up at the Walmart in Langfang*, China was an electric tea kettle. Each morning, I enjoyed a cup of Whittard Russian Caravan, M"The Wave" Chatsford Teapot | ango, or Irish Blend which I brewed in my Chatsford teapot. If I am traveling for more than four days, I usually take a Chatsford teapot with me. Read more about how to brew a perfect pot of tea below. We had two delightful tea parties while in China. We got raves for the Summer Pudding tea and the Annie's Tea Time Scones served with mock Devonshire cream and jam. I carefully packed twelve vintage bone China teacups so we could enjoy a cream tea in style. More on my China travels below. *Langfang is an hour or so outside of Beijing. | Mock Devonshire Cream
This isn't a true clotted cream but it will take your scones up a notch to a whole new level. 1 cup heavy cream1/2 cup sour cream Whip the heavy cream until stiff peaks form. Fold in the sour cream. Chill until ready to serve. Bake your own scones. It is easy with Annie's Tea Time Scone mix. Just add 3/4 cup of water, mix with a fork, drop on a pan and bake. Yes, it is that easy. Cream Tea - at home

| The easy way to make a Cream Tea at home
A traditional cream tea is comprised of four things: - two scones
- clotted cream
- strawberry jam
- cup of tea
Here is what Annie does: - I bake a batch of scones using Annie's Tea Time Scone mix for the easiest and moistest scones: "Just add water and bake."
- Instead of clotted cream, I make Mock Devonshire Cream, recipe above. Truly, this makes your scones heavenly.
- The best jam is homemade Freezer Jam. I use "Sure Jell" pectin and make it at home. It is almost as easy as making a package of jello. I make either Strawberry or Raspberry (my favorite).

How Annie eats a scone:
Break off a piece of scone. (Some prefer to split the scone in half). Cover with a spoonful of Mock Devonshire cream Top with a bit of raspberry jam Serve on your best china plates
And pour out a lovely cup of tea

" We are going to have to carry the chocolate chips in our carry-on luggage so they won't melt." That's what we concluded as we tried to pack almost 200 lbs of tools and bakery ingredients for our trip to China. My husband, my 14 yr old, and I returned to China this past summer to help at the foster home for orphans with brittle bones disease. There are about 12 orphans at the Agape Family Life House as well as another five young people who work at the bakery. The directors, Keith and Cheryl Wyse have been in China since 2002 taking in orphans with brittle bones disease.  In between organizing the bakery pantry, and cooking meals, I invited the director's wife and her kids (they have five adopted daughters from China) to a Cream Tea. Part of my checked-in luggage was twelve vintage bone china teacups, milk jug, sugar bowls, sugar tongs, decorated sugar cubes, Chatsford teapot, table cloth, teaspoons, and Summer Pudding tea. Cheryl later wrote: " I will never forget the tea
party. What a wonderful gift you have in serving. I really needed the down
time and I truly enjoyed it." Wow, did you know that a Cream Tea could bless someone that much? At the Agape Family Life House, kids beyond a certain age cannot be adopted. So, Keith and Cheryl set up
Bread of Life Bakery which creates jobs and a good working environment for older orphans who are disabled.
Currently, they offer chocolate chip cookies, apple pies, brownies, pizza homemade sausages (even Bratwurst) and corn dogs.
So,
that's why we had to bring the chocolate chips, vanilla extract, cinnamon, pecans,
and more. I so enjoyed getting to know them as I stocked the pantry and baked sample recipes. They laughed at my Cantonese. The day before we left, we had one more cream tea. This was for the the workers at the Bread of Life  Bakery. They each have different special needs. Their names are Hannah, Johanna, Amy, Cindy, and Simon. Hannah, who has cerebral palsy, speaks English and takes all phone orders. The rest do the baking. Johanna and Simon also make the sausages. They loved the Summer Pudding tea and the Scones with the cream and jam. I was blessed in giving these two Cream Teas. I left all the cream tea supplies in China. Next year, I hope to return and do another Cream Tea.
