  For directions call 781-891-0650 x56.  If coming from Rte 128, take exit 26, Rte 20/Main St. East thru Waltham past City Hall.  Your second light will be Rte 60/LInden St.  Turn left and drive 9/10th of a mile to Beaver St. intersection. The American Legion will be on your right.  The Shell station will be on the opposite corner.  There is no street sign for Beaver Street.  Turn left and set your odometer.to go three tenths of a mile.  On your left you wil pass a ball field and next a large grey rectangular building.  On your right there will be a lighted sign "Cedar Hill Girl Scouts".  On your next left is your final destination - the large rectangular brick building iwhich is the University of Massachusetts Waltham Center.  It is set back and not lighted. The driveway and entrance is on the right.  It's all handicapped accessible.

Raw Community House Expanding!

To make the living experience more affordable, the raw community house is expanding.  Read on to review all the Raw Community house had to offer.  Learn the new structure and prices.

For Raw Foodists, community is extremely important. On Moody street, in Waltham Massachusetts, a wonderful raw living community is now forming. It is a very large house now with 11 bedrooms, 4 1/2 bathrooms, plenty of off street parking, yard, sun porch and large kitchen suitable for an awesome raw kitchen with at least 2 large refrigerators, dehydrators and a possible wheatgrass station. There is also a large room which can be used for yoga classes, gatherings, raw food trainings, guests and all kinds of great stuff.

The location is close to the commuter rail and a CSA (Community Supported Agriculture) Organic farm. Eventual commercial space is even a possibility for group creativity.

The monthly rent to all members combined is $4,000 for the rent + utilities. Expenses are divided evenly among all members. Until this amount is achieved, if all rooms are rented the rent wil be as low as $400 a month individually  plus utilities. Utilities are also evenly divided by all members with the incentive to conserve energy as a group. This makes it less expensive and very reasonable when the community house is fully occupied.

For this place,  there are many great possibilities. The house will be renovated before the community house begins and available this spring or summer. What raw dishes to serve for Easter and Passover?
 
       Jennifer Cornbleet and Rawbert Reid, outstanding chefs, have given these suggestions.
Easter Recipes
An Easter Brunch 
 
   Rawbert Reid, chef and owner of Organic Garden.  He described a sumptious raw Easter brunch that he had once served:  raw mock omelet, mock linked sausages, corn bread and a delicious smoothie  Here are two of the items on the menu.   
 
 
Cornbread created by Rawbert Reid, Organic Garden
 Makes 30 and keeps in frig for 2 months
 Sweet and chewy Can halve or quarter recipe
 
Ingredients
6 cups sprouted buckwheat (2 ½ dry)
3 cups ground golden flax
2 cups dry brazil nuts (gives the egg flavor, not soaked)
2 ½ lbs of organic corn (can use frozen)
1 Tablespoon sea salt
2 teaspoons of garlic powder or less (start with 1)
1 cup of olive oil (start with ½ cup and add more if needed)
1 cup of light agave (more or less according to taste; last ingredient)
 
Instructions:
 
1. Blend buckwheat in cuesinart and put in a big bowl.
2. Grind flax in vitamix
3. Add flax to buckwheat
4. Grind nuts in cuisinart and add to the bowl
5. Grind corn n cuisinart and add to the bowl and mix
6. Mix until well blended
7. Put little balls half size of palm and flatten so ¼ inch thick all the way around
8. Dehydrate on teflex sheets for 2 to 3 hours or whenever they can be turned over and dehydrate for 2 or 3 hours more  so moist in the middle.

Recipes for Passover

 

Dear Jewish friends,

 

Are you looking for easy, healthy, kosher meals to celebrate Passover?  I have the quick solution.

 
All of the recipes found in my book Raw Food Made Easy for 1 or 2 People are entirely kosher, for both Passover and everyday!  These recipes don't use any wheat, flour, yeast, grains, meat, or dairy products.

 

You don't have to sacrifice your favorite dishes in order to celebrate Passover or create everyday kosher meals.  Raw Food Made Easy for 1 or 2 People shows you how to make a dairy-free Ranch Dressing that you'll mistake for the real thing.  For dinner, enjoy wheat-free Zucchini Noodles with Marinara Sauce, a healthy substitute for your favorite pasta dish.  And don't forget to save the best for last. Whip up some dairy-free almond milk to enjoy with these tantalizing kosher-for-Passover desserts.

Flourless Chocolate Cake

Yield: one 5-inch cake, 4 servings

 

Equipment

Measuring cups

Measuring spoons

Food processor

Rubber spatula

Small mixing bowl

Serving plate

 

Ingredients

1 1/2 cups raw walnuts

Dash salt

10 pitted medjool dates

1/3 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract (optional)

2 teaspoons water

1/2 cup fresh raspberries, for garnish (optional)

 

Place the walnuts and salt in a food processor fitted with the S-blade and process until finely ground.  Add the dates, cocoa powder, and optional vanilla and process until the mixture begins to stick together.  Add the water and process briefly.

 

Transfer to a serving plate and form into a 5-inch round cake.  Decorate the cake and plate with fresh raspberries before serving if desired.  Covered with plastic wrap, Flourless Chocolate Cake will keep for three days in the refrigerator or two weeks in the freezer.  Bring to room temperature before serving.

 

Almond Cookies

Yield: 12 cookies, 4 servings

 

Equipment

Measuring cups

Measuring spoons

Food processor

Small mixing bowl

Rubber spatula

Serving plate

 

Ingredients

1/2 cup raw almonds

1/4 cup raw walnuts

Dash salt

1/2 cup pitted medjool dates

1/4 teaspoon almond extract

1/4 cup raisins or dried cherries, unsoaked (optional)

1/4 cup ground almonds*

 

Place the almonds, walnuts, and salt in a food processor fitted with the S-blade and process until coarsely chopped.  Add the dates and almond extract and process until the mixture begins to stick together.  Don't over process: you should still see chunks of almonds and walnuts.  Add the raisins, if desired, and pulse briefly, just to mix.  Remove from the food processor and place in a small mixing bowl.

 

Scoop about 1 tablespoon of the almond mixture into your hand and squeeze firmly until it sticks together.  Roll into a 1-inch ball and flatten slightly, to make a cookie.  Repeat until you have used up all the almond mixture.  Roll each cookie in the ground almonds, and place on a plate.  Chill at least 1 hour before serving.  Stored in a sealed container, Almond Cookies will keep for up to one month in the refrigerator or three months in the freezer.

 

*Ground Almonds

Diabetes Testimonial
 
I have been a Type 2 diabetic for 28 years. I am not and never have been overweight so that was not my problem as it is for most diabetics.   Up until recently I was taking three different kinds of medication each of which served a different function in the control of my blood sugar. 
 
Over the many years various doctors have suggested that I go on insulin but that was never an option for me--I always said I would try harder to control the numbers with my diet.  As it is, I was on minimal dosages, but at times I would get low blood sugars from either over medicating or not eating enough carbs. 
 
I was on a real roller coaster and it was not a good ride at all. The longer one has diabetes the harder it is to control and I was getting terribly frustrated and down from the continual fight. 
Recently my son brought to my attention the name of this place in Florida called Hippocrates Health Institute. 
 
He wanted me to go there to investigate how a raw foods diet could help control my diabetes; I signed up, then chickened out!  But I continued to pursue the idea of raw foods on my own and did a lot of Google research and jumped in feet first, little knowing what I was doing.
 
Somehow, in my Google research,  the name "Waltham Raw New England Community" jumped onto my screen and before I knew it, I was calling Betsy Bragg, raw food coach, and suddenly my new life began.  Betsy has encouraged me, teaching me sprouting at her home and coaching me regularly by phone and email. She also urged me to go to Hippocrates to learn more about raw foods.
 
It is now about three or four weeks later; I am doing 100% raw and I haven't  looked backwards.  Incredible as it sounds, I am off most of my of my diabetes meds (I sometimes have to take a minimal dosage of one med first thing in the morning) and low blood sugars are a horror of the past. 
 
I continue to research online, read my recipe books, talk to Betsy and yes, I am going to Hippocrates to further my education.

Testimony - Recovering from Lyme Disease

                              
   Hippocrates: My Turning Point in Recovering from Lyme Disease - By Karen Regnante


We hear about "miracles" every day it seems until we begin to doubt all the promises and cures the doctors and specialists offer us.  This is my story, of how I found my miracle at Hippocrates; of how it has brought me back to life.  For the past 7 years, I struggled with Lyme disease.  For five of them, I haven't been able to work at all.  Most of the time I was on the couch or in bed in tremendous pain, utterly exhausted, anxious and mentally so confused I couldn't even balance my checkbook.

Prior to this, I led a very active life, working as a Business Development Executive in NYC, traveling extensively, skiing, windsurfing, hiking, biking and kayaking.   My life was full spending time with family and friends and pursuing my spiritual path.   I was top in my field.

Suddenly in the fall of 2000, I developed incredible muscle pains, fevers, insomnia  The list goes on.  My primary care physician said it was stress.  Six months later after seeing many doctors, I found a great Lyme doctor who properly diagnosed my condition and gave me a lot of oral antibiotics. It only helped to a point and my search continued. I then found another wonderful Lyme doctor that gave me antibiotics intravenously.  I spent 9 months with a pic line in my arm dosing twice a day.  I also did a vitamin IV once/week.  This and more oral antibiotics lasted for another 2 years.  During this time, I worked with wonderful energy healers who gave their all to keep me going. Several of my friends were extraordinary in supporting me.  I was so grateful for all the help and love I received but I was still barely surviving. 

Finally, I had enough stamina to be up and around and financially needed to go back to work. I was lucky to get a job 3 days a week from one of my previous clients in NYC.  I was so weak and the building was so large I couldn't walk to the bathroom in one stretch.  I was living in CT and had to take a car service to work and stay in a hotel one block away for these three nights just to be able to do the job.  This lasted for a year and when I realized I didn't have the strength to work full time in NYC, I took a job locally in Stamford, CT.  I was still very weak and had an ongoing lung problem that couldn't be diagnosed.  Each day was a struggle to get out bed and go to work. 

Six months later, I was bit again and totally back in bed and out of work!!  I went back on the antibiotics.  With all the Candida that had developed, my digestive system was all out of sorts.  I ended up in the hospital having my appendix taken out.  I was so sick of needles and hospital tests, I started taking anti-anxiety drugs just to get through the tests and treatments.  Unfortunately, the drugs made me more anxious and my body couldn't stop shaking.  At this point, my spirit and life totally fell apart.

This resulted in my moving back home with my parents to the home I grew up in.  Quite an adjustment when you're 53 years old!  I stopped taking some of the drugs the doctors had given me.  I walked the beach everyday, prayed a lot and did yoga.  My Mom and Dad were great.  In the spring, I went to a wonderful 4 day course and became a raw food chef.  I believed in the concept but I found that after 3 months of being raw, I couldn't stay on this version of a raw diet. 

Shortly thereafter, I heard Brian Clement, Director of Hippocrates Health Institute, speak and thought the Hippocrates lifestyle made great sense.  For years I had wanted to go to Hippocrates, but many of the healers I had worked with told me a raw diet would be too much for my sensitive system.  A few months later, I had a phone consult with Brian and it was one of the best consults I had ever had (and I have had many).  Brian approached my challenge from all aspects- physically, mentally, emotionally and spiritually. He gave me a list of things to do including eating raw with no fruit, continuing to get off the medication and living life with more love and passion.  It seemed impossible to do what he asked me but somehow I did it.  

Seven months later, I decided to go to Hippocrates and stayed a month.  Within a few days, I knew I had found my answer.   I loved the food and could stay on the diet; the oxygen treatments made a huge difference; I got off more medication (yes, I was on a lot!) and over the month I changed many of my perspectives and attitudes about life. I went through a tremendous detox and within 2 weeks my blood had changed dramatically. The people I met were so heartfelt and I knew several of them would become lifelong friends.

I left Hippocrates HEALTHY!  I came home and started traveling and doing activities I hadn't been able to do in seven years! I am getting my life back.  It's been several months and I'm now finding the diet is EASY.  My body seems to crave this kind of food and when I eat something else, I notice a huge difference and go back immediately to what I know is best for me.  For the first time in my life, I have the faith and courage to live my dreams. 

 

I'm much more comfortable with stepping boldly into the unknown, letting the mystery of life unfold and handling whatever comes up along the way.   This is a MIRACLE and I am ever so grateful to Brian, Anna Marie and all the staff and friends I made while I was there (as well as all my other friends and family I so dearly cherish).  I highly recommend it to anyone and urge people with Lyme disease or an immune deficiency to come!  There are no limits to what's possible for your life, especially once you've been to Hippocrates.  Karen Regnante

This may be worse than we thought

Reusable plastic bottles leach BPA at room temperature
A lot of people have those reusable polycarbonate water bottles; you can't go to a college campus these days without seeing students carrying these multi-hued bottles around as they make their way through classes.
Well, a couple weeks back researchers at the University of Cincinnati released a startling new study showing that many of these bottles leach bisphenol A (BPA), an endocrine disruptor, into water that is being stored within the container.

These researchers found that these plastic bottles leach BPA into room-temperature water. That's bad enough, but if boiling water is put into these bottles, the rate of BPA leaching goes up by quite a bit.

All the evidence out there tells us that this stuff is not good for you; EWG tested canned foods recently, which are lined with the same BPA plastic as these water bottles are made from. As it turns out, foods from metal cans contain significantly more of the chemical than water from bottles.

We applaud the use of reusable water bottles to cut down on the environmental impact of bottled water, but with this new research, metal water bottles are looking better and better. Some have a plastic lining, but Klean Kanteen makes metal water bottles that are BPA free.

Parents who are concerned about baby's plastic bottles should know that although this study didn't look at baby bottles, it studied the same type of plastic. At this point, there's enough research out there to justify the added expense of buying BPA-free or glass bottles. But an even more critical step would be to substitute powdered formula for liquid formula if your baby isn't drinking breast milk. Babies don't need to be getting extra endocrine disruptors in any form.

Change in Date for Cape Cod Potluck

Hi All,

Because people are looking for better choices around foods, there will be monthly potlucks that are open to the wider community.    Generally, the potluck will be on the 4th Sunday of the month, but because of Easter, it is moved up this month to a Friday.

One does not need to be a vegetarian, etc. to come.

You are invited to bring an organic, (if possible) unprocessed, non-animal based ready- to-serve dish for 4-6 people. 

Please bring serving utensils and a recipe card
to display next to your dish.

Directions: From Sagamore Bridge onto Route 6. Take Exit 3 and a left onto Quaker Meeting House Road. Drive about 1 mile. Turn right (east) onto Route 6A and travel 2 miles.  (Pass Premier Jeep and over a small bridge.  Turn left onto Torrey Road. (Next to Riverview School.  Drive 1/8 mile to Stop Sign. Turn left onto Linden Road and take the first right onto Goose Point Lane.  15 Goose Point Lane is the second house (Colonial)  on the left.  (Street names are on large rocks.)                         
From the east, take Route 6 to Exit 6, turn right on Route 132. Drive 1mile. Turn left on Route 6A and drive for about  5 miles until Torrey Road.  (Next to Riverview School). Follow directions above.
