If you are able to stay we will watch a health inspiring film at 7:45ish. Come and enjoy raw and living foods prepared with love that provide all the raw materials our bodies need to cleanse our cells and blood along with an abundance of life energy which removes blockages and restores balance. Through the experience of eating this incredible cuisine as well as watching DVD's and discussion, sharing recipes etc. we will learn how to prevent and overcome health challenges.
Some pot-luck guidelines: Not intended to stress you out but to help guide you towards optimum health!!
Please bring enough food to share that would serve approximately 8 -10 people. Pot-lucks will be either a vegetable or fruit meal but not both together. Call far enough in advance to inquire as to which mode we are in so you can plan accordingly.
If you are not familiar with live foods but want to check it out here are some easy tips for what to bring.
If you can get organic food that is always best!
1) an all raw veggie salad or all raw fruit salad,
2)sprouts
3)nuts or seeds that have been soaked in water for a minimum of 5 hours
4)an assortment of raw vegetable sticks or fruits,
5)raw vegetable sticks with raw nut or seed butter,
6)fresh juice-carrot/celery/cucumber or fruit on fruit night
7) whole foods has live sauerkraut sometimes in the refrigerated section near the tofu and miso,
8)whole foods sells packages of seaweed, dulse, arame and raw nori, if you happen to have that are great!

Greetings and raw salutations!
Hoping you are well and happy! I can't believe that February is almost over. It's just getting more and more fun here. Are you enjoying the perpetual snow storm? I think this is the most snow we've experienced so far since moving to VT almost 5 years ago. Even though it's all white and snowy outside, I have visions of spring: mud. (I'm smiling) And I'm looking forward to it! I'm also looking forward to changing the salad options at the stores as we get into more local produce being available. Anyway, we've got a lot planned for the months ahead but let's just do one month at a time, shall we?

Here's the latest and greatest for Vermont Fiddle Heads - an overview
for the month of March:
1. I've updated a few pages on the website. Still much more to do though. I've included a sweet and savory page so that you can see what is available in stores and individuals. I also need to get pictures up of the eggless egg salad and the not tuna (and the chilli and the zucchini pasta) - it's all good. Thankfully he has hired a friend to help him! yippeeeeee!! Savory and Sweet Treats: http://www.vt-fiddle.com/rawfood/my_raw_food_treats.php - pictures of the ginger crackers, super orange fudge, super mint fudge, spice cookies and the god and goddess butters. These are available in bulk sizes as well. Just ask. I also just came up with a new sweetie cracker that is VERY tasty. Made with sprouted buckwheat. We're offering a "no excuses" approach to adding more raw food into your diet.
2. We've been selling really well at City Market, Sweet Clover Market and Hunger Mountain Coop and am going to be getting into other stores. The God and Goddess Butter will be at Hunger Mountain Coop starting this next week. I'm making deliveries weekly and am looking for help in making deliveries. If you are interested, please email me or call me at 223-2111. I'm also going to need some help one day a week to make and package food. Please let me know if you are interested. Thanks so much.
3. Our potluck dates have moved to the 3rd Thursday of the month from 6-8 pm. We're rotating houses and locations. Last month we were in Richmond and this month we'll be in Montpelier. 4. The raw food workshops at Hunger Mountain Coop are super fun and I've been working on a few developments there. More to follow in a future newsletter. The next workshop is Tuesday, March 11 where we'll be doing easy, hearty raw breakfast recipes. 5. I'm planning a sprouting/dehydrating class for the last weekend of March. It is a 2 day class that will cover the more complex recipes so if you are looking to expand your knowledge and confidence in making raw food, please contact me for more details.
6. I'm expecting a delivery soon of cacao products (nibs, powder and butter). I have hemp protein powder here, bee pollen and nuts and seeds in bulk if you need anything that you might not find elsewhere. I have good pricing. Just tell me what you need and I'll hook you up. You know, it's good to list this stuff out. I can see for myself what we're accomplishing.

Today's tip for the day comes to you from Sheila - Thanks Sheila! "I have been sprouting wheat grass seeds and then spreading them out in a round clay dish and letting it grow into wheatgrass ( rinse twice a day and drain the water). Then when it gets high enough I cut it and chew it to get the sweet juice out of it. I can usually get 2-3 cuttings out of each batch. So instead of gum, chew your wheatgrass!!!"

"California Dreamin" Wheatgrass Smoothie
Makes 32 delicious ounces.
Ingredients * 1 cups Water * 2 servings Wheatgrass Juice, shots, rounds or cubes * 1 teaspoon Raw Agave Nectar * 1 teaspoon Pure Maple Syrup * 1 cup Baby Spinach * cup Kale, deveined * 1 Orange * 2 Bananas * 1 cup Frozen Peaches
Preparation Add all ingredients to blender and blend on high for 30 seconds or more. If desired, garnish with edible flowers for a little pizazz.

Unfortunately, the March potluck will be canceled. We need to reschedule due to a conflict and the next weekend available isn't until April 26th. The tropical potluck will be in April. So, I've held that saturday for us, and May will be on Saturday the 31st, with an edible weed walk and a focus on greens. If anyone would like to hold an informal gathering, or knows of a great spot to meet from now until then, please contact me, the monthly support has been so wonderful.

How Much?: A suggested donation of $2 per person as we do have to pay for the church, and provide some supplies for the potluck. In lieu of the donation, the church has agreed to accept non-perishable donations for the food pantry (which provides food for local families) or for the personal needs closet.

We can bring in the warmer weather with friendly faces and food with a tropical flair! At this potluck learn the buzz about young (thai) coconuts, the difference between young and mature coconuts, what to do with them and how to easily open one. We are encouraging people to bring your favorite tropical raw food dish, as simple or complex as that may be. Please bring a dish that your kids or grandkids would like, that is raw, organic, unprocessed and non-animal based and will feed 6-8 people.
Please bring a recipe card, some people have food restrictions, and eventually I will add them to the website. If you don't have a clue as to what to bring, contact me and I would be happy to share some simple ideas! |

Hello from Maine!
In honor of Spring Cleansing I'd like to submit my favorite Green Juice and Green Soup Recipes.
Green Juice:
Juice any of the following in any combination you wish: Kale, Cucumber, Celery, Spinach, Lemon, Ginger, Garlic. Serve fresh or chilled for a delightful pickup! This juice is very cleansing and is great for rejuvenating your spirit!
Simple Soup:
In the blender: 1 avocado 1 garlic clove 1 lemon, juiced several handfuls spinach Himalayan ctystal salt, Nama shoyu,
or Bragg's Aminos to taste enough water to blend
Yummy and nourishing! And easy to digest when your digestive system needs a break.
Pesto Stuffed Mushrooms:
And here's a recipe to make when you want to impress your family or cooked food friends. Everybody's Favorite Pesto Stuffed Mushrooms I first had raw stuffed mushrooms at raw chef Chad Sarno's, class. I've made these a little easier (for me), but I credit Chad with all the ideas!
20 baby bella, crimini mushrooms 1/4 cup olive oil 3 Tablespoons Nama Shoyu 2 packed cups fresh basil 6-10 cloves garlic 1/4 cup olive oil 1 cup walnuts 3 Tablespoons hemp seeds
Himalayan salt and chipolte pepper to taste
- Wash and de-stem mushrooms, fresh baby bellas are the best.
- Put mushrooms, oil and Shoyu in covered container to marinate.
- Shake the marinate with the mushrooms over the next hour or so.
- Then make the pesto.
- Put the rest of the ingredients in the food processor until well blended.
- Take the mushrooms out of the marinate (which can be used as a base for salad dressing, just add lemon juice). They should be soft.
- Stuff each mushroom with about 1 Tablespoon pesto. Place a slice of cherry tomato on each stuffed mushroom.
- Place in dehydrator for a few hours or until nice and warm.
Yum! Even my cooked-food lover son LOVES these mysterious mushrooms. He usually doesn't like mushrooms or raw food.

Alissa Cohen's new raw vegan restaurant is opening February 13th and we have a reservation for Sunday, March 2nd at 5 PM. Grezzo can seat 29 including 3 at the bar so let's see if we can fill it.
Several summers ago Alissa had a Raw Boston Harbor Cruise that was wonderful. There is no reason to expect Alissa's restaurant to be any less spectacular.
Grezzo Restaurant is "...committed to bringing you flawlessly fresh food with its lifeforce still intact. The concept is green, organic and locally-grown vegan, raw food served in an upscale style and setting." The menu will change daily.

************************************ Here is a delicate, explosively flavorful soup were served this weekend with a gourmet 5-course Italian Themed Dinner ~
Fresh Italian Herb Tomato Soup w/Portobello & Bell Pepper Garnish:
2Qt 1 Qt 8 4 cup Fresh tomato chopped 2 1 cup Pure Water 4 2 Tbl Olive Oil 3 1 1/2 Tbl Fresh Lemon Juice 2 1 cloves med Garlic 1 1/2 3/4 Tbl Ginger 2 1 tsp Sea salt or herbamare 2/3 1/3 cup Parsley fresh -at least one of these 2 2/3 1/3 cup Cilantro fresh -at least one of these 2 2/3 1/3 cup Basil fresh 3 1 1/2 Tbl Oregano fresh -at least one of these 2 3 1 1/2 Tbl Thyme fresh -at least one of these 2
* * * Blend ˝ of the tomato with the water, garlic, ginger and seasonings!!!! Then add remaining tomato & herbs and pulse a little more leaving chunky.
Portabella & Bell Pepper Garnish: Marinate uniform sized diced red/yellow pepper & portabella in a few splashes of nama shoyu/tamari & olive oil and top soup just before serving!

1 1/2 cup Almonds (blanched or soaked 24 hours and skinned, possible substitution Brazil Nut) 1/4 cup Pine Nut 1/2 cup Soaked Sunflower Seed 1/2 cup Fresh Spinach (pressed into measuring cup) 1/8 cup Olive Oil 1/4 tsp oregano 1/2 tsp black pepper 3/8 tsp sea salt or herbamare 1/4 tsp garlic powder 1/8 tsp optional cayenne or crushed chilli flake
Blend fairly smooth in cusinart, form into small football like shapes, serve with red sauce

RECIPES OF THE WEEK - Great for a holiday party! Almond Pecan & Rosemary Paté
makes approx. 16 oz
Soaked Raw Almonds 1/2 cup Raw Pecan 1/2 cup Soaked Sunflower Seeds 1 cup Soft Pitted Date (or Date Roll) 1/8 cup Medium Apple (whole, core removed) 1/4 each Fresh Rosemary (de-stemmed 6 to 8" stick) 1 Stick (approx.1/2 Tbl) Sea Salt 1/2 tsp (or to taste) Pure Water 1/2 cup (do not add all of the water unless needed, see below) Soak the Almonds and Sunflower in Pure Water for 6 to 12 hours (or overnight), in a glass jar in the refrigerator If dates are hard, soak 30 minutes to an hour in pure water (use this water as your recipe water) Water; you may not need it all, depending on how long things are soaked, start with half the amount. Blend all the ingredients Creamy/'Fluffy' in a food processor but DO NOT over blend. Blend to the point when there are no chunks of Nuts, Rosemary, or Apple skin upon taste test. For a party, double this recipe and serve with crackers or on endive leaf , radicchio or a thinly sliced raw root vegetable chip (i.e. Daikon, Zucchini, Carrot, Jicama) Also taste great in a wrap or on a salad.
Apple Crisp
1 to 2 medium apples chopped 1/4 to 1/2 cup chopped walnut Optional 1 Tbls to 1/4 cup vegan gluten free pancake mix OR whole wheat flour 2 Tbl Maple Syrup 1/2 to 1 tsp Cinnamon
Stir in bowl then lightly cook on non-stick pan for 30 seconds to 1 minute. Flip once and cook other side. Serve. Sprinkle sugar in the raw on top if desired.
Blue Berry Truffles
2 cups of walnuts 1 cup of pitted dates 1 cup of frozen blueberries 1/4 cup of raw carob Crushed walnut to roll the truffles in
Blend the walnuts, dates, raw carob and blue berries in a food processor until the mixture is smooth. Shape the mixture into small balls and roll them in crushed walnut. Makes 10 truffles.

Did you know about PLU? Every piece of produce has a PLU code assigned to it. Price Look-Up codes, commonly called PLU codes, PLU numbers or PLUs.
They are identification numbers affixed to produce and other products in grocery stores and supermarkets to make check-out and inventory control easier, faster, and more accurate.
The code is a four-digit number, primarily in the 3000-4999 range, identifying the type of bulk produce, usually including the variety.
Organic: Organic produce is denoted by a five-digit number whose first digit is 9 (e.g. 94011 for organic bananas); an 8 prefix indicates genetically modified food. The codes have been in use since 1990. Currently, there are over 1300 universal PLU codes assigned.
GMO: You an tell if an item were genetically modified. Genetically engineered (GM) items have a five-numeral PLU prefaced by the number 8.
For example,
A conventionally grown banana would be:

Going to this link anyone on the internet can see our recipes and articles. That's the goal. For people to post, they need to register, and only once.

| Maintaining Healthy Lifestyle after Catastrophe |

If you have been a raw fooder for a length of time, you have probably experienced remarkable health benefits. You most likely are confident that a raw food diet would help you heal faster and more thoroughly, perhaps even save your life in the event of a serious accident or injury.
While western medicine is effective in the emergency treatment of physical trauma, many of us would agree, western medicine is less effective in long term healing. If you are unconscious or heavily sedated in a hospital, who is going to make sure you get the nutrition and care you need? The hospital staff would be, at least, ignorant at worst, hostile to alternative nutrition. Many of us lack the support of a life partner or family in the changes we have made in our diet and they may be unavailable to advocate for your dietary needs.
A group of us will be having a series of informal discussions on these issues, Our goal is to form a core of committed raw fooders to address these issues and to set up a system of support (for example arranging for meals, becoming a healthcare proxy, educating healthcare providers and family) for ourselves in the event of catastrophic injury.
