Ever wonder why we call it raw and living food? Well, look at the photo to the right, these are the awesome Goji Berries of Asia.  They actually have 19 amino acids including all the essentials, as well as anti-oxidents and 5 times the vitamin c as oranges.
 
Anyone notice the photo at the top of the newsletter this month? It is kirlian photography of goji berries. Looks pretty good to me. This is just one example of so many healthy foods like this that nature that has given us. Still, kale is my favoritey but goji berries are great.
 
Anyway, Raw foods in New England is booming and there are more and more   activities, events and potlucks. There are 2 new raw restaurants opening:

"We all know that the raw/living food diet will make us feel and look younger, improve our health and help us feel amazing! But the trick is staying on the raw diet. My products make it fun and easy for you and your family to stay raw and happy.
First and most importantly I love creating raw delicious, health-giving food, so my love goes into the food. Also, I search out the best raw and organic supplies looking for the best tasting, freshest and highest quality ingredients. All of my products are made in my licensed Maine kitchen in my home where I live with my raw foodist husband, Denny, and my youngest child, Jonas, 17 years old and our 4 cats.
 
Our 1880's Craftsman bungalow in York, Maine overlooks the York River, which is a sight to behold. My store is open all day every Wednesday, if you would like to come by for some Happy tea and raw chocolate. You can also call for an appointment at another time or order products from my website by calling 207-409-0899. We usually ship out same day. Below is one of my favorite recipes:


Collard Green Roll-ups


My absolutely favorite raw dish, super simple!
Ingredients:
Organic Collard greens
hemp seed butter*
1-2 avocados
1--2 tomatoes
1-2 red bell peppers
1 red onion
radish greens (sprouts)
fenugreek sprouts
himalayan salt
black pitted raw botija olives (optional)

*to make hemp seed butter;
place 1 cup hemp seeds in VitaMix with 1/4 cup hemp oil - blend until creamy

Recipe Directions:
De-stem collard greens by cutting down each side of leaf; Slice avocado in eighths; slice tomato in sem-circles; slice red peppers, red onions in thin semi-circles; place leaf with lighter side up on cutting board; smear a knife full of hemp butter across middle of leaf, then layer with one slice avocado, red pepper, and tomato, some onions, sprouts, olive slices and a sprinkiling of salt; roll up the leaf, pressing firmly enough to keep together. These are light and delicious. One serving is about 3-4 roll-ups. Good with raw crackers or soup.

If you are able to stay we will watch a health inspiring film at 7:45ish. Come and enjoy raw and living foods prepared with love that provide all the raw  materials our bodies need to cleanse our cells and blood along with an abundance of life energy which removes blockages and restores balance. Through the experience of eating this incredible cuisine as well as watching DVD's and discussion, sharing recipes etc. we will learn how to prevent and overcome health challenges. 
 
Some pot-luck guidelines: Not intended to stress you out but to help guide you towards optimum health!!
 
Please bring enough food to share that would serve approximately 8 -10 people. Pot-lucks will be either a vegetable or fruit meal but not both together. Call far enough in advance to inquire as to which mode we are in so you can plan accordingly.
 
If you are not familiar with live foods but want to check it out here are some easy tips for what to bring.
 
If you can get organic food that is always best!
 
1) an all raw veggie salad or all raw fruit salad,
2)sprouts
3)nuts or seeds that have been soaked in water for a minimum of 5  hours
4)an assortment of raw vegetable sticks or fruits,
5)raw vegetable sticks with raw nut or seed butter,
6)fresh juice-carrot/celery/cucumber or fruit on fruit night
7) whole foods has live  sauerkraut sometimes in the refrigerated section near the tofu and miso, 
8)whole foods sells packages of seaweed, dulse, arame and raw nori, if you  happen to have that are great!

The American Legion will be on your right.  The Shell station will be on the opposite corner.  There is no street sign for Beaver Street.  Turn left and set your odometer.to go three tenths of a mile.  On your left you wil pass a ball field and next a large grey rectangular building.  On your right there will be a lighted sign "Cedar Hill Girl Scouts".  On your next left is your final destination - the large rectangular brick building iwhich is the University of Massachusetts Waltham Center.  It is set back and not lighted. The driveway and entrance is on the right.  It's all handicpped accessible.

What:  "The Formula For Health" Talk and Book Signing Paul Nison, acclaimed author and Raw Food Chef. from Florida.  Are you confused about health?  Do you want more energy?  If you said Yes, this lecture is for you!  The DVD to be shown at 5:30 PM will be On The Road with Paul Nison.  In this DVD, follow Paul as he goes out into the world and compares the raw food diet to the cooked food diet.  Paul's insights regarding his learnig from long-term raw fooders combined with funny clips of Paul having fun with unhealthy workers in fast food restaurants. Let's explore the wonderful world of raw chocolate together!  What better way than with a Chocolate party!  We are encouraging people to bring a raw chocolate or carob dish, in addition to or in place of your favorite raw food dish.  Please be sure that it is a dish that your kids or grandkids would like, that is raw, organic, unprocessed and non-animal based and will feed 6-8 people.
 
Please bring a recipe card, some people have food restrictions, and eventually I will add them to the website.  If you don't have a clue as to what to bring, contact me and I would be happy to share some simple ideas! 
 

What to bring besides food:
Your favorite raw food book(s) that you think people might enjoy  taking a peek at while at the potluck.  I'll have a table set up with my favories for anyone to look at.
 

A plate or bowl, silverware, and/or cloth napkin to avoid disposables
A serving utensil for your dish
A Good attitude and an open palate!
If you are musical, instruments are encouraged!
 
Any friends that are interested in learning more about raw. A donation for the church for sharing their space and for supplies for the potluck. Please pass this invite onto anyone who may appreciate it.  We would like to expand our community to all interested. 
 
If you have any ideas that would help make this a more festive chocolate party, suggestions are very welcome!

THE RAW HAPS FOR THE COMING WEEKS...

· Wednesday, February 6th from 11:45 - 12:30 is a raw food workshop at West Lebanon Congregational Church in West Lebanon, NH. I'm totally psyched for this as it is for a homeschooling group of families. Kid friendly recipes are what's on the menu! I'll keep you posted as to how these go. 

· Tuesday, February 12th from 6:30 - 7:30 pm is a heart healthy raw food workshop at Hunger Mountain Coop in Montpelier. The recipe we'll be doing is -GET THIS- Chocolate Chip MIlkshake! · I've been getting calls and emails about classes at the yellow house. Well, until we get this house construction done, I'm not able to have the Level 1 or Level 2 classes at the house. OK AND NOW FOR THAT RECIPE...

Holy cow, this looks good! Maybe it's because we've had a warm spell this week, I'm looking at the raw ice cream... (as opposed to the snot-freezing weather of last week.)

Cacao Pistachio Florentine & Mint Ice Cream Sandwich

Ice Cream
2c cashews
1/2c coconut butter/oil
1/4c agave nectar
1 vanilla pod
1c almond milk*
1t lemon juice
1/2c tightly-packed fresh mint leaves

- Scrape the inside of the vanilla pod, and discard the outer part. Alternatively, you can leave the outer part in water to infuse, making 'vanilla water'.
- Blend all ingredients in a high-speed blender until smooth.
- Pour mixture into 4, round, equal-sized moulds and place in the freezer to set. I used metal rings with plastic film stretched over the base of them.

* The almond milk you need for this recipe can be be made by blending 1c soaked almonds in 2c of pure water. You should then strain the mixture through a nut milk bag, or a sieve if you don't have a nut milk bag. 

Florentines
1/2c cashews
3T cacao powder
1/4c melted cacao butter
1/2t lemon juice
3T agave nectar
1/4c almond milk
1/4c cacao nibs
1/2c pistachio nuts, roughly chopped

- Blend all ingredients, with the exception of the cacao nibs and pistachio nuts, in a high speed blender until smooth.
- Transfer mixture to a bowl and stir in the cacao nibs and pistachios.
- Use a spoon to form 8 Florentines (circles as big as the ice cream moulds you used) on some non-stick paper and place in the freezer to set. If you haven't got enough room in your freezer to lay them out flat, you can put them in the fridge first, until they are firm enough to stack up in the freezer.

Before Serving
- Remove the ice cream and Florentines from the freezer 1 - 2 hours before serving.
- Assemble the sandwiches with one Florentine on the bottom, and one on the top, of the ice cream that you removed from the moulds.
- Decorate the outside of the mint ice cream with some more chopped pistachio nuts.

Are you interested in growing a pot of tomatoes on the deck or harvesting produce to can or freeze? In either case, or anything in between, come and join us.
 
Develop your growing skills and decrease your reliance on commercial fertilizers and pesticides. Raise delicious healthy veggies and protect the environment at the same time!
 
Session One (Jan 31): Planning - winter is the best time to plan your growing season. We will cover the garden locations, space needed, what to grow, varieties to plant, and other issues to ensure the best outcome for your efforts.
 
Session Two (May 3): Hands-On - we will cover soil preparation and amendments, planting techniques, transplanting, companion planting, and any other questions you have as we work. We'll include Drumlin raised seedlings to get you started in your own garden.Open to everyone age 16 or older. Pre-registration is required.

Raw Community House Forming
Raw Living Community Now Forming in Waltham
 
For Raw Foodists, community is extremely important. On Moody street, in Waltham Massachusetts, a wonderful raw living community is now forming. It is a very large house with 7-9 bedrooms, 3 1/2 bathrooms, plenty of off street parking, yard, sun porch and large kitchen suitable for an awesome raw kitchen with at least 2 large refrigerators, dehydrators and a possible wheatgrass station. There is also a large room which can be used for yoga classes, gatherings, raw food trainings, guests and all kinds of great stuff.

The location is close to the commuter rail and a CSA (Community Supported Agriculture) Organic farm. Eventual commercial space is even a possibility for group creativity.

The monthly rent to all members combined is $4,000 for the rent + utilities. Expenses are divided evenly among all members. Until this amount is achieved, the rent is $600 individually  plus utilities. Utilities are also evenly divided by all members with the incentive to conserve energy as a group. This makes it less expensive and very reasonable when the community house is fully occupied.

For this place,  there are many great possibilities. The house will be renovated before the community house begins and available this spring or summer. Maintaining Healthy Lifestyle after Catastrophe
 
If you have been a raw fooder for a length of time, you have probably experienced remarkable health benefits. You most likely are confident that a raw food diet would help you heal faster and more thoroughly, perhaps even save your life in the event of a serious accident or injury.
 
While western medicine is effective in the emergency treatment of physical trauma, many of us would agree, western medicine is less effective in long term healing. If you are unconscious or heavily sedated in a hospital, who is going to make sure you get the nutrition and care you need? The hospital staff would be, at least, ignorant at worst, hostile to alternative nutrition. Many of us lack the support of a life partner or family in the changes we have made in our diet and they may be unavailable to advocate for your dietary needs.
 
A group of us will be having a series of informal discussions on these issues, Our goal is to form a core of committed raw fooders to address these issues and to set up a system of support (for example arranging for meals, becoming a healthcare proxy, educating healthcare providers and family) for ourselves in the event of catastrophic injury.
