Blueberries




The blueberries are finally here and we've been picking loads! It's a great year for this luscious fruit that also packed with nutrients--vitamin C, fiber and anti-oxidants.

Maria ran our favorite fruit crisp recipe on our Facebook page--it's great with blueberries. Here's another good, simple recipe for hot summer days.

Blueberry Sorbet

1/2 cup sugar
1 cup water
3 cups blueberries
1 tablespoon fresh lemon juice

Bring sugar and water to a boil in a small saucepan, stirring until sugar is dissolved, then remove from heat.

Puree berries and lemon juice with a blender until smooth. (If desired, force through a fine sieve into a bowl to remove seeds.) Stir in sugar syrup. Chill until cold.

Freeze in an ice-cream maker following directions for the maker.

Variations:
  • great with raspberries, blackberries, etc.
  • freeze the mixture in popsicle molds or paper cups or recycled juice boxes with sticks
  • add a few tablespoons of Samubuca or other liquor
  • steep fresh herbs in the hot sugar syrup in the first step, remove before mixing with berries (lavender or lemon verbena are nice).

Sweet Corn!




Who doesn't like sweet corn? Even though hybrid varieties are still tasty after several days in the fridge, there's nothing like sweet corn fresh from the field. At Kelder's we grow a special variety that is so tender, it must be hand-picked--other farms that mechanically harvest don't grow it. You've got to try it!

Although we take corn for granted, the origins of sweet corn are mysterious. The oldest cultivated corn yet found are tiny ears from a cave in Mexico, left behind by the Maya at about 6000 B.C.E. But the link to a wild ancestor has yet to be identified.

And what's the oldest technique for cooking corn? It's thought that the first way corn was cooked was by tossing it in a fire and letting it pop out!

Blueberries were not domesticated until the 1920s. Wild low-bush blueberries grow in abundance in the Shawangunk Mountains and 100 years ago were harvested commercially by children.
