Asparagus and Robin

Fresh asparagus just picked by Robin Baker.

Asparagus

Asparagus is up! And the early asparagus is the sweetest! Here's Wayne Kelder's favorite no-fuss asparagus recipe.

Grilled Asparagus

  • One bunch of asparagus (fatties are best for grilling)
  • Vegetable or olive oil
  • Salt

Break the ends off the asparagus spears--they will naturally snap where the skin becomes tough. Rub them with a little oil and salt them.

Grill on medium-hot, turning until lightly browned.

Eat with your fingers. Leftovers, if you ever have any, are good on sandwiches or sliced into salads.

Bonus points: Wayne says that Liz peels the tough ends or uses them for soup.

Youth Expo
Archery, trout fishing, bird-house building, b-b gun shooting are some of the things that kids will learn about at the June 4th Youth Expo, sponsored by the Rondout Valley Rod & Gun Club.

Natalie Buley, organizer of the Youth Expo, explained that the Rod & Gun Club is "like boy scouts and girl scouts combined," and said that the focus in the club is on enjoying nature and learning about foraging for wild food. The Youth Expo is "a way to introduce kids to fun and interesting nature activities that aren't video games."

Natalie said they'd be happy to demonstrate for interested adults, too.

Rhubarb
Oh boy! One of the weirdest "fruits" of the farm has just come into season. Just the opposite of fruits that masquerade as vegetables (tomatoes and peppers, for instance), rhubarb is a tart vegetable that's always eaten like a cooked fruit. The pink stems are the part that is eaten, and it's delicious made into a fruit crisp or a custard pie. Plus it's got lots of vitamin C and calcium.

Kelder's rhubarb comes from beds that were planted by our ancestors over 100 years ago! You can find some fantastic rhubarb recipes here.
