why did God tell us to eat it? |
Going Against The Grain |
Wheat is referred to 46 times in the Bible. It was the main staple of the Israelite diet. God said that it was good for His people to eat it. In fact, the Feast of Shavuot (Pentecost) is a celebration of the wheat harvest. The Feast of First Fruits is a celebration of the barley harvest.
Today, we know that both of theses grains, wheat and barley, contain high levels of gluten. Gluten can cause tremendous inflammatory responses in the lining of the small intestine resulting in a rippling effect of degeneration throughout the body. Celiac disease is an extreme case of gluten sensitivity. It is an autoimmune disease that causes the immune system to get so ramped up that it attacks and destroys its own cells, particularly the lining of the small intestine. After a while, the lining of the small intestine wears out and results in decreased absorption of nutrients. That's why people with celiac disease have many symptoms related to nutritional deficiencies. Due to the high levels of gluten in wheat, and due to the increased amounts of grains that people are consuming, the number of people effected by celiac disease has escalated significantly.
According to researchers at the University of Chicago Celiac Disease Center, celiac disease is four times as common as it was 50 years ago. The center's director, Stefano Guandalin, MD, further reports that only about 5% of people with celiac disease know that they have it.
Why does God want us to eat wheat and even celebrate the harvesting of it, when it is causing so much damage to our bodies? The answer is that the wheat they consumed during biblical times is different than what we consume today. The wheat that we eat is hybridized. It's a mixture of wheat with several different types of weeds or grasses. The hybridization process occurred via natural means (wind currents) and via man-made procedures (genetic engineering). This hybridized wheat is hardier than the ancestral form, thus enabling it to withstand colder temperatures, but it contains a much higher amount of gluten. Current wheat consists of 8-15% gluten. Biblical wheat consisted of 1-2% gluten. Obviously, the lower the gluten content the healthier it is. The other gluten grains, such as barley, spelt, oats, rye and kamut also have been hybridized and contain much higher levels of gluten than biblical times.
Healthier, gluten-free grains include millet, rice, quinoa, amaranth, and buckwheat. Certain health food stores sell gluten-free oats.
Statistics show that inflammation is the leading cause of almost all degenerative diseases today. That includes, cardiovascular disease, cancer, diabetes, Alzheimer's, Parkinson's, dementia, rheumatoid arthiritis, autism, colitis, ADD, etc. Diet is one of the prime sources of inflammation, of which gluten is a major contributor.
