Hello and Welcome!
Winter has
arrived here on the east coast of The America's and in some areas the snow has
already started to fall. For many
this means the start of the Holiday Season.
I am really
excited about the new winter class about to begin on Monday January 11th. The class is going to consist of both
full-time as well as part-time students taking individual classes. Individual classes
are such a great way to pursue continued education and either learn new skills
or brush up on old ones. For those
students who participate part-time, their course credits will be kept on file
and upon completion of all courses they will have full certification from our certified
Academy. For those interested in
participating in the winter session, there are still a few spots available
either for full or part-time.
The past
year I have been fortunate to travel through Asia, Europe and North America for
training. These trips have provided
me some incredible memories and opportunities to make new friends and to get reacquainted
with old friends.
No matter
what holiday you celebrate, I hope that this season will bring you close to
your family and friends. Thank you

January Classes at the Academy
Our next
full 8-week session for Butlers and Household Managers commences on January 11,
2010 at the downtown Toronto Academy.
We still have some seats available so please contact us right away to
confirm your spot. Additional
sessions will start on April 12th and again on September 13th.
Individual
classes are also being offered at a cost of $250 per day. If you are looking

Brian Betsworth is currently employed with a wonderful family as a house manager in their brand new custom home on the north shore of Lake Ontario, just outside Toronto, Canada.
After graduating the Academy in July 2009, Brian spent a brief stint at Toronto's prestigious Granite Club in a role as Summer Guest Services Attendant. "Granite was an amazing place to get started in service, the Club is full of wonderful people and families," said Brian.
Brian's current house management duties include valeting, vehicle maintenance, daily housekeeping, technical support, wardrobe management, and his self-avowed love of cooking. "My training under Chef Matt Binkley, in preparing mise-en-place; combined with Mssrs. Robertson and MacPherson's table service etiquette and teachings; finishing up with Miss Bonnie Aprile's cleaning techniques using natural ingredients; these learnings and skills are put into use every day, every time I prepare, serve, and clean up a meal," says Brian.
"I have to say, though, with unequivocal appreciation, the post-graduate support and encouragement from Miss Depesthy and Mr Hepworth in approaching and landing this placement is the real success story. Without them, I wouldn't be where I am, no matter how passionate and enthusiastic I was. Thank you!".
Brian plans to continue this role long term, as well as branching out into concierge service with Toronto's Air Canada Centre VIP Suites; and is in talks with Domestic Estate Managers Association (DEMA) to form a Canadian chapter. "I couldn't be happier, and I'm thrilled with what the future has in store," says Brian.

Heading Back to India
I am
honoured to have been invited back to India to assist our client Taj Hotels
with staff training for one of their new palace hotels. India is an exciting and growing market
with a special appreciation of luxury service.
India will
be the host country for the 2010 Commonwealth Games and many hotels have been
built to support the thousands of visitors arriving for the October 2010 events.
More and
more hotel groups are adding properties such as Starwood.
On November
30, we had the pleasure of attending a reception hosted by the Ontario Chamber
of Commerce for the Premier of Ontario who was about to embark on a trade
mission to India. We were able to meet and form new relationships with key members
of the Indo-Canada business community all working to increase trade between the
two countries.

As hotels seek to differentiate themselves in the marketplace many
of them are turning towards improving standards of service as a key
differentiator. However, service training, particularly with regards to soft
skills, can be tricky.

have a significant gap in their training programs in the soft skills area. Luxury is experiential and it's soft skills that are so essential in creating those much sought after special experiences for guests.
In response, we have developed a
training program designed specifically to target improving soft service
skills. The program is called Hotel
Service Through a Butler's Eye© and it uses a proven teaching
methodology to train in soft skills.
This includes use of ideal behaviour models that can be mirrored by
students in role-playing exercises, identifying mental checklists for ideal
behaviours and using case studies to demonstrate both effective and ineffective
use of the behaviour.
As a result, frontline hospitality
employees - doormen, bellmen, housekeepers and room service personnel - are
equipped with the tools and knowledge that will assist them to deliver service
with the same keen and comprehensive attention to detail that defines butler
service.
The result is increased guest satisfaction, enhanced star or diamond
designations and a more cohesive and thorough approach to service that enhances

We are very
proud to have Chef Matt Binkley on our staff and team at the Academy. Although we fully recognize that it is
impossible to provide a complete culinary training in such a short period of
time, Chef Matt is a great leader and teacher for students. His specialty is teaching the skill set
needed for household managers to cope with situations such as a chef's day off
and or how to successfully communicate between the front and back of the house.

Housekeeping 101 (2 days)
One of the most important classes begins with a lecture on understanding the
importance of light, temperature and humidity and how it affects the household
and furnishings. Additionally the class covers dealing with spills, safe
cleaning techniques, tools, reviewing different surfaces, furniture pieces and
how to correctly clean a room, bed making and including turn down service.
Housekeeping 201 (3 days)
Hands on classes learning to correctly clean bathrooms, bedrooms, how to
appoint guest rooms, guest bathrooms and then all of the different methods of
suitcase packing and unpacking from clothing, make-up, shoes and dealing with
dirty items and finally long term clothing storage. Course Schedule

Table Setting & Service (3 days)
A hands-on class includes learning different utensils, china, glassware for
service and dining. We proceed on to table setting table space calculation and
the different methods of table setting from around the world, as well as
understanding the types of table service, napkin folding and the order of
service chart. This course is at least 50% hands on.

Laundry 101 (3 Days) Understanding the laundry symbols chart, how to correctly use a washer and dryer, preparing clothes for the wash, dealing with stains, ironing, folding of laundry and linens, using a mangle machine correctly, steaming ball gowns, mending buttons dealing with dry cleaning and dying dark clothes. Butler Skills 101 (1 Day)
A professional butler teaches butler traits, code of ethics and then
traditional items such as ironing a newspaper, answering the door, making
coffee, making tea, dealing with different kinds of coffee such as espresso,
cappuccino, latté etc. and finally setting the perfect fireplace.
Butler Skills 201 (1 Day)
This class goes to the next level of service including tray service how butlers
manage household and difficult situations within the household and dealing with

Household Management 101 (2 days) This class delves into
the business aspects of household management beginning with abbreviations of
the industry, managing household inventories, procedures, manuals, petty cash,
and general best practices for a successful over-all household management

Household Management 201 (2 Days) This advanced level covers household
management issues at the highest level. Attention will be paid to managing
large-scale estates and families with multiple properties, large numbers of
