 Vitamin E: A Long Overdue Review 

 

Vitamin E was discovered in 1922 by Herbert McLean Evans to be essential for human fertility. It consists of two main classes: tocopherol and  tocotrienol and four isomers: alpha, beta, gamma and delta. 

 

Currently only the alpha-tocopherol is recognized by the US Food and Nutrition Board to be the only form of Vitamin E. The other isomers are not recognized due to their lower bioavailability. 

 

However, recent scientific research clearly shows the various isomers of tocopherol and tocotrienol confer distinct and essential benefits to the well-being of our body despite their low doses in the body. In addition, there is emerging evidence that long term consumption of high doses of alpha-tocopherol is harmful as it likely suppresses the absorption of the other isomers. 

 

It is therefore high time that the consumers and authorities in the food and nutrition industry become aware of the need to incorporate a broad spectrum of Vitamin E to give a well-balanced diet for the general population. 

 

Biography of Dr. Fong Chee Wai

Dr. Fong Chee Wai is the Head of Research and Development at Davos Life Science Pte Ltd, which is a wholly owned subsidiary of Kuala Lumpur Kepong Berhad. Davos Life Science, in addition to being one of the world's largest producers of T3, is currently the only company that can purify isomers of tocotrienol from palm oil for use in clinical trials & supplements. 

 

Prior to joining Davos Life Science, Dr Fong was a scientific consultant to Merck Millipore Malaysia and Taiwan and a Field  Application Scientist for Millipore South East Asia.  He obtained his Bachelor of Science (Pharmacy) with Honors at the National University of Singapore and PhD in Molecular Pharmacology from the University of Glasgow, United Kingdom.

Message from the Chair 

Dear CSIFT Members, 

 

I am proud to report that the 2012-2013 session of the CSIFT has started with a bang! The Executive Committee held its kick-off meeting on September 10th at Rosewood Restaurant and Banquets in Rosemont to start the new session. 

 

The committee members approved the requests for funding increase by the Marketing and the New Professionals committee chairs, and voted unanimously to approve the FY 2012-2013 budget. 

 

I would remiss if I don't recognize the fantastic job done by Mike Hosler, John Fenstermacher and the team of volunteers in organizing the golf outing at Cog Hill on August 21st. Would you believe, we had a record attendance of 264 golfers filling two golf courses at Cog Hill to enjoy a round golf, and to support a noble cause - raise money for the CSIFT Scholarship fund. 

 

We often hear from our scholarship recipients acknowledging the commitment of CSIFT in promoting food science and technology profession and providing scholarships to the undergraduate and graduate students enrolled in local colleges and universities. I would like to share a recent note from Dr. Faye Dong, Department Head at University of Illinois, Urbana-Champaign: 

 

"On behalf of the Department of Food Science and Human Nutrition at the University of Illinois, I want to thank you, the CSIFT Officers, and the ExCom members for your ongoing support of our undergraduate and graduate food science students. The Section is providing very valuable and much appreciated support that is enriching our instructional program and helping our students to develop into professionals. Thank you very much for your investment in the future of our profession!"

September 2012 Kickoff Meeting Recap 

 
In Defense of Processed Food: John Ruff, IFT President was very pleased to see everyone at the 2012-2013 CSIFT Kickoff Meeting. It was a packed house of over 130 people. We were very fortunate to have John Ruff, President of IFT as our guest speaker for the dinner meeting held at Rosewood Restaurant in Rosemont, IL. 

 

John gave a very informative update on what IFT is doing globally. I was amazed to hear how IFT is able to reach so many people through Food Technology Magazine, the Wellness Conferences, Annual Meetings, and the Feeding Tomorrow scholarships. This is a very exciting time to be a part of IFT. I look forward to the things to come within IFT. 

 

John also shared details on how to defend food science and processed foods in our world today. He showed how important it is for each of us in this industry to defend food science. Food science and processed foods continue to play a role in how we feed the world today and into the future. We can be the voice that shows the value and benefits of processed foods with details on food safety and quality, packaging, and food health nutrition. 

 

John showed facts that some processed foods can be more nutritious than those that were not processed. He also showed how lives could be saved in underdeveloped countries by educating them on the benefits of processed foods and packaging. I look forward to seeing everyone at the October meeting.

"Our first event of the year was a great success! 32 attendees learned about craft beer brewing at Two Brothers Brewery, including their signature "Crafted to remove gluten" Prairie Path Golden Ale.  


Next month we will have a Food Science Trivia Night at a venue to be determined in Chicago.  The November event will be a chocolate tasting at Anna Shea in South Barrington generously sponsored by Flavorchem Corporation". Please register for these events ahead of time at www.chicagoift.org.

 

It is the first of many events we hope will make 2012-2013 another great year for fun networking opportunities. 2011-2012 was our most successful year to date, and we hope to carry that momentum into this year!

2012 Golf Outing a Great Success!

 

 

The Chicago Section IFT's 5th Annual Golf Outing took place on Tuesday,August 21st.

 

It was spectacular and everyone enjoyed golfing at Cog Hill - filling two golf courses. Mike Hosler and John Fenstermacher, the golfouting chairs, did a great job organizing the event and the volunteers.

 

There were 264 golfers and approximately $10,000.00 was raised for

scholarships.

 

Thanks to all the volunteers and the sponsors who helped to support

the costs of the outing as well as the money raised for scholarships.

NEWS FROM THE UNIVERSITY OF ILLINOIS

 AT URBANA-CHAMPAIGN 

 

We wanted to share with the Chicago Section IFT what FSHN students are doing as they begin their semester. 

 

The Food Science Club or the Association of Food Technologists (AFT) is a student organization that helps food science students of all levels in the Food Science and Human Nutrition Department with their college and future careers. We are a proud college chapter of IFT and we work hard to bring the global food science community to UIUC. 

 

Our club objectives are: 

* To build a strong relationship between students and faculty in the 

 

Department of Food Science and Human Nutrition. 

* To present leadership opportunities to students. 

* To connect students and the food industry through guest speakers, company tours and internship opportunities. 

 

Since we held executive board elections in the spring, we were able to hit the ground running this semester. Our executive board includes: President (Ariel Cavazos), Vice President (Merry Wang), 

 

Secretary (Katharine Girone), Treasurer (Disha Gandhi), Social Chair (Kelsey Choquette), Historian (Lun Ou), ACES Council Chairs (Andy Nistor & Noah Roberts), and Explore ACES Chairs (Ellyn Polley & Lauren Smith).

 
 
 
  
Emeritus Professor Passes  
Dr. Toshiro Nishida,
Dr. Toshiro Nishida,
 
Dr. Toshiro Nishida, 86, passed away on Wednesday, Aug. 15, 2012, at Carle Foundation Hospital in Urbana, Illinois. 

Dr. Toshiro Nishida served on the faculty of the Department of Food Science and Human Nutrition at the University of Illinois at Urbana-Champaign for more than 40 years. 
 
During that time, he made fundamental research contributions to our understanding of the pathways, enzymes, and proteins associated with lipid metabolism and transport. 

 

He was internationally recognized for his research contributions and was a recipient of the National Institutes of Health Award of Merit and the College of Agricultural, Consumer and Environmental Sciences Paul A. Funk Award. 

 

He taught courses related to food chemistry and nutrition, as well as a graduate course on the metabolism of lipids. He also was an active part of the off-campus M.S. program in food science in Chicago. Professor Nishida trained many students who have gone on to successful and productive careers in science.  Dr. Nishida was also a University of Illinois alumnus, having received his Ph.D. in Food Science in 1956 under the direction of Dr. Fred Kummerow. 

 

On the occasion of Professor Nishida's retirement in 1998, the Toshiro Nishida Fellowship for Excellence in Research Fund was established by his friends, family, and colleagues.  He and his wife, Hiro, continued to support the fund that provides opportunities for undergraduate and graduate students to excel in their research. 

 

In lieu of other expressions of sympathy, the family requests that contributions be made to the Toshiro Nishida Graduate Research 

Award Fund in Food Science and Human Nutrition, c/o The University of Illinois Foundation, Harker Hall, 1305 W. Green St., Urbana, IL 61801. Contributions may also be made online at www.giving.illinois.edu with notation that they are in memory of Dr. Toshiro Nishida.
