In Defense of Prccessed Foods

It is fashionable to use the phrase "processed food" as a pejorative term with a concurrent negativity about the role that food scientists play.  We should be concerned about the impact this has on our profession, both in our ability to influence consumers and regulators, as well as the impact on recruiting the brightest and the best students for the future.  Yet food processing is thousands of years old and virtually everything we eat or drink has been processed in some way. Food science and technology will become increasingly important to feed the world  to increase the availability, safety and quality of our food supply in the future, yet the benefits are not recognized by many.  What can we do about this dilemma?

John Ruff

IFT President

Join members and friends of Chicago Section IFT as we welcome IFT President, John Ruff to begin our 2012-2013 year.  Mr. Ruff's presentation will be centered on the topic of the "In Defense of Processed Food" and the fact that virtually everything we eat or drink has been processed in some way. He will challenge you to consider the importance of the food science and technology profession in feeding the world and the importance of processed foods as part of that process.

During Mr. Ruff's prior 36-year career with Kraft and the former General Foods, he headed R&D for International and North American businesses...Read More

Dr. Vijay Arora

2012-2013 Chair

"As I sat down to write this message, I couldn't resist but thinking of the Games of the 2012 Olympiad in London, and the fond memory of athletes competing at awe-inspiring levels to win and set new world records! The Olympic motto "Citius - Altius - Fortius" was truly embedded in every athlete's mind and soul."

I believe we can emulate the Olympic motto...
