The Paradox of Food Regulation:

Is it Working?

Catherine Adams

Speaker:
Dr. Catherine Adams Hutt

There are food safety regulations and health policies dating back over 100 years.  Most recently, we saw the enactment of the Food Safety Modernization Act and delivery of the 2010 Dietary Guidelines for Americans.  Food safety regulations control the practices of the food industry.  Health policies tell consumers what they should eat.  These national policies drive formulations for foods from canned soup in our pantry to a meal at our favorite neighborhood restaurant.  But we have to ask the question, is any of this working?

The CSIFT Program Committee cordially invites you to join members and friends for this month's dinner meeting.  We have the honor of welcoming Dr. Catherine Adams Hutt from RdR Consulting to speak on the topic of food safety and regulations.  Dinner will feature an array of Indian Cuisine served buffet style.  We look forward to seeing you there.

Speaker:  Dr. Catherine Adams Hutt , Ph.D., RD
Catherine has had senior leadership roles in the public and private sectors. She led quality and food safety programs for Fortune 200 manufacturing and food service companies, including HJ Heinz, Campbell Soup Company and Tricon Restaurants, before they became YUM Brands.  Following a career in the public and private sectors, Dr. Adams Hutt launched a consulting firm and serves as President and CEO of RdR Solutions Consulting, specializing in food safety and health policy, and regulatory science. She is also CEO and Principal for a food regulatory consulting firm, Food Regulatory Solutions (FRS) and Founder, Executive Director for a not-for-profit forum, "The Rialto Conference".

She was Chief Quality Officer for McDonald's Corporation and Coors Brewing Company. Dr. Adams Hutt also led McDonald's nutrition strategy. Prior to joining the public sector, Catherine was Assistant Administrator for the US Department of Agriculture Food Safety and Inspection Service, the regulatory agency for meat and poultry. There she led the global development for the principles of HACCP as we know it today, led the US Delegations for the Codex Food Hygiene Committee and Import and Export Certification Committee, and played key roles in the adoption of HACCP as a regulatory tool and the development of the Sanitary and Phytosanitary Standards that are part of WTO agreements today.

Suppliers' Night 2011

Observations from STUDENTS

Chicago Section IFT is very appreciative of the time 30 Dominican University students spent volunteering at the registration tables for our 2011 Suppliers' Night Expo. In addition to volunteering, they were also required to complete a class assignment for one of the following courses: Basic Foods, Experimental Foods, and Product Development. The students are encouraged to attend (Suppliers' Night) by their professor Caren Messina-Hirsch, a member of the Chicago Section.

Students were asked to comment on the following four questions.

What did you learn?

What was your greatest surprise?

What was the most exciting food, beverage, ingredient, piece of equipment that you learned about?

Was there something you would never forget about the experience?

You have to READ HERE to see their insightful and interesting comments!
