Artisanal Cheese in Chicago's Backyard |
Join members and friends of Chicago Section IFT as we join Chefs Dot Vartan and Lauren DeMaria from CSSI who will share with us information about the artisanal cheeses from Wisconsin and demonstrate the art of making fresh mozzarella.
The audience will have an opportunity to taste and enjoy a select variety of artisan Wisconsin cheeses accompanied with wines from South America.
Most of us are familiar with the usual suspects when it comes to great cheeses including Parmigianino Reggiano from Italy, Roquefort Blue from France, and Manchego from Spain. But few of us know of the world renowned artisanal cheeses made right here in our backyard, in the farmlands of Wisconsin.
Wisconsin Cheeses have a celebrated heritage of more than 160 years of quality and craftsmanship. During this long and rich history, the art and science of cheese-making has been captured in time-honored traditions that produce cheese varieties of unparalleled excellence. Artisan cheese is produced in Wisconsin in over 600 varieties, types, and styles. Today, approximately 12,000 dairy farms, with over 1.26 million cows producing an average of 20,630 pounds of milk each per year continue the reputation for quality cheese from Wisconsin.

New Professionals Section
A new professional is anyone working in the food industry 10 years or less. The New Professionals Committee plans social events around the downtown Chicago area as a fun way to network with likeminded peers and to reconnect with former classmates and coworkers.
The 2011-2012 Schedule of Events includes a Happy Hour every other month separated by months with a "field trip" either touring a food/beverage facility or fun activity. We are open to suggestions for places to go and things to do both within the city of Chicago and the surrounding suburbs just shoot us an e-mail or come to a Happy Hour and share your thoughts!

For the 2011-2012 IFT year we are very much looking forward to increasing New Professional involvement not only within Chicago Section but IFT as a whole. Our objective is to bring a sense of comfort to those new in the industry. We help recent graduates get their foot in the door leading to success within this vast yet very small food community. If we can help ease newcomers into Chicago's food community, we feel confident it will help them develop the necessary skills to form connections all over the country and possibly the world - personally and professionally. We achieve this by hosting events where one is surrounding by their peers, people wearing the same slightly uncomfortable new shoes, and open a line of communication help break them in.

Call for Nominations
~TANNER LECTURE COMMITTEE
Tanner Award - Call for Nominations
Nominees for the Tanner Lectureship are sought. The Tanner Lecturer should be an outstanding and well-recognized researcher and excellent speaker. The nominee may be from industry, government, or university, having developed unique technology in the area of food science or related disciplines which has significant impact to the food industry.
The Lecturer may be from any country, but preferably not from within our Chicago IFT Section. The award consists of an honorarium of $2,000, a plaque and reimbursement of travel expenses. The Tanner lecture will be presented in May 2012.

Nominations may be made by any Chicago Section member, and preferably but not necessarily, consist of a curriculum vitae and an accompanying letter setting forth the reasons for the nomination.
Completed nominations are due no later than December 1st, 2011, and should be sent to the Tanner Committee Chair:
