Bill is currently serving as an elected member of our Executive Committee and he has contributed greatly to our section in the past in his role as chair of the committee that created and issued our annual Membership Directory..."

October Meeting Highlights   

 

We were quite fortunate to have Mort Satin, VP

of Science and Research for the Salt Institute, at our October dinner meeting to talk on a topic of great interest not only to our members but food industry in general - The Salt-Health Debate. It was refreshing to see a fact-based approach to clarify the myths about the ill effects of salt in our diet.  Mort went on to show how a landmark global study's overreliance on the unusually low blood pressure of a primitive rainforest tribe skewed the study's results, putting health policy on the errant path it continues to follow, despite all the scientific evidence to the contrary. He kept the audience engaged and captivated as he continued to debunk 10 myths about salt in out diet.

We've had a few changes this month.  Most important of which, we have established a committee to help organize and improve our events.

This month, we have a two tiered event. For those that can come to the pumpkin patch, we are meeting for some fresh apple cider donuts and pumpkin picking @ 5:30pm in the Red Barn Cafe.

 

After, we hope to meet the rest of you out at Pinstripes for a happy hour of networking and Bocce Ball @7:00pm in the bar.

~CSIFT BREAKFAST TECHNICAL SEMINAR 

 

October 21st- Technical Session: The Implications of Salt Reduction 

 

Location:  Dominican University, 7900 W. Division Street, River Forest, IL 60305 Parmer Hall, Room 108.

(Parmer Hall is across from the parking garage at rear of campus off Thatcher Avenue entrance. Use the multi-story parking building across from Parmer Hall.)

 

Technical Session:  With the recent focus on salt reduction in food and the link it has to the health and wellness of the US population, it is important to consider both.  This session will cover macro/micro considerations for salt reduction including ways to reduce salt in food products without compromising taste, shelf life, or other benefits.

~TANNER LECTURE COMMITTEE

 

  Tanner Award - Call for Nominations

 

Nominees for the Tanner Lectureship are sought. The Tanner Lecturer should be an outstanding and well-recognized researcher and excellent speaker. The nominee may be from industry, government, or university, having developed unique technology in the area of food science or related disciplines which has significant impact to the food industry.

 

The Lecturer may be from any country, but preferably not from within our Chicago IFT Section. The award consists of an honorarium of $2,000, a plaque and reimbursement of travel expenses. The Tanner lecture will be presented in May 2012.

Nominations may be made by any Chicago Section member, and preferably but not necessarily, consist of a curriculum vitae and an accompanying letter setting forth the reasons for the nomination.
