Presentation:  SWEETENERS - Characteristics and Impact in Confectionery Applications

Nutritive and high potency sweeteners are used in a wide variety of confectionery products to deliver sweetness, enhance flavor and achieve desired texture. In addition to impacting sweetness perception, nutritive sweeteners have the ability to dial texture from a hard candy glass to chewy caramels depending on their solubility and crystallization characteristics. Carbohydrate-based nutritive sweeteners impart texture and color attributes to the finished products with their contribution to product viscosity and reactions with other food ingredients, such as, proteins. Non-nutritive or high potency sweeteners on the other hand allow food formulators to develop sweet products with the benefits of reduced calories and lower glycemic index. This presentation will describe sweetener characteristics, sweetener/starch interactions and moisture sorption properties in a model gel formula.

On behalf of your Officers and ExCom Members and Committee Chairs, I do hope you are enjoying this Newsletter as much as everyone who contributed articles and created the Newsletter itself! To make sure that CSIFT and our Newsletter just keeps getting better, the Editor and I want to know what you think. Which articles are you finding most-and the least-interesting? (Don't worry, we can take it!) What do you want to see more of? 

 

We know that your time is precious-that's why our goal is to make our Newsletter informative and beneficial. So please take 5 minutes to scroll through the various articles and open their links. Read about what your Section has been up to, read about the upcoming meetings, learn about our Committees and how you can be involved, look at the photo gallery with photos from our last meeting, and try the word search puzzle (this month's puzzle highlights St. Patrick's Day/Irish Rivers).

On behalf of Mike Carson and myself I would like to thank everyone who came out to the January Young Professionals event at Whirly Ball Chicago.  We had a great turnout of young professionals, a couple of industry veterans (Wendy Mosier and Dave Oeth), some late registrants and some last minute attendees as well. I was happy to finally put faces with e-mails I send and receive!

 

Everyone had a chance to meet in the party room, but before long it was time to show off our skills on the whirly ball skills court.  The week's aggressions were released with some intense game play and friendly trash talk. As the night grew later, the noise level of our room grew louder. I would have to say this was the most successful YP event in quite some time.

 

We hope everyone who came out and had fun will spread the word so our group can continue to grow."  Suraya Gabel

Dr. Gary R. List Selected as 49thFred W. Tanner Lecturer 

The Tanner Lecture Committee is delighted to announce that Dr. Gary R. List has been selected as the 2011 Tanner honoree for the Chicago Section IFT. Dr. List is currently President of G.R. List Consulting. He is a recent retiree as Lead Scientist from the Food and Industrial Oil Research, ARS, USDA where he dedicated his career for nearly a half century. This year we are very fortunate to have Dr. List as our Tanner Lecture speaker who will present us a prestigious lecture: "More stable, functional and healthy lipids: new technological developments in the oilseed industry". Don't miss this memorable event for the Chicago Section IFT. 

Mark your calendars for Monday, May 9, 2011 dinner meeting at the Intercontinental Chicago O'Hare in Rosemont, IL for the Tanner Lecture! More details will follow in the next issue of newsletter.

In Memory of a CSIFT Member:   

Dr. Walter Clark

Dr. Walter Clark

Walt Clark was a man extraordinaire. He was always starting the day with God, coffee, enthusiasm, and a clear thinking-caring attitude. He soon progressed to sharpening his four inch pencil, finding the yellow pad, and the ideas flowed from his already sharp mind. Educated at Pomona, Georgetown, MIT, and Cornell, he worked in four industries where he learned the food sciences well: Lederly Labs, Pillsbury, Quaker Oats, and Hunt Wesson. Always teaching, encouraging, and learning while travelling worldwide, he shared knowledge of his beloved food industry. He also liked to eat, so fasting and cutting back to two meals a day became a new experience that helped him to get his weight where he wanted it. He was a combination of Quaker and Puritan, who for nearly 90 years had a sincere zest for living life to the fullest. He was thankful for the many friendships you formed with him. They nurtured him, and always brought him back to church, Chapman University, Town and Gown, CSIFT, and IFT.

Mark your calendars for CSIFT's traditional Students' Night event in April which is dedicated to our students.  This year we asked them about their interests and they responded quickly.  Following their suggestion, Perfecto Perales, Senior Director at Kraft Foods, will talk about "Diversity and Inclusion at Kraft" - the importance of diversity and how an inclusive culture can be leveraged to drive business performance.

The USP sets internationally recognized standards for food ingredients and dietary supplements through the Food Chemicals Codex.  Join speakers from the USP for a Food Chemicals Codex User Forum on Tuesday, May 17, 2011.  Registration will start at 8:30 am. The presentations will start at 9:00 am and will run until 3:30 pm.  Lunch will be provided.  

 

This seminar will provide information on food ingredient quality standards and the FCCstandards- setting process, in addition to the following topics:

  • Current food standards initiatives
  • Reference Materials for food ingredients
  • Dietary Supplements Compendium
  • Your involvement  in standards- setting

 

Whether you currently use the as a source of standards or you are interested in learning more about compendial standards and how they work, come join us.
