Greetings!

This week we will be expanding our efforts to sell tickets to our upcoming benefit for the Napa Valley Food Bank, Fork it Over, scheduled for September 8. You'll see our table at Locals' Night and at the Napa Farmers Market. Please take a moment to stop by and learn more about the event. It really should be a great evening for an important cause.
Also, if you haven't already noticed, the large construction trailers behind the market along McKinstry Street were removed last week. While we're sorry to see them go because we know that means the funds are not currently available to complete the by-pass channel, the view from the back deck has been temporarily improved. CA' MOMI GOES CLOTHING OPTIONAL
Well, kind of. This week's featured menu item at Ca' Momi Enoteca is Gnudi (pronounced "nu-dee"), a traditional Italian recipe whose name literally translates to "naked." From the same family as gnocchi, these dumplings are made from organic Bloomsdale spinach, Bellwether jersey ricotta and sage butter, topped with grated parmigiano reggiano. Some like to think of them as the inside of the ravioli, without the pasta wrapper (hence the nude reference). Savory, pillowy and with a full comforting mouth feel -- these are a must try! Complement the flavors of the Gnudi with a glass or two of Ca' Momi Napa Valley Cabernet Sauvignon or Ca' Momi Napa Valley Zinfandel. GLUTEN-FREE PHILLY CHEESE STEAK
Craving a big, juicy Philly cheese steak but can't eat the bread? Wheat-free or gluten-free cooking can be a challenge, and has made for very creative and healthier recipes. This latest invention from Whole Spice is a great way to use leftovers from a BBQ, or grill a little extra for this recipe! Whole spice blends add just the right amount of flavor balance with no need for additional salt or pepper. Adjust the quantity of spice to your liking. Five Dot Ranch has tender and delicious steak, and the flat iron is perfect for this recipe but you can use any cut; the key is slicing it paper thin.The recipe is based on one potato per person and you can adjust for each serving.
For each serving: 1 large russett potato per person, BBQed, baked, boiled or steamed 1 TB Whole Spice Napa Valley rub 2 heaping TB yogurt or sour cream or cream cheese or combine all three! 1 TB Whole Spice Asado seasoning 4-6 oz lightly seared Five Dot Ranch flat iron steak (Delicious rare but cook to your liking) BBQed or grilled onions and red or green bell peppers Sharp provolone or cheddar cheese Whole Spice pesto seasoning
Olive oil Mash hot potatoes (pre-steamed or baked) with Napa Valley rub and cream, cover to keep warm. Coat with asado as a dry rub and BBQ or lightly sear steak. BBQ or grill onion and peppers with The Olive Press olive oil and slice into thin strips. For each serving make a layer of mashed potatoes on a heat safe plate or casserole dish. Top with grilled peppers and onions, then paper thin slices of steak, and finally grated cheese. Place under broiler for 3-5 mins or until cheese is melted. Remove from heat, sprinkle top with pesto seasoning and serve hot.

THE GOOD STUFF FROM THE FATTED CALF
Last year The Fatted Calf paid a visit to The Good Farm in Olsburg for a visit with farmers Craig and Amy Good. The kindhearted Goods with their deep affection for their Duroc and Gloucester old spot hogs and their devotion to stewardship of their land more than live up to the Good name. After a tour of their tidy, efficient farm where they raise not only hogs but also much of the grain that supplements the pastured hogs' diet, Craig and Amy had arranged for a special treat, a visit to their neighbors' barn to witness feeding time for their milk-fed pigs! Just down the road from the Good Farm their neighbor keeps a sweet tempered, honey-colored Jersey milkcow named Ruby who produces far more milk than one family (and even their neighbors) can use. Craig remembered an old timer telling him that the best pork he'd ever eaten was from a hog that had been fattened on milk. The neighbors joined forces and the result is the most beautiful, best tasting pork ever. It has a sweet, mild flavor and a buttery texture that is unbelievably good. When the team from The Fatted Calf arrived, the eight pigs were frolicking in the grass but as soon as they saw them approaching, milk buckets in hand, they ran to the barn crowding the trough before so much as a drop hit the pan. They greedily slurped up gallons of milk in less than a minute and none was wasted. Good pigs! This week The Fatted Calf will have those same milk-fed pigs available. TEA OF THE WEEK
Unlike regular tea, GABA tea (Qing Xin Cultivar) is produced in a nitrogen rich atmosphere, not an
oxygen atmosphere. This process enhances the GABA naturally occurring in the leaf. GABA (Gamma Amino Butyric Acid) is the principal and most widespread inhibitory neurotransmitter; it helps control anxiety and aids in relaxation. GABA
tea also is useful for lowering blood pressure, relieving atherosclerosis and treating headaches and sea sickness. It is also especially potent in anti-oxidants thought to prevent cancer. Tillerman Tea will have the GAB available all week for $23.95 (regular $29.95).

ROCCHETTA FROM ITALY 
Oxbow Cheese Merchant is offering the Rocchetta, a sheep, goat and cow's milk cheese from Piedmont, Italy as its Friends of Oxbow special this week at 15% off. This is a mixed milk cheese in the Robiola style that is ripened by letting it sit for several hours prior to pasteurizing which allows the flavors to fully develop. It is produced in the Alta Langa region of Piedmont and is delicately rich. It is a lovely and creamy Robiola combining the flavors of goat's, cow's and sheep's milk into a harmonious balance of flavor. Dense, semi-soft and smooth in texture, Rocchetta is a very approachable and versatile cheese of exquisite quality that pairs beautifully with the bright Vinho Verde. |

MARTIAN RANCH ALBARINO 
The 2011 Martian Ranch Albariño from the UFOric Vineyard, in Santa Barbara County is the Friends of Oxbow special at Oxbow Wine Merchant this week. One of the Wine Merchant's favorite summer wines remains Albariño for its exotic flavors, refreshing acidity, lightness and versatility. Albarino is the classic grape of the Rias Baixas in Galicia in northwest Spain and produces high quality wines with terrific fruit, acidity and a floral character. This version remains true to that tradition, providing a lovely perfumed aroma, delicious succulent melon fruit, all balanced by lovely acidity. Albariño is often compared to a cross between Riesling, for its minerality, and Viognier, for its floral, peachy aroma. The cool climate of Santa Barbara County mimics the conditions of the Rias Baixas in Galicia, Spain where this grape thrives. The folks at Martian Ranch & Vineyard have a lot of fun with their name, including branding their corks with small Martian creatures. They took it as far as possible when they named their vineyard UFOric, instead of Euphoric, with the obvious tip of the hat to Unidentified Flying Objects. Martian Ranch & Vineyard is the creation of its proprietor Nan Helgeland. Despite rumors to the contrary, Martian is the blending of the names of her sons Martin and Ian. Both the Martian Ranch Albariño and the matching cheese are 15% off this week only. |
