canning our own food.

three cases of tomatoes or peaches at the Farmers Market. The truth is
that it can be incredibly rewarding to bring home a big box of your favorite
flavors, which you will miss the most during the winter, and dedicate a quiet Sunday
afternoon to the art of canning or preserving. Now is the time to start your

OXBOW PRODUCE & GROCERY: MORTAR AND PESTLE PART II
For some reason this method really does make for the best
vinaigrette. Take a peeled clove of garlic and a pinch of kosher salt; place
in mortar and grind until a paste. Take half the amount out and put aside.
Directly into the mortar add good quality vinegar (white or red), extra virgin
olive oil and a generous twist of black pepper; whisk until emulsified. Oxbow Produce recommends one part vinegar to three parts olive oil. Then taste and add more garlic paste as needed. People will be convinced you're a genius because your
vinaigrette is so good, and you don't have to tell them about your secret tool--the mortar and pestle.

OXBOW CHEESE MERCHANT: GENUINE FULVI ON SPECIAL
Every week, Oxbow Cheese Merchant features a "Friends of Oxbow" cheese at 20% off. This week the "Friends" cheese is Genuine FulviŽ Pecorino Romano DOP, a 100% sheep milk cheese from the countryside near Rome. That is not, however, why it is called "Romano." The name comes from the fact that the Romans were making this cheese as long as 2,000 years ago, and the style actually originated in Sardegna. Genuine Fulvi's Pecorino Romano is aged from 10 months to a year. It is deliciously intense and salty, but not as dry as Pecorino from Sardegna. It is a superb grating cheese, and we also love it with a slice of apple or pear after a meal or as an afternoon snack. Ask the Oxbow Wine Merchants to recommend a wine with Genuine Fulvi, as there are lots of good options.
