Chocolate cheesecake

Today should be in the 90s, but our cooler June continues. When I checked the weather in all the cities my family members live in across the U.S., not one had a cloudless sky in the forecast. And while the vegetable gardens could really use more heat, this also means we can make a chocolate cheescake without heating up the house!

                     National Park Summer Tour

 

Crater Lake National Park is like no other place on earth.  The awe-inspiring vistas are reflected in the crystal clear, deep blue of the lake and this makes for a visual that is not soon forgotten.

 

If you can pull yourself away from the view there are some wonderful hiking trails to explore also.

                       Happy First Day of Summer!

                                    

 

Walking down to the mailbox, I go right past my neighbor's fence.  As you can see, their grapes spill out of their yard and tumble down, luckily, to our side. Every year we watch the woody vines awake from a winter's slumber. By mid-spring, the leaves are out and growing, and by the first day of summer, the tiny blossoms emerge. Soon they'll open and set the grape harvest.  Years ago, they told me the grapes were from Hawaii, but who knows?

 

The frosting on the cake occurs later in the year when the grapes ripen. Then I can eat a handful every time  I go past them.  They are a seeded, thick white-skinned variety.  Years ago when the family was eating peanut butter and jelly sandwiches,  I would have made them into jelly.  Now we just eat them fresh off the vine.  Easier and better for you, so you can't go wrong.
