Dear Friends,

"Autumn... the year's last loveliest smile."

Have we mentioned this is our favorite time of year? We enjoy sitting out under the beautiful fall foliage and breathing in the crisp fall air with our big, bold, reds and our port wine. This is also our favorite season to cook with wine! Read below for our new e-series, "Want a little food with your wine?". We'll be trying to include recipes in each of the next few newsletters to share our secrets and yours! We love it when you all bring in your recipe ideas so let us know how you cook with our wines or shoot us a recipe by email. If we use your recipe in a newsletter or on Facebook we'll send you a $5 Gift Card.

Cooking with Wine
Autumn Pears in Mulled Wine

1 orange
1 750-ml bottle Augusta Chambourcin
4 cups water
1 cup sugar
2 cinnamon sticks
1 tablespoon pickling spice
6 Anjou pears, peeled, stems left intact, 1/4 inch cut off each bottom to flatten

Using vegetable peeler, remove peel (orange part only) from orange, forming long spiral strip. Transfer peel to heavy large pot. Halve orange; squeeze juice into pot. Add next 5 ingredients. Boil over high heat 3 minutes. Add pears, reduce heat to medium, cover, and simmer until pears are tender, turning pears occasionally, about 45 minutes. Using slotted spoon, transfer pears to large bowl. Simmer liquid uncovered in pot until reduced to 4 cups, about 10 minutes. Pour liquid over pears; cool. Chill until cold, at least 4 hours. (Can be made 1 day ahead. Keep chilled.)

Place 1 pear in each of 6 shallow bowls. Pour liquid over pears and serve.

October - Wine of the Month

2008 Chambourcin

Chambourcin is a unique grape that ripens to perfection in Missouri. This full bodied dry red wine has the bouquet of raspberries, licorice, and cigar box. The taste is berries, cassis, and jammy fruit. This wine is aged in oak barrels to increase the complexity and intensity of the fruit. Great with lamb or grilled steaks.
Use it in this pot roast recipe.
