The Chablis of Domaine Servin

The world's greatest white wines? The world's greatest chardonnay? Yet these fabulous whites are ohh so different and unique when compared to what most Americans think of when compared with New World versions of this wine. Located in the north west of Burgundy, Monks from the Abbey of Pontigny were the first to plant Chardonnay grapes here on the slopes surrounding the River Serein realizing that the microclimate in this area with its cold spring was essential for the dry, honey-scented flavor of the wine. The wines fall into four appellations: Petit Chablis, Chablis, Premier Cru and Grand Cru.

 

Tomorrow night we will sample through a range of the finest examples of this region from Domaine Servin. Joining us for this very special evening will be Francois Servin, the owner. Francois Servin's father, grandfather, great grandfather, great great grandfather and great great great grandfather were all named Marcel. As you see from this, tradition is important to the Servin family, which because of its long history in Chablis, owns some great parcels - four Grand Crus: Blanchots, Bougros, Les Clos and Preuses. Three premier Crus: Les Forets, Montee de Tonnerre and Vaillons. Even the parcels of village are very well situated, with their largest, les Pargues, formerly being a Premier Cru.

 

Francois, while appreciating the great tradition, is taking steps to bring this spectacular domaine into the forefront of Chablis. He is resuming the practices of hand harvesting (all the Grand Cru are now hand harvested; a large portion of the Premier Cru, too). For new planting, he is using uncloned Chardonnay and planting it a greater density. Some cuvees are being bottled for with no filtration. .

(bottled a month prior to my visit; 12.8% natural alcohol, with 4.35 grams per liter acidity): Bright lemon-yellow color. Perfumed, pure, very ripe aromas of lemon cream, tangy apricot, orange peel and honey. Ripe and tangy, with edgy acidity giving the wine a faintly tart edge. A stony aftertaste gives cut to the finish.

Medium bright yellow. Exotic candied peach, pineapple and honey on the nose. Dense, spicy and concentrated, with firm acidity and a note of lemon zest giving this broad 2009 very good shape. A strong village wine. This is the tank selected by the American importer.

Good pale yellow. Ripe yellow fruits lifted by crushed rock and flinty minerality. The palate offers lovely sweetness and volume and considerable power, with a savory, salty character complemented by a strong flinty element. A bit youthfully aggressive but finishes very long. Servin owns six parcels in Vaillons, including "a very low, cold spot."

 

2009 Domaine Servin Chablis Grand Cru Les Preuses

(still hazy, as the tank-fermented portion of this wine was just moved into older barrels) Very ripe pineapple aroma complicated by a note of coconut. Very ripe and rich, but with firm acidity and a strong calcaire quality giving shape to the pineapple and flinty mineral flavors. For all its density and concentration, this is floral and elegant. Very successful wine with impressive depth of texture. Fran c ois Servin noted that this was once done entirely in older oak barrels but now is 85% vinified in tank.

Full yellow color. Very ripe peach complicated by vanilla and toast notes. Suave, round and full, with concentrated, ripe peach and apricot flavors complemented by a hint of honey. More laid-back today than the Bouguerots, but still a large-scaled and palate-saturating drink, and showing a more pleasing balance. Finishes with superb persistence.
