The village of Chassagne-Montrachet is the last and most southerly of the three great white wine-making appellations in the Côte de Beaune. The wines are fat and opulent, dominated by tropical fruit aromas and flavors. Twelve months of aging in oak barrels adds to the wine's rich texture. The 2006 has a lovely, pale golden color. On the nose, peach, apricot and mango combine with subtle roasted hazelnut notes. The mouth-feel is full and fat with an herbal finale. Bravo!

Morbier 'lait cru' - like no other Morbier you have tried...
This is not your regular Morbier, ours is a raw milk version that gives it more flavor and intensity than its counterparts. From the eponymous town in the Jura Mountains, this raw cow's milk cheese is traditionally made from two milkings, an evening and a morning, separated by a layer of vegetable ash. Legend has it that Comté cheese-makers with extra curds at the end of each day sprinkled them with soot to protect their bounty from flies until they could add milk the following morning to complete a smaller wheel of cheese for personal consumption. Thus, Semi-Soft, pressed and uncooked cheese with pronounced aroma and hearty flavor, which is Morbier. Today the layer is one of vegetable ash, usually decorative, and the paste remains supple and sweet. $15.99 a pound
Ossau-Iraty - feeling sheepish?
First made a thousand years ago in the Iraty mountains of Basque country, this semi-soft unpasteurized cheese is made with the milk of Manech and Basco-Bearnaise ewes. The region has a long history of sheep breeding. The black-headed Manech breed flourishes at the higher elevations of the mountains and the red-headed Manech live in the valleys. Still made according to the old-world traditions, the natural rind cheese is aged for four to six months. It has a medium to strong intensity with earthy mushroom vegetal flavors. $25.99 a pound

This AOC Epoisses is the real deal! Stinky and delicious this soft cow's milk fromage is from the Burgundy region of France. Brebirousse d'Argental - think you like brie?
This sheep's milk cheese has a brie-like texture with a slight mushroomy, mild flavor. Lightly washed it is bright orange in color the texture of the rind adds a nice little bite. As the cheese continues to mature, it becomes soft and sticky; wonderful on a sliced baguette. $29.99 a pound
