Broccoli Rabe Pie

My friend and fellow farm member Debby served this at a party. It was so delicious that I went home with the recipe and MUST share it with you too.

 

Ingredients 

½ lb broccoli rabe

3 Tablespoons Olive Oil

1 clove of garlic

1 premade or homemade pizza dough divided into 2 pieces (I just used one found in the freezer section of my market)

Salt and Pepper

 

Directions 

Preheat oven to 350°. Coarsely chop the broccoli rabe, drizzle generously with 2 tablespoons olive oil and let sit in a bowl while you chop the garlic. Heat 1 tablespoons olive oil in a skillet over medium heat. When hot carefully add the chopped broccoli rabe/oil mixture. Sauté for 5-10 minutes until it wilts and begins to soften. Add the chopped garlic and sauté another 5 minutes to just soften the garlic. Meanwhile spray an 8x8 pan with cooking spray, roll one half of the dough out and place in bottom of pan. Top dough with sautéed broccoli rabe leaving a dough only edge around the perimeter. Roll out other half of dough and place over the broccoli rabe sealing the second dough to the first by pressing around the edges. Drizzle the top with some olive and then salt and pepper.   Bake in a 350° oven for 20-30 minutes.

 

The recipe can easily be doubled and cooked off in a 9X13 pan.

This is usually a year plus process with hearings, circulated bill drafts, mark-ups, and amendments that is being decided without your input unless you act now.
