Mexican Coleslaw

Mexican Coleslaw

Ingredients:
6 cups very thinly sliced green cabbage (about 1/2 head)

1 1/2 cups peeled and grated carrots, (2-3 medium)

1/3 cup chopped cilantro

1/4 cup rice vinegar

2 tablespoons olive oil

1/4 teaspoon salt

Preparation:
Place cabbage and carrots in a colander; rinse thoroughly with cold water to crisp.  Let drain for 5 minutes.

Meanwhile, whisk cilantro, vinegar, oil and salt in a large bowl.  Add cabbage and carrots; toss well to coat.

Edible Classroom come and see... 

What if your garden grew back every year without much effort on your cardoonpart? Each year we plant edible perennials in the Edible Classroom garden. To date we have perennial flowers, herbs, berries, and fruit trees! Visit the Edible Classroom garden and check out the currants, and blueberries. Can you spot the hardy kiwi vines? How about the artichoke-like cardoon flowers?

$60, $40 per additional child 

Learn to farm and how to grow food for your family.  Students will plan and plant a vegetable garden, and bring home their harvest.
