Spice rub: 1 T pepper 41/2 T cinnamon 2 tsp nutmeg 4 T cocoa 2 T sea salt Boneless pork tenderloin 3 T Virgin olive oil Preheat oven to 400 degrees. Mix together spice rub. Trim the tenderloin of fat. Roll in the spice rub. Heat olive oil in pan. Sear tenderloin on all sides - about 2 minutes each side. Remove and put in baking dish. Bake until cooked through (approx 20 minutes)
Sometimes I serve with blackberries.
Contact me with any questions. Enjoy! Optional: Before rolling in the spice rub, poke holes in the tenderloin with a fork. After searing, cook the tenderloin on a grille (approximately 12 minutes per side) with control set on medium.
Note: Take any excess rub and put it in a plastic bag than put it in the freezer for the next time.
