RECIPES of the Week!

SAUCE ROUGE
(both recipes excerpted from The Vegetarian Table by Georgeanne Brennan)
Serve with summer vegetable dishes of all kinds, pasta and rice.

1 large sweet red pepper
2 tomatoes
2 cloves garlic, unpeeled
2 tsp chopped blanched almonds
1/4 cup olive oil
1/2 tsp salt
1/2 tsp freshly ground black pepper

Preheat a broiler, or prepare a grill. Place the red pepper, tomatoes, and garlic cloves on a shallow pan and broil, turning once, until charred, 3 to 4 minutes on each side. Alternatively, place them on a grill rack and grill, turning once until charred, 3 to 4 minutes on each side. Remove from the oven or grill rack and slip the pepper and the garlic into a plastic bag, seal it closed, and let stand for a few minutes to sweat and cool. Using your fingertips, peel away the skins from the pepper, then remove the stem, seeds and ribs. Remove and discard the skins from the garlic. Peel off the skin and core the tomatoes.
In a blender or in a food processor fitted with the metal blade, combine the garlic cloves, almonds, and olive oil. Puree until smooth. Add the sweet pepper, tomatoes, salt, and black pepper and again puree until smooth. Use immediately or transfer to a bowl or jar with a tight-fitting lid and store in the refrigerator. It will keep for 3 to 4 days.

Use the famous Camalay tomatoes for this recipe!

PROVENCAL TOMATOES

8 medium-sized tomatoes, halved crosswise
3 cloves garlic, minced
1/4 cup fine dried bread crumbs
2 tsp salt
1/4 cup herbes de Provence
1/4 cup olive oil

Preheat a broiler. Place the tomatoes cut side up on a baking sheet. Sprinkle the garlic, bread crumbs, salt and herbes de Provence evenly over the tomatoes. Then drizzle a little of the olive oil over the top of each. Place the baking sheet under the broiler and broil until the tomatoes have softened and the topping has browned slightly, 4 or 5 minutes. Serve hot or at room temperature.

Come check out our INDOOR FARMERS MARKET .... a cool place to get your weekly needs. Every Thursday, noon to 6pm, all summer long!

Vegetable Profile:  The Camalay Tomatoes

Our neighbors, the Vogliotti's introduced the Camalay tomato to Calaveras County back in the early 1900's. Without knowing it they created a legacy that is still alive today. Saving seed year after year by selecting the best tomatoes to save seed from, gradually acclimatized the original tomato to our climate and ultimately created an heirloom.

We have grown this tomato for 20 years and it out performs other open-pollinated varieties for it's productivity. As mid September rolls around, the Camalay graces our tables as the tomato of choice. We are not sure if it's the cooler evening temps or the unique way that flavor and peak production combine, but the unique smell is heavenly, making this one of our favorites
. There's no doubt in our minds that the Vogliotti family would have been proud of the heritage that they left behind, as were their customers 60 years ago, eager to peel and slice their way through the September harvest year after year.
