Highlights for the first week of September

What You'll Find at the Markets this week
Fresh sockeye salmon from Alaska coming in this week! Great for making sushi with organic Lundberg rice and Nori seaweed and equally wonderful grilled, baked in the oven with coconut milk, or sauteed in butter on the stovetop. (See profile below). We'll be stocking up on deluxe cuts of grass-fed beef from Montezuma Angus in Jamestown, and more of those fantastic Thompson seedless grapes from Smit O  rchards. The Flame Hillbilly tomatoes made a come-out last week with the hot weather. Yellow with red flaring makes this one of the most attractive of all tomatoes. Delicious too, sweet with low acid, this tomato is a hit for their mild flavor and beauty. We'll have a flush of sweet corn this week that may indeed be the best of the year...Sugar Buns, a hybrid with its yellow white kernels makes delectable eating and pairs well with Anaheim chiles, salmon and tomatoes. RECIPES of the Week!
A visit from family always warrants a special feast . Warm, spicy Chile Rellenos, with slices of tomatoes, cucumber, avocado, and a fruit salad with maple syrup made the luncheon superb. Considered to be extravagant or difficult to make you will be surprised to that the following recipe doesn't take that long at all and is really tasty.
Spicy Corn with Chilies and Cilantro ~ plump sweet corn, juicy cherry tomatoes, scallions, and spicy chilies - a flavorful combination that will become your summer favorite. Served on its own as a salad or a relish or alongside quesadillas filled with smokey cheese
1 tblsp. light olive oil 4 ears of corn, shaved, about 4 cups kernels 1 or 2 jalapeno chilies, seeded and diced Sea Salt to taste 2 tsp. Champagne vinegar 4 tsp. fresh lime juice Cayenne pepper 1 scallion, white and green parts, thinly sliced on a diagonal 2 tblsp. coarsely chopped cilantro 1 cup cherry tomato halves, about ½ pint
Heat the olive oil in a wide skillet; add the corn, jalapenos, and the salt. Saute over medium heat for 7 to 8 minutes, until the corn is tender. Transfer to a bowl and toss the warm corn with the vinegar, lime juice, 1/4 tsp. Salt and a few pinches of cayenne. When the corn is cool, add the sliced scallion and cilantro. Toss in the cherry tomatoes just before serving.
variation: grill corn prior to shaving for a beautiful presentation and great grill flavor.

Producer Profile: Packman Fisheries, Bristol Bay, Alaska & Sonora, CA
Alaskan salmon isn't exactly local, but the fisherman, Denny Thompson is.
Denny Thompson, aka Packman Fisheries, is about the most amazing person you've ever come across. Alaskan guide back in the 1960's, a bomber pilot in World War II, a fisherman in Alaska and just about everything else you can imagine an American hero to be. At age 86, he's just now turning over the fishing operation to his offspring. Every year he catches his quota and brings part of it flash frozen and vacuum-packed back home.
Bristol Bay Alaskan wild caught Sockeye salmon is the real thing. Alaska's commercial salmon season is only two weeks long. The annual catch coincides with spawning season when salmon migrate, returning from years at sea, to the exact river of their place of birth. In order for the fishery to remain "sustainable", and ensure that enough fish make it up river, every day during catch season the Fish and Game count a certain quota before fishing is declared open for the day.
BBQ SOCKEYE SALMON (Thompson family recipe)
Sockeye salmon 3 TSP butter 1/2 cup tamari or soy sauce 1/4 cup of lime juice Garlic salt Dill weed Lemon pepper
Thaw
out salmon by sitting in cold water. Melt butter and mix with soy sauce.
Pour on lime juice and rub in garlic salt, dill weed and lemon pepper.
Brush on butter and soy sauce mixture. Place skin down directly on the
grill. Cook 15 minutes and serve.

What's Up In The Garden
Fall Vegetable seedlings are available on a weekly basis at our store only. We'll have a broccoli, cauliflower, cabbage, chard and lettuce available at $1 per plant or $5 per 6 pack. Time to plant seeds...we'll have these available at our Store as well as essential gardening supplies, cover crops and much more.
GARDENING WORKSHOP: Saturday 18th September. Moving into Fall. Prepare for the fall with season extension, introduction to cover crops, plantings in succession and just general knowledge. Bring your questions and have them answered by Eric. 
Announcing farm tours every Saturday. Eric will be leading a guided tour of the farm from 10:30 to 11:30. No sign up required. Meet at Outer Aisle, Douglas Flat and walk five minutes to our farm. Eric's tours encompass cooking and nutrition, gardening and growing, history and botany, techniques and trade secrets!!

Supported Agriculture) program. We distribute the highest
quality, local, seasonal and regional produce and products to members
all over Calaveras and Tuolumne Counties. We only purchase product from
farms and producers who are committed to ecologically sustainable
practices and go beyond the National "Organic" standards.
