Who kicked the bucket?  
 
Bear With Bucket
I recently attended a restaurant marketing seminar in Phoenix, Arizona and there was one message that really struck a chord. 
 
It has to do with buckets.   Buckets of customers.  We each have a bucket of customers that we do business with. These are the customers who currently frequent our establishment or utilize our services.  The problem is that within the next 5 years, we will loose over 50% of those customers because they move away, or they divorce, they die or we loose them to competition.  All of our buckets are full of holes!  
 
I gotta admit not only does my bucket leak but it seems like every April someone runs off with my bucket and I can't find it until the fall when the snowbirds return!    
 
Because my bucket of customers leaks I must constantly be looking for ways to refill my bucket.  When I arrive at work each day I need to ask myself  "What can I do today to win a new customer?"   More importantly my staff needs to be trained to ask themselves the same question -- their job security depends upon it.
 
Here are some additional facts I learned in Phoenix:

Wow!  68%  It really makes me think about the "hidden cost" of keeping a marginal employee on my payroll.  In these difficult economic times I need every member of my team performing like superstars.  The last thing I need is one of my own employees "kicking the bucket"!

Empty Lawn ChairsThe chairs at the beach are empty and so are the ones at Pies & Plates.  Well, not exactly empty but it's much easier to get a seat this week than it was last week.  As more snowbirds leave it will be even easier.  We know that many of our regular business guests have been avoiding us the past few months because we were just so darned busy!  We miss you!!!!   It's time to come back!  So if you need a great lunch prepared reasonably quick...come to Pies & Plates!  Please spread the word at your office!  SEATS AVAILABLE!

Do not read this unless you are the owner or manager of your business!
 
The marketing tip read, "The way to create a loyal customer is to focus on something that the customer needs or desires and help them find a way to achieve it!"  It turns out that's not as easy as it sounds!   
 
See, my target customer is YOU - a fellow business owner.  So, I had to think about what YOU might need or desire.  You want to be super rich!  (Sorry, can't help you there - buy a lottery ticket!)   You want to have lots of customers!  (Maybe sharing some of these marketing tips will help!)  You want to have happy, loyal employees!  Hmmm, I had to think about that a bit but the light bulb finally went off!  
 
Here's my outrageously bright idea!  What if you could give your employees a free cup of gelato (that's Italian ice cream) every time they dined at Pies and Plates all summer long?  And, what if it cost you only a few minutes of your time?  Zero bucks...just a few minutes of time?  Are you digging it, yet? 
 
All you have to do is email me a list of your current employees.  Just their names.  That's all I need.  Ok, lazy bones, you can have your office manager handle this minor task... 
 
Within a few weeks, I'll mail you cards to give to each of your employees.  The card will offer your employees a free cup of gelato every time they dine in at Pies & Plates all summer long!  Our small cups of gelato retail for $3.75 so it's a great gift!
 
Marketing Morsel: We suggest that YOU take credit for this great opportunity!  Say something like.."Gee, they asked me what they could do for my employees and I said How about free ice cream?"  We'll pretend that you twisted our arm!  Employees really appreciate it when you go to bat for them!  Loyal employees = better business!
 
I'm sure you're wondering what's in it for Pies & Plates?  Why would we make such an outrageous offer!  It's simple, just like you we have high overhead and low margins.  We need to keep our restaurant filled over the summer!  If giving your employees free gelato encourages them to come more often...we are happy to do it!  Your employees need to eat somewhere.  We want them to choose Pies & Plates!

Marketing Morsel:  We can all take a lesson from pharmacy reps!  To get their foot in the door, pharmacy reps are constantly delivering food to doctors offices.  They know that all businesses have "gate keepers" and its usually not the owner.  It's the secretary, adminstrative assistant or other personnel who control the gate.  Very often they also control who get's called when services are needed.  How will you stand out in their mind?  How can you put your business at the top of the list?  Everyone loves food!  Yes, it costs a bit to do this type of marketing but don't focus on costs - focus on the return on your investment!  What will you get out of the relationship in the long run?  If the benefits outweight the costs then it's a no brainer!   Do it!

  • All the marketing in the world can't make a business with inconsistent quality and lousy service a success.  Be sure to provide a product or service that is so good that people will be inspired to refer their friends.
  • Concentrate on what your customers want, not what you think they need.
  • Know the answer to this question before it's asked, "Why should I do business with you versus every other alternative available to me?"
  • Focus your firepower.  Figure out first what you do better than everyone else and that's the message you want to promote.  Then, focus the delivery of that message only to those people who you have a high chance of success with. That's target marketing.
  • Any action is better than no action.  Do something.  It doesn't have to be perfect!  Do it NOW!  Do it fast, just do it, do it, do it!   
  • Set a goal and create a road map on how to get there.  For example, I want to increase my sales this quarter by $10,000 per month despite the recession.  I'm going to do it by 1) finding ways to better serve our business community; 2) by creating a fun anniversary celebration; 3) by engaging my staff in our marketing plan; 4) by identifying and testing new niche markets; 5) by expanding and enhancing our lunch catering business;  6) by expanding our data base and improving communications with our existing guests; 7) by tapping new geographic markets; 8) by finding ways to make greater use of our facialities; and 9) by spending a minimum of three hours a day of my personal time on marketing our business.

Spring and Summer Business Hour Change
 
Please make note...we've suspended Pies & Plates @ Night for the spring and summer but have every intent to give dinner another go this fall.  Over the summer we will serve breakfast and lunch and of course coffee and goodies all day.  As a result of this change we have two pieces of really great news:
 
  1. We'll be opening at 9 am instead of 10 am to give you more time to enjoy our breakfast menu. 
  2. We are placing our very popular lahvosh on our lunch menu!  We just couldn't disappoint our lahvosh fans!  (Click here to find photo and description of lahvosh)

So what can we do with our wasted space? 
 
Marketing Morsel:
  I thought it was interesting that Honey Baked Hams is allowing a caterer who specializes in Mexican food to use their facility for a Sunday brunch!  Why  not?  Honey Baked Ham is closed on Sundays.  The bad thing about overhead costs is that they accrue 24 hours a day, seven days a week!  In these tough economic times you might want to look at your interior and exterior space to see if there is any way to squeeze a few extra bucks out of it!   
 
For at least the next six months our dining room will be sitting empty after 6 pm!  So I've been thinking about how we can utilize this space?  I have a few ideas but here's one that might fit YOUR needs.  Need a private meeting room offering an affordable dinner for your club or organizational meetings?  Consider Pies & Plates!  Great food, competitive prices, friendly service and the whole dining room all to yourselves!  Parties of 25-45 welcome!  Call us at 505-7437.  Ask for Deb Keaton our restaurant manager!

Marketing TIp:  Reserve some time and energy for marketing.  Try to set aside at least an hour or two a week to focus on what you can do to generate more sales or develop more customers.  Don't try to do this at your office.  Go some place where you won't be interrupted - like Pies & Plates between 9 & 11 am or after 3 pm!  Bring only a note pad and a pen.  Turn your cell phone off and focus on nothing but marketing!
