Spotlight On: Food Safety 

 

In recent years, U.S. consumers have faced food borne illnesses linked to contaminated food. It is important to always use precaution when handling food. The FDA lists the regulated products that are the riskiest:  Fresh Produce 

  • Leafy Greens
  • Eggs
  • Tuna
  • Oysters
  • Potatoes
  • Cheese
  • Ice Cream
  • Tomatoes
  • Sprouts
  • Berries

 

 

 

Remember to always utilize gloves, hairnets, and other precautions when breaking down bulk product at your program. It is also important to educate your staff and volunteers on proper santiation. And the most important rule - when in doubt, throw out!

Recipe of the Month
 

Rice Casserole
 
Ingredients:
3 cups rice, cooked
1-1/4 cups shredded cheese
1 cup canned or frozen corn
1/2 cup milk
1/3 cup sour cream
1/2 cup chopped onion
Salt and pepper

Preheat oven to 350 degrees. Combine all ingredients in a mixing bowl leaving a little shredded cheese aside. Transfer to a 1-quart casserole dish. Sprinkle remaining cheese over the top. Bake for 20-25 minutes.
