Share the Bounty with Ampleharvest.org
All too often, a person who needs food assistance cannot find fresh produce at their local food pantry. At the same time, millions of Americans grow more food in their backyard gardens than they can actually use. The New Jersey-based organization Ampleharvest.org is trying to fix this problem.
Ampleharvest.org is working to fight hunger by connecting farmers and gardeners with their local hunger-relief organizations. The goal is to ensure that excess produce is donated to people who need it, instead of being left to rot in the garden.

Pounds Per Person in Poverty (PPIP)
Pounds Per Person in Poverty (PPIP) is a simple calculation that Good Shepherd Food-Bank uses to measure the average amount of food distributed to an individual in poverty in a year. This measurement is important because it allows us to address equitable distribution. Good Shepherd Food-Bank believes that where you live should not limit your access to adequate and nutritious food. Good Shepherd Food-Bank will be focusing on measuring PPIP in 2011 and we will need your help to gather accurate data. Together, we can make sure that Mainers are getting an adequate supply of food on a regular basis. |

Recipe of the Month
Tuna Chowder
Ingredients:
4 slices bacon, cut into 1/2 in. pieces
1/4 cup diced onion
2 cups diced potato
1 6-oz. can tuna, drained
2 cups milk
1/2 tsp. black pepper
1/4 tsp. salt
In a heavy-bottomed soup pot, over medium heat, fry bacon until crisp. Remove and set aside to drain. Discard all but 2 tsp. bacon fat. Saute onion and potato in reserved bacon fat over medium-high heat until onion is soft and just starting to brown. Add just enough water to cover the ingredients, bring to a simmer and cook until potato is tender. Stir in reserved bacon, tuna, and milk. Season with salt and pepper, then reduce heat to low and cook for about 5 minutes, until heated through. |
