Santa Julia, Mendoza (Argentina) "Organica" 2007 ($9, Winesellers, Ltd.)
A very solid Chardonnay with a very attractive price, this features juicy peach and pineapple fruit notes, with virtually no perceptible wood.
Generously fruity but only slightly sweet in the finish, this will prove a very pleasant sipping wine that can also stand up to many moderately robust foods.

As our email subject line pointed out: We've gone green!
What does that mean exactly? It means that we:
- Recycle more than 90% of all wine bottles
we use for tastings, private/public events, wine certification
courses, festivals, receptions and more.
- Recycle more than 90% of wine box cardboard,
office paper and magazines.
- Recycle water bottles, beer bottles
(from our DC School of Beer) and soda cans.
- Use recycled materials in our in-house
printing.
- Print most materials in house to save
on fuel, shipping fuel and packaging materials.
- Print materials, programs and publications
two-sided to save paper.
- Use glass plates vs. paper in our
catering operations to save on paper waste.

And, to the best of our knowledge, we're one of the few wine-related businesses that is taking this step so proactively.

Organic Wines
In staying with our "green" theme this week, we thought we'd write about what exactly it means for a wine to be organic.
At its most basic level, an organic wine is made from grapes that have been grown without the use of chemical fertilizers, pesticides, fungicides and herbicides.
In addition to how the grapes are grown, organic wines should be made using organic techniques, meaning little or no manipulation of the wines by reverse osmosis, excessive filtration, or flavor additives. Many organic winemakers also prefer wild yeasts for fermentation.
For a wine to be labeled "organic," it must meet that country's government standards. Because each nation has its own certification criteria, what's organic in one country may not be so in another. For example, U.S. wines labeled "organic" cannot contain added sulfites, an issue that is under much debate in winemaking circles.
