Greetings!
Unfortunately for me, October began on a very sad note. As some of you may have read on my blog, my first boyfriend and love from high school was in a fatal car accident on October 2nd. When we lose someone unexpectedly, especially someone young, we're reminded of how short and precious each moment is. The reality of life is that each night that we lay down to sleep, we're all one day closer to death. It may sound dark, but it's the truth. None of us know when our time will come and because of that, we need to be sure that we're living the best life possible each and every day. When I finished nutrition school I specifically named my business, Center Your Health, because I feel passionate about living the best life you can. By centering your health, you'll improve the quality of your life resulting in a more comfortable and happier life both psychically and emotionally. Please take a moment to think of a few ways that you can "center your health" and see how I keep mine aligned here. In the meantime, I'm sending so much love to the Policastro family for their loss.

Minute Marinade: Peanut Ginger Sauce This is the season when we're all are craving warm soups and hearty foods so I had planned on sharing a simple soup recipe but we can't JUST eat soups all fall, right? This is one of my favorite "minute marinades" because it literally takes a few minutes to throw together while your noodles are on the stove. This peanut sauce is so ridiculously flavorful, packed with protein, and loaded with nutrition. You'll soo love it.
Ingredients:
� cup hot water � cup creamy organic peanut butter � cup low-sodium soy sauce 2 tbs. olive oil 2 tbs. white vinegar 3 - 4 cloves garlic (minced) 2 tsp fresh ginger root (minced) � tsp fresh ground pepper Directions: Blend all ingredients together (I use the magic bullet for sauces like this) until creamy.
I love tossing this sauce on rice or soba noodles (you can use any of your favorite noodles). I peel a few carrots and cut into thin strips, seed a few red bell peppers and cut into thin strips too. Garnish with fresh chopped cilantro (if you're a lover of it like I am). Serve hot and enjoy each creamy bite.
