HAPPY NEW YEAR!  At the beginning of each New Year many of us dust off our resolutions and recycle them. Then we forget and let them slip from our attention until the next year.  The concept of resolutions seems so final, so black and white; you either achieve them or you don't.  Or lots of time you forget them by mid-January!  This year try setting a few intentions, rather than resolutions.  Nothing to accomplish, just gentle reminders of the qualities you'd like to cultivate in your life gradually, day by day, moment by moment.  Write them down somewhere, and refer back to them throughout the year for inspiration. 

So as you gear up for the New Year, ask yourself what types of actions you are determined to take in your personal life (ex. take a few more personal days for yourself, schedule in more bubble baths, spend more time in silence, etc.), and in your business life (ex. tighten up your organizational skills, take stretch breaks, etc.).  Then set the intentions...

Within the past 2 months I have been published quite a few times!  First in NJ Life Health & Beauty Magazine I was interviewed on the healthy benefits of Laughter Yoga.  Then my colorful quinoa salad was published in the book, Phanfood, a cookbook of Phish fan recipes!  For those of you on the Jersey Shore, you'll find a blurb on 3 Healthy Chicks in January's Natural Awakenings magazine.  This past week I was interviewed by the founder of The Conscious Connection, a digital magazine, on 3 Healthy Chicks.  So far, my 2011 has started off with a BANG!!!

 Lauren's Healthy Chocolate Chip Cookies
I crave cookies ALL the time. However, most cookies are loaded with way too much white sugar or contain dairy. So almost all of the time, I have to suffer through my cookie cravings (and drink lots of water to soothe the sweet craving!). It's a very sad thing. I've been hard at work playing with different recipes I've collected, tweaking them here and there trying to find the perfect recipe...and I FINALLY figured it out. Below is my healthy alternative to chocolate chip cookies! The rolled oats, spelt flour, nuts, chia seeds and maple syrup make these cookies a healthy, vegan and totally delicious treat. Don't let the word healthy fool you into thinking these aren't amazing!

Lauren's Healthy Chocolate Chip Cookies
(Makes about 18 cookies, takes about 25 minutes to make!)

Ingredients:
1 cup rolled oats (take 3/4 and process in blender or food processor into coarse flour)
1/4 cup plus 2 tablespoons safflower or sunflower oil
1/2 cup plus 2 tablespoons maple syrup
1/2 teaspoon vanilla
1 cup grain sweetened chocolate chips or vegan carob chips
1/4 cup chopped nuts, I love walnuts in these (optional)
1 cup spelt flour
2 tablespoons chia seeds (optional, but highly recommended!)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

Directions:
Line 2 cookie sheets with parchment paper or oil lightly. Position one of your oven's racks in the center. Preheat oven to 350 F. Process 3/4 of the oats in a food processor or blender until they are the consistency of coarse flour.

In a small bowl, mix the oil, maple syrup and vanilla until well combined; set aside. In a large bowl, stir together the flour, baking soda, baking powder, chia seeds, and ground oats until well blended and then stir in the chocolate chips and nuts, if using. Pour the wet ingredients into the dry ingredients and mix with a spatula until everything is well blended. Scoop out a heaping tablespoon of the batter onto the prepared cookie sheets. Flatten the cookies slightly with damp fingers.

Bake, one cookie sheet at a time on the center rack, for 11 minutes (depending on your stove). Rotate the cookie sheet from front to back to ensure even baking. Bake 5 to 6 minutes more or until the cookies are golden around the edges. Remove from the oven and place the cookie sheet on a rack. Let the cookies cool on the cookie sheets for 5 to 6 minutes and then transfer them to a cooling rack.  They are SO yummy!! Enjoy!

Treat (& heat) Cold Feet

If you're like me and have poor circulation, your extremities may become very cold, especially during the winter!  To increase circulation, be sure to exercise regularly, stretch, eat plenty of dark leafy greens and add some spices
like ginger and cayenne to your diet.

Sprinkle some cayenne pepper inside your socks.  This folk remedy may help warm your toes by increasing blood flow.  Just don't get any in your eyes!

In the meantime, bundle up and keep warm and hydrated with some hot herbal tea.
