One and a half cheers for the Year for Priests
Dan He lay in the hospital bed surrounded by machines, struggling to speak. His eyes darted at targets around the room, as if searching for the words his brain had lost. "I... door... cat... coffee..." My aunt leaned over his bed and tried to soothe him. "It's OK, Father Bud, it's OK."

A few days before, my uncle, Father Francis "Bud" Connors, had been a healthy and happy pastor of Our Lady of Victory Church in Massachusetts. Now, after a near fatal stroke, he lay helpless in St. Elizabeth Medical Center in Boston.

As I sat quietly by his bed, my mind went back five years - to the last conversation I had had with him before my visit to his hospital bed. It was the end of my senior year at St. John's Seminary College, and I had just told him I was not going on to the priesthood. Click here to read more

Grilled Fruit with Strawberry Dip
pineappleAlthough it may seem odd to put fruit on the grill, firm fruit such as pineapple or stone fruits such as peaches, plums, and nectarines do well over the coals. Grilling fruit causes the water to evaporate and the natural sugars to caramelize, concentrating the flavors.  It is best to grill fruit over medium heat, turning frequently to ensure even cooking without burning. Make sure to clean your grill before grilling fruit - you probably don't want to taste last night's hamburgers on today's grilled pineapple.
