Greetings!

 

 Well that's Januaary 2012 almost over and most will now be back into work if we stopped at all. What has 2012 got in store for you?  

 

Late last year we asked this question in a  survery aimed at gleaning the situation of  the general gardening and landscape industry. For many it has been business as usual with a positive outlook. Some are taking on new staff and investing in growth while others are keeping the hatches battened down with a cautious aproach.   

 

We will provide more indepth feedback from the survey soon. If you are interested in some of the results feel free to reply to this email and let us know.     

 

This month we take a look atsubalpine beauty  in the Mackenzie Basin, the  recipie is a great alternative to fish and chips and an Ellerslie International Flowershow designer / celebrant wants to marry a couple in her exhibition garden.

The diversity of New Zealand's flora is, in large part, due to the kaleidoscope of landscapes that we possess. Ranging from sub-tropical forests in the north to the alpine herbfields of the South Island, our country provides us with a myriad of ecologies to study and use as inspiration for making gardens.

Amongst the most interesting of these are the subalpine scrub and dry grasslands that characterise the Mackenzie Basin and nearby natural areas (such as Aoraki/Mt Cook National Park).

Kiwi classic "Ponga" forms  living wall  

 

 

 

One innovative Hamilton restaurant has brought a living native forest right into their restaurant.

 

The Foundation Bar and Kitchen has planted a stunning 15 metre-long wall of living pongas in the restaurant. The "living wall" is something special, and quite possibly a first for any restaurant. Following nature's lead, the ponga fronds have created a stunning canopy of green along the top of the wall, and the trunks of the pongas have sprouted creepers and small plants.

This month's recipe from Foodlovers :

Beer Battered Fish Tortillas with Coleslaw 

a glamorous alternative to fish & chips.... 

   


Ingredients
1/4 green cabbage, shredded
1 carrot, grated
1 small red onion, finely chopped
1 tablespoon chopped parsley
1/3 cup roasted and salted blanched peanuts
1 celery stalk, finely sliced
1/2 cup aioli or mayo
1 cup self raising flour
sea salt
1 cup cold lager
1 teaspoon wholegrain mustard
oil for frying
600g white fish fillets eg snapper, blue cod, chopped into rough chunks
8 tortillas (less if large)
1-2 lemons, cut into wedges

Method
Combine cabbage, carrot, onion, parsley, peanuts and celery in a bowl and mix in aioli. Set aside.
Place flour and salt in a bowl and make a well in the centre.  Pour in the beer and a spoonful of mustard, whisk until batter is smooth.
Heat enough oil in a frying pan to shallow fry fish. When oil is hot dip fish into batter and then pan fry in batches until crisp and golden.  Drain on paper towels.
Warm tortillas and top with coleslaw, fish and wedges of lemon.
