An 80s classic but still fabulous -
Schnitzel & Coleslaw

Ingredients
4 pieces beef schnitzel 1 egg 1/4 cup flour 1/2 cup soft breadcrumbs 2 tblsp oil 2 tblsp butter 1 tsp wholegrain mustard 2 tsp lemon juice 1/2 cup aioli salt and pepper 1/2 green cabbage 1 red onion 1/2 cup grated cheese 2 tblsp chopped parsley 2 tblp chopped chives 1 carrot, grated 1 lemon, quartered Method
Whisk the egg lightly with a little milk and place in a shallow bowl. Place flour and breadcrumbs on separate plates. Coat schnitzel with flour and then egg and then crumbs. Stack on a plate with a piece of baking paper between each and refrigerate for 20 minutes. Mix mustard and lemon juice with aioli and set aside. Season if needed with salt and pepper. Shred cabbage and finely slice onion. Mix cabbage with onion, cheese, chives, parsley and carrot. Drizzle with aioli and toss to combine. Heat half the butter and oil in a large frying pan and cook the schnitzel in batches until golden on both sides, drain on paper towels. Add more butter/oil to the pan as needed. Serve schnitzel with lemon wedges and slaw on the side. |

Greetings!
Here comes that smell again, that soft sweet smell of Spring.
After last week's wintery blast we now have stunning clear blue days and you can feel the new season arriving.
If you are familiar with Hawke's Bay you will know iconic Te Mata Peak. Usually the "sleeping giant" is parched to a crisp in the hot summer but last week it was covered in snow. This is such a rare event I took this shot on my way to work. My hands were so cold I could hardly open the camera bag - I really needed a Man Shawl that morning!
Things are really on the move for us with a daily hikes in traffic to our site. Over the last couple of months, we have had a 19.4% growth in visitor numbers!
Enquiries about products and services are also on the up with people enquiring about large design projects, lawn rejuvenation and driveways amongst other things. It is all very positive.

A Kelburn beauty - design case study
For the past year in Rachael Matthew's neighbourhood of Kelburn, Andrew and Samantha Murray's family home has been undergoing extensive alterations.
As part of the renovation, the builders did much of the external landscaping including creating retaining walls, steps and paving.
The Murrays asked Rachael, owner of HEDGE Garden Design & Nursery, to come and "finish off"the outside areas and complete the planting.
