We find there's nothing better than enjoying a hearty lunch when you've earned it after 50 kilometers of challenging cycling in the morning.
Many of our clients tell us this is rarely (if ever) something they enjoy while riding at home or with other bike tour operators. Too often lunch was some sort of energy bar or simple sandwich gobbled down in a hurry. Not with us!
Of course we try to enjoy meals like this when there's a dowhill "digestion section" on the route afterwards. |

Recipe: Chickpea and Rosemary Soup
Fall is certainly time for hearty soups. Lorenzo likes his thick enough for the spoon to stand up which calls for an immersion blender though we like to leave some of the ceci whole. This Biba Caggiano recipe is a standard in the CycleItalia kitchen Here's a link to Biba's book
2 C dried chickpeas, soaked overnight in water, then rinsed
1 potato
1 carrot plus 1/2 C minced carrot
1 C onion, finely minced
2 T fresh rosemary, finely minced
1 T fresh sage, finely minced (or use dried)
Extra virgin olive oil
Salt and pepper to taste.
In a large pot, put chickpeas, potato and whole carrot with enough water to cover on high heat until boiling. Reduce to low, partially covering pot, cook until chickpeas are tender (40-50 minutes). Remove potato and carrot and save. Drain chickpeas, saving the water. Heat some oil in large saucepan using medium heat. Add onion, minced carrot, rosemary and sage. Cook and stir until vegetables are lightly golden, 5-6 minutes. Puree half the chickpeas with potato and carrot. Add puree to whole chickpeas, mix, then add reserved cooking water to barely cover. Salt and pepper to taste then cook on medium heat until soup reaches your desired thickness, usually 10-12 minutes. Serve hot with olive oil drizzled on top. New Tour: Vineyards to the Sea Our Campania's Cilento Coast tour has been so well received we decided to create another opportunity for challenging cycling by the sea. This new itinerary combines sublime cycling in Liguria's Cinque Terre region with wonderful roads in the Monferrato wine country and challenging climbs in the Ligurian Appennines. Join us June 1-10, 2010
June 1 - Overnight flight to Milan. June 2 - After a short transfer, assemble your bike (or be fitted for one of ours) at our Monferrato hotel. Relax by the pool or take a warm-up ride though wine country before our welcome dinner of Piemontese specialties. June 3 - We're off to Calamandrana in the heart of Piedmont wine country over peaceful colline under bright sunshine. Pause for a shaded pranzo on the terrace of a favorite osteria before continuing to our restored farmhouse lodging on a hillside surrounded by vineyards. Our group cena will feature wines made within steps of our lodging.
June 4 - Fuel up at the buffet breakfast for loops of 40, 70 or 100 kms through some of the most spectacular vineyards on earth. Loop around natural amphitheatres covered with grapes bathed in sunshine, pausing to enjoy a glass of their essence along with your plate of tajarin, Piedmont's hand-made egg pasta before returning to relax by the pool awaiting another sumptuous dinner.
