Recipe: Bruschetta al pomodoro
This is our most requested recipe and with fresh tomatoes and basil reaching their peak flavor now, perche no (why not) make up a batch?
6 Roma tomatoes
3 garlic cloves
extra virgin olive oil (use the best you can find)
fresh basil leaves
crusty bread without too many holes
salt
Slice tomatoes in half. Over sink, squirt out seeds and juice then coarsely chop/dice. Peel and chop 2 garlic cloves. Chop or tear basil leaves into small pieces. Mix tomatoes, garlic and basil together with enough olive oil to moisten, add a half teaspoon of salt and set aside for 20 minutes to allow flavors to blend. Slice bread into thick slices, toast (or even better grill over gas grill or charcoal!) then rub each warm slice with a peeled garlic clove. Drizzle with olive oil and sprinkle with salt. Just before serving spoon tomato mixture onto bread. Enjoy with Sangiovese wine!

New Vacations: Vineyards to the Sea, Couples Cooking with Carlo and Legendary Climbs WEST.
That's right, THREE new itineraries added for 2010! We're determined to keep up the R & D on new itineraries - for those of you who've already enjoyed most (if not all!) of our past vacations, and for those who have yet to find that perfect trip, an itinerary to tempt you to say "perche no?" (why not) and join us.
First there's Vineyards to the Sea June 1-10.
A sublime combination of Monferrato colline, Appennine climbs and descents along with stunning Cinque Terre views, this new Piedmont/Liguria combination is sure to sell out quickly!
Next on our new tour list is Couples Cooking with Carlo June 18-24. Finally, a challenging cycling itinerary for you with a parallel cooking, wine tasting, shopping and sightseeing schedule for your significant other. Our host, chef, sommelier, pianist, baker and political candidate Carlo Zarri (pictured above) has designed the special non-cyclist itinerary. He'll personally conduct the cooking lessons at his award winning hotel, Villa San Carlo near the famous hills of the Langhe region of Piemonte.
Last but certainly not least is our Legendary Climbs of the Giro d'Italia WEST July 11-22. This 10 day climb-fest will test your legs on famous passes from the Giro and Tour including Agnello, Izoard, l'Iseran, Moncenisio, Sestriere, GS & PS Bernardo, San Carlo, Cervino and the fearsome strada sterrata (unpaved) Colle Finestre! |
