Lake County Wine Adventure Weekend - July 2 8-29, 2012
The eighth-annual Lake County Wine Adventure, a two-day passport event, hosted by the Lake County Winery Association.
Adventurous wine enthusiasts will have an opportunity to discover the "high elevation" wine region of California's Lake County and sample many award-winning wines.
Throughout the weekend, wine adventurers will taste wines from five of Lake County's distinct viticulture areas (AVAs) as they visit participating wineries.
Adventure tickets can be purchased in advance online or at select participating wineries for $35 or on the day of the event for $45. Each ticket is good for two days of activities including tours, music, and art exhibits and entitles the holder to wine tastings and hors d'oeuvres at each winery, a logo wine glass, wristband, and a four bottle wine bag. Event-goers will be entered into a raffle drawing when they leave their completed wine adventure tickets with the last winery they visit. Raffle prizes include a dozen choice Lake County vacation and entertainment packages and a special grand prize featuring a stellar cellar collection of Lake County wines.
Event organizers promote responsible hospitality and encourage all participants to designate a driver. Designated drivers are invited to enjoy non-alcoholic drinks, food, and entertainment free of charge at each site compliments of the Lake County Winery Association.

Brassfield Estate Winery, Clearlake Oaks
Brassfield Estate Winery & Vineyard is located in the western section of High Valley at High Serenity Ranch on a truly distinctive and remarkable winegrowing property. Their valley floor vineyards sit at 1,800 ft. elevation. The higher vineyard blocks rise to nearly 3,000 ft.
In 1973, Jerry Brassfield purchased the original 1,600 acres as a cattle ranch and wildlife reserve. Over the next three decades Jerry acquired additional property. Today, the Lake County estate includes 2,500 acres across both the eastern and the western sections of High Valley, as well as Round Mountain Volcano.
Vineyard planting began in 2001. As the vineyards matured, the winery has grown with a state-of-the-art winemaking facility, and iin 2011, a beautiful tasting room opened to the public.

Farm to Table
Yogurt Panna Cotta with Apricot Coulis Contributed by: Ann-Marie Pleskaczewski, Sous Chef,
Manzanita Restaurant at Twin Pine Casino, Middletown
About the chef: At Twin Pine Casino & Hotel, wine country living is more than just a theme; each month Twin Pine hosts a winemaker's dinner series featuring one of California's wineries. These fantastic wines are paired with food in a three-course prix fixe menu. Chef Ann-Marie works closely with winemakers to create custom menus to pair with the wines.
Growing up, most of her family gatherings revolved around food and wine. It was always her preference to be in the kitchen with her mother helping in the preparation. Chef Ann-Marie's mother loves to cook and it shows by the care her mother takes when doing it. Chef Ann-Marie remembers watching her mother delicately remove the tough vein along each cabbage leaf when making stuffed cabbage. Or the way her mother would salt and layer the eggplant to remove the bitterness before breading and frying each slice for eggplant parmesan. As she went, she would give Chef Ann-Marie the reasoning behind each of her fussy steps and she clung to every word. Because of her mother's Italian heritage, her mother would often have a glass of wine while cooking, and Chef Ann-Marie jokingly recalled that while the other kids had Kool-Aid in their sippy cups, hers contained wine! Soon enough, Chef Ann-Marie began to cook on her own.
Chef Ann-Marie began her professional life in teaching but soon realized that cooking was where she belonged. She started out in a deli and then merged the two working as a nanny and private chef for telecommuting families. Next, Chef Ann-Marie moved on to catering and events at local wineries. After receiving a degree in Food Services Management from Yuba College, she came to Twin Pine Casino & Hotel for the start-up of their new facility.
Everyday brings a new challenge and that's what makes it exciting for Chef Ann-Marie. She stays true to her roots, but she is always pushing the envelope to see what else can be done or how she can improve upon a recipe or idea.

Chef Ann-Marie's Yogurt Panna Cotta with Apricot Coulis
Yield: 4 servings
For the Panna Cotta...
1 1/2 teaspoons unflavored powdered gelatin
2 tablespoons cold water
1 1/2 cups heavy cream, divided
1 cup whole milk yogurt
1 teaspoon vanilla paste
1/3 cup sugar
In a small bowl, sprinkle the gelatin on the water. Stir and let soften. In another bowl, whisk 3/4 cup of the heavy cream, add yogurt and vanilla bean paste and set aside. In a saucepan, heat the remaining cream and sugar over medium heat until it just begins to simmer, stirring frequently to avoid scorching. Remove from heat and stir in softened gelatin. Stir to dissolve. Whisk the hot cream mixture into the cold mixture and strain into a measuring cup with a pour spout. Pour into four 6-to 8-ounce ramekins and chill at least 4 hours or until set.
For the Apricot Coulis...

2 cups water
1 tablespoon sugar
1/2 teaspoon lemon juice
For garnish...
1/4 cup pistachios, toasted and chopped
