Gregory Graham Winery and Vigilance Vineyard & Winery will host this family-friendly wine event. A wide variety of entertainment for all ages including hiking, music, food and wine pairings, and games for the kids.
The event showcases local restaurants and chefs as they pair wines from Vigilance and Gregory Graham with their creative cuisine and compete for awards in five categories. Nine years ago, Gregory Graham set out to produce world-class wines from Lake County. His hands-on approach to winemaking, complemented by 25 years of experience, gives consumers fresh, structured, fruit-forward vintages that are reflective of this high-quality winegrape growing region.
Graham's winery is nestled at the base of vineyard-covered hills. The on-site solar-powered facility allows the winemaker to harvest his grapes at the perfect time and begin the winemaking process immediately. As both grower and winemaker, Graham believes that grape selection, well-timed harvest, and careful production are critical to making great wine.
Open 11:00 a.m. - 5:00 p.m. Friday, Saturday, Sunday and most holidays. Private tours available by appointment.

Butternut Squash Cannelloni

About the chef: Born in Michigan, Chef Nicholas was brought up on four continents and has traveled to more than 30 countries in search of new cultures, traditions, and cusines. His formal culinary studies include the Natural Gourmet Whole Foods Cookery in Manhattan and the California School of Herbal Studies in Forestville, California.
After having apprenticed around the world, including a year at the Hotel Argent de Lyon in France, Nick served as Executive Chef at the Ravens Restaurant (vegan) at the Stanford Inn in Mendocino and as General Manager and Executive Chef at the acclaimed Harbor House in Elk.
Chef Nicholas' Butternut Squash Cannelloni Recipe:
Prep time: 30 minutes Cook time: 50 minutes
Yield: 6 servings
6 pasta sheets or crepes
8 cups butternut squash, medium dice
1 cup ricotta cheese
1/2 cup parmesan cheese
1/2 cup asiago cheese
1/2 cup caramelized onion
2 cups vegetable stock
2 tablespoons butter
1/2 teaspoon nutmeg
1 1/2 tablespoons minced garlic
1/2 cup cream
2 tablespoons butter
1/2 tablespoon salt
1/2 tablespoon pepper
1 tablespoon olive oil
Filling: Cut butternut squash at the round part just as it starts to straighten. Peel the straight portion, remove top and dice into 1/2 inch pieces (or purchase pre cut squash). Mix with oil on a sheet pan over parchment paper, add half of salt and pepper and roast until soft and slightly caramelized, about 35 minutes at 350 degrees. Cool. Mix together squash, three cheeses and caramelized onions.
Sauce: Peel lower, round portion of squash, cut in half, scrape out seeds (or use pre cut squash). Boil in vegetable stock to cover until tender. Transfer both liquid and squash to blender and blend until smooth, about 2-3 minutes. Saute butter, nutmeg, and garlic, then add cream and reduce by 1/3 or 1/2. Add to mixture.
Assembly: Blanch pasta sheets until al dente. Spoon 1" by 1" row of filling on sheet. Roll tightly in neat cylinder. Ladle 3 oz. of sauce in individual shallow bowl/pasta dish, place cannelloni on top and cover with additional sauce. Sprinkle a little more asiago cheese on top. Bake until heated through, about 15 minutes at 325 degrees. |

on Mount Konocti
A steady 1,649-ft. climb along a winding dirt road through open brush, past mature orchards, under towering oak forests to reveal stunning views at the top of Mount Konocti.
Highlights include a historic cabin site, ancient maul oaks, distant mountain vistas, panoramic lake views, volcanic peaks, walnut orchards, and picnic spots.
This is a 6-7.5 mile round trip hike (approximately 3-5 hours). Parking is located near the gate on Konocti Road in Kelseyville, California.
